Steps:
- Drain orange, measuring syrup. Add water to syrup to make 1 cup. Dissolve gelatin in boiling water. Add measured liquid. Add sherbet by spoonfuls, stirring until melted. Chill until thickened.
- Fold in oranges, reserving a few for garnish. Pour into a serving bowl or individual serving dishes. Chill until set-at least 1 hour. Garnish with reserved mandarin orange sections and mint leaves, if desired.

- Disolve jello in boiling water.
- Immediately add orange sherbert and stir till melted.
- Chill until slightly set, and add drained mandarin oranges. Cover with plastic wrap touching to prevent film from developing on top.
- Chill until firm.

This deceptively simple recipe makes a delicious jello salad my husband can't get enough of. My mother gave me this recipe - it was standard fare at any potluck and was gobbled up in no time! This recipe is easily doubled for larger crowds.

Steps:
- Boil water.
- Remove from heat and add jello and whisk until dissolved.
- Add juice from mandarin oranges.
- Add sour cream and whisk together until sour cream is thoroughly mixed in (should have smooth consistancy).
- Pour into serving bowl or jello mold.
- Refrigerate until set (2-4 hours).

- 2. add pineapple and oranges to jello mix.
- 3. fold in the coolwhip
- 4. Refrigerate for 10 minutes and serve cold.
15 MINUTE MANDARIN ORANGE SALAD
This is my mom's recipe and is ever present at all holidays in my family. I changed it to make it sugar free and low fat. However, you can add the full fat cream cheese, and full fat Cool Whip if you want. It tastes great both ways. If you want thick servings use a smaller dish, if you want thinner use a bigger dish, you decide.

Steps:
- Dissolve Jello in 1 cup boiling water, and let cool slightly.
- Then, add to cream cheese and beat till well combined.
- Drain pineapple and mandarin oranges and combine with cream cheese mixture.
- Fold in Cool Whip.
- Chill in a Pyrex or other glass casserole dish.
- Chilling overnight works best.
- Serve cold.

- Then stir in drained mandarin oranges.

HEALTHY MANDARIN ORANGE DESSERT
Except for the light whipped topping and the juice from the pineapple, this is almost sugar free. I got this from a Weight Watchers recipe swap. My kids inhale this stuff when I make it which is fine with me since they're getting some fruit and dairy in every serving, but they just think it's a sweet treat! (WW Points per serving = 1)

- In square 8x8 dish, combine gelatin and boiling water and stir until gelatin is dissolved.
- Add cold water, pineapple and Mandarin oranges.
- Chill until almost set.
- Combine whipped topping and yogurt. Fold into gelatin mixture.
- Chill for at least three hours, cut into 8 equal squares and serve.

MANDARIN ORANGE DIET JELL-O DESERT
This is a great desert! Light fluffy and oh so very good! It taste better in the diet form then the sugar form. I have tried both and always I'am told they like the diet version better! Now that is saying something!!

- 1. Put jello into a bowl and add 2 cups of boiling water. Stir until dissolved. 2. Add the juice from the mandarin oranges,crushed ice and water to make 2 cups. Pour into the hot jell-0 and stir until dissolved. 3. Add the vanilla instant pudding to the jello and stir until blended well. 4. Put one tub of sugar free cool whip in with the other ingredients. Fold in until blended. 5. Set in the refrigerator for about 15 minutes or until firm enough to add the oranges (don't let it get too firm, you will pour it into another bowl later on). 6. Add one can and half of the other can (oranges) to the above mixture. Blend (use the other half of can of oranges for decoration on top of the jello)
- Put jello into a pretty clear glass footed bowl. Set in the refrigerator until firm. Put rounded teaspoons of cool whip on top all around the edge of the bowl.Put the remaining oranges in between each dollop of cool whip. Put large dollop of cool whip in center and add an orange on top of that. Very pretty and taste great!
- You can make this with a Cherry or Strawberry Jello. Cherry....Cherry jello, instant val. pudding and cherries cut up. Strawberry....Strawberry jello, instant val. pudding and cut up fresh strawberries.
- Note: I have tried other flavors and the orange version is the best.
