MOM'S TACO SOUP



Mom's Taco Soup image

This recipe is so much better the newer ones that use spice or dressing mixes!! Definitely use good quality, mild California chili powder. OPTIONAL: Serve with sliced avocados. Family Note: This is Mom-mom's recipe, except I increased the spices and added olives and cilantro.

1 lb ground beef
1 onion, diced
1 garlic clove, minced
1/2 teaspoon kosher salt
1 (14 1/2 ounce) can tomatoes, with liquid
1 (14 1/2 ounce) can kidney beans, with liquid
1 (14 1/2 ounce) can corn, with liquid
1 (6 ounce) can ripe olives, drained and sliced (optional)
1 (8 ounce) can tomato sauce
1 -2 tablespoon california chili powder
1 -2 teaspoon cumin
1 beef bouillon cube
1/4 cup fresh cilantro, chopped

Steps:

  • Brown beef, onion and garlic in large saucepan with salt. Drain off grease. Add remaining ingredients except cilantro. Bring to a boil, then simmer for 20 to 30 minutes.
  • Serve into bowls, then garnish with fresh cilantro (and optional avocado slices).

Taco soup made with chicken (or ground beef), beans, corn, and seasonings is a quick and flavorful meal that our whole family loves!

Number Of Ingredients 7

1 can black beans (15 ounces (drained))
2 cups or 1 can, 15 ounces kernel corn
Enchilada sauce (10 ounces (alternately use 1 packet of taco seasoning + 2 cups of water))
1 tablespoon minced garlic
2 cups chicken stock
2 large chicken breasts (about 1 pound)
Optional garnishes: broken taco shells or tortilla chips, shredded cheese, sour cream, pico de gallo, fresh cilantro

Steps:

  • In large pot or deep skillet, bring beans, corn, enchilada sauce, garlic, and stock to a light boil on medium heat, stirring frequently. Add chicken breasts.
  • Simmer on low, covered, about 15 minutes, until chicken is cooked through. Remove chicken and chop or shred. Return chicken to pot and stir.
  • Optional: while soup is cooking, put tortilla chips on a baking sheet and cook at 350 degrees for 10 - 12 minutes, until hot and extra crispy.
  • Serve soup and top with desired garnishes.

1 28 oz can diced tomatoes
1 8 oz can tomato sauce
1 4 oz diced green chilis; drained
1 15.5 oz mexican or chili beans in chili sauce
1 15.5 oz kidney beans; drained
1 15.25 oz whole kernel corn; drained
2 packets taco seasoning
1 1/3 cups water
1/2 Tbsp onion powder
2 tsp garlic powder
2 tsp chili powder (optional)
1 tsp crushed red pepper (optional)
Serve with:
Corn bread, corn chips, cheese, salsa, or sour cream

Steps:

  • Begin by pouring the diced tomatoes, sauce, chilis, both cans of beans, corn, one seasoning packet, red pepper, onion, garlic, and chili powder into a big pot. Stirring the ingredients together, place the pot on the back burner on medium heat. Cover, stirring occasionally. Then brown the meat in a large skillet, mixing the 2nd seasoning packet with the water. Once the meat is browned, drain it and return it to the skillet, adding the seasoning. Cover and let simmer 5 minutes. After the meat has simmered for 5 minuntes, add it to the pot with everything else. Re-cover the pot and let simmer for 20 mins, stirring occasionally. Serve with corn bread, corn chips, cheese, salsa, or sour cream. Put extra in individual serving into ziplock bags to freeze for later use.

2 (5 ounce) skinless, boneless chicken breasts, sliced
½ cup shiitake mushrooms
3 peppers red chile peppers, chopped
8 leaf (blank)s kaffir lime leaves
2 stalks lemongrass, chopped
2 (14 ounce) cans coconut milk
½ cup green bell pepper, chopped
½ cup red bell pepper, chopped
5 tablespoons fish sauce
3 (1 inch) pieces galangal, peeled and chopped
4 tablespoons lime juice
6 medium (4-1/8" long)s green onions, sliced
1 tablespoon chopped Thai basil
1 tablespoon chopped fresh cilantro

Steps:

  • Pour chicken stock in a large pot and bring to a boil; add chicken, mushrooms, chile peppers, lime leaves, and lemongrass. Boil until chicken is no longer pink in the centers and juices run clear, about 10 minutes. Reduce heat to medium and add coconut milk, bell peppers, fish sauce, and galangal. Boil for 2 minutes; reduce heat to low and add lime juice.
  • Taste and adjust soup as necessary. Serve with green onions, basil, and cilantro.

1 (15 ounce) can kidney beans, undrained

1 lb ground beef or 1 lb ground turkey
1 (2 ounce) package ranch dressing mix
1/4 cup taco seasoning
1 beef bouillon cube
2 cups shredded cheddar cheese

Steps:

  • Brown ground beef or turkey in skillet until no longer pink.
  • Add all ingredients to pot and heat until boiling.
  • Reduce heat and simmer for 30 minutes to one hour; or combine all ingredients in crock pot and cook on low for 6 to 8 hours.

This easy taco soup is a quick meal alternative to Taco Tuesdays or a last-minute potluck invite. Serve with desired taco toppings such as shredded cheese, sour cream, lime wedges, and Fritos® corn chips. The soup freezes and reheats very well. After adding the tomato juice, cool and freeze. Continue on with the recipe once your soup has thawed and been brought to a simmer.

2 pounds lean ground beef
1 large onion, minced
3 cloves garlic, minced
2 (1 ounce) packets taco seasoning mix (such as La Tiara®)
1 (15 ounce) can black beans, rinsed and drained
1 (11 ounce) can Mexican-style corn, drained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 quart tomato juice
1 bunch cilantro, minced, or to taste
1 large lime, halved
1 pinch salt and ground black pepper to taste

Steps:

  • Heat a heavy-bottomed soup pot over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Add onion and garlic. Cook over medium to medium-high heat, stirring often, until onions begin to soften, about 5 minutes. Add taco seasoning; cook and stir until fragrant, 1 to 2 minutes. Stir in black beans, corn, and diced tomatoes. Stir in tomato juice and scrape any browned bits of food off the bottom of the pan with a wooden spoon.
  • Bring to a simmer; add cilantro and squeeze juice from lime halves into the pot. Simmer until flavors have melded, 15 to 20 minutes. Season with salt and pepper.
