Lazy Man Breakfast Casserole Recipe - (4.5/5) image

Number Of Ingredients 6

2 cups of bagged sausage crumbles (already cooked)
2 cups sharp cheddar cheese
One small pack real bacon bits
6 eggs
2 cups of milk
7 pieces of white or wheat bread

Steps:

  • Butter the bottom of a 9x13 baking dish. Cover bottom of pan with bread. In a large bowl mix sausage, eggs, cheese, milk and bacon. Then pour over bread. Refrigerate overnight. Cook the next morning!!!! At 350 degrees for 25 to 35 minutes until golden brown.

I found this recipe several years ago and use it regularly. You can substitute BBQ sauce for the ketchup. Finely diced green peppers also are a nice addition.

1 cup water
2 lbs lean ground beef
1/2 cup onion, finely diced
1 (6 1/4 ounce) package Stove Top stuffing mix
2 eggs
1/2 cup ketchup, divided

Steps:

  • Mix all ingredients except 1/4 cup ketchup.
  • Shape meat mixture into an oval loaf.
  • Place loaf in a 9x13 baking dish.
  • Top with remaining ketchup.
  • Bake at 375 degrees Fahrenheit for 1 hour.

4 carrots, thinly sliced
2 stalks celery, thinly sliced
1 (8 ounce) can mushroom pieces, drained
¼ teaspoon cayenne pepper, or to taste
salt and pepper to taste

Steps:

  • Heat oil in a large soup pot over medium heat. Add onion and cook, stirring frequently until soft. Add the chicken and continue cooking and stirring so that it does not stick. When the chicken is browned, add the carrots, celery, mushrooms, bell pepper and sausage.
  • Pour in the broth, and bring to a boil. Add the rice, and season with cayenne, salt and pepper. Cover and cook over low heat for 20 minutes, until rice is tender and broth has been absorbed.
