Mandarin oranges and maraschino cherries give this creamy Watergate salad a burst of color and flavor perfect for the holiday table.

2 (16 ounce) cans crushed pineapple, drained
2 (15 ounce) cans mandarin oranges, drained
2 (8 ounce) containers whipped topping (such as Cool Whip®)
1 ½ (10.5 ounce) packages miniature marshmallows
1 (4 ounce) jar maraschino cherries, sliced
½ (3.5 ounce) package shredded coconut

Steps:

  • Mix pineapple, mandarin oranges, whipped topping, marshmallows, cherries, and coconut together in a bowl. Chill in refrigerator for 2 hours for flavors to blend.

This salad is quick, easy and always a hit at family get-togethers!

50 buttery round crackers, crushed
¼ pound butter, melted
½ cup white sugar
1 (6 ounce) can frozen orange juice concentrate
1 (14 ounce) can sweetened condensed milk
2 (11 ounce) cans mandarin oranges, drained
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Mix together the cracker crumbs, butter and sugar; press into the bottom of a 9x13 inch dish.
  • Stir together the orange juice, condensed milk, oranges and whipped topping. Pour over cracker crumbs, sprinkle remaining crumb mixture over top. Refrigerate until chilled.

  • Add the undrained pineapple and pudding mix to a large bowl. Stir until smooth. Add in the well-drained mandarin oranges, mini marshmallows, and coarsely chopped pistachios. (if desired, add in fruit cocktail here.) Gently fold together until combined.
  • Using a spatula, gently fold in the thawed frozen whipped topping until all the ingredients are well covered. Cover and refrigerate for 45 minutes to an hour. Serve chilled with a sprinkle of shredded coconut or additional crushed pistachios if desired.
