MALTESE CHRISTMAS LOG
The Maltese Christmas log is a lovely combination of crushed biscuits, condensed milk and and a number of different festive ingredients. I have even included macadamia nuts in mine for the Australian in me. This recipe makes 5 medium sized Christmas logs

Steps:
- Finely crush one packet of biscuits in a food processor.
- With the other packet of biscuits just roughly crush by placing in a tea towel and banging on a table or hard surface.
- In a large bowl mix all of the ingredients together except for the condensed milk and the packet of cooking chocolate which will be used to cover the logs.
- Now pour over the condensed milk and using your hands mix with all the other ingredients.
- Now divide the mixture into 5 parts and form each into a round cylindrical log shapes.
- Cover in cling film and place into the refrigerator overnight or at least twelve hours.
- Remove from the refrigerator and cover with melted chocolate. Decorate as you wish or leave as is.
- Wait until the chocolate has set and then serve by cutting into slices.
CHRISTMAS LOGS
This is somewhat like a pie dough that is filled with crushed walnuts and spices and then rolled up into logs. Very rich and delicious.

Steps:
- Combine the flour, yeast and butter or margarine by hand until mixture is crumbly. Stir in the egg, egg yolks, heavy cream, salt and vanilla. Mix together and let stand in the refrigerator for 8 hours or overnight.
- Beat the egg whites until stiff peaks are formed.
- Mix the walnuts, 1 1/3 cups of the sugar, the cinnamon and bread crumbs. Stir in the egg whites and let the mixture stand for 1 hour.
- Divide the dough into fourths. On a surface sprinkled with white sugar, roll 1/4 of the dough out very thin (you should be almost able to see through the dough) into a rectangular or square shape. Spread 1/4 of the filling over the rolled dough. Cut the dough into 2 1/2x2 1/2 inch squares. Roll each square up like a jelly roll and place on a baking sheet. Repeat with the remaining dough and filling. Keep the dough you aren't working with in the refrigerator.
- Bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes. Keep a close eye on these cookies as they tend to burn easily because of the sugar that is on the dough.

- Crush biscuits in a food processor or put biscuits in a zip lock bag and crush with a rolling pin. Slice the hazelnuts and cherries in half. In a large mixing bowl, mix all the ingredients for the Christmas Log. Start with 1/8 cup liqueur. Add more if needed. Form the log by hand. Wrap it in parchment paper. Chill at least 30 minutes.
- Melt the chocolate with the whipped cream to make the ganache. Set aside to cool slightly and thicken. Cover the log in chocolate ganache with a spatula. Let it set at room temperature. (If not decorating with shards, make tree markings with a fork.) Transfer to a presentation plate.
- Melt 300g of chocolate for the shards. Set some aside to use for sticking the shards to the log. Pour the rest onto a parchment paper and use a spatula to spread it into a rectangle of an even thickness, around 3mm. Cover with another piece of parchment paper. Fold onto each other every 1 inch and freeze until it hardens, around 15 to 20 minutes.
- Unfold parchment carefully and break shards as needed for the decoration. Use the melted chocolate that you had set aside and apply it to the back of each shard. Starting from the base, stick the shards to the log. Chill until ready to serve.
