MANGO MEAT LOAF (OR MEATBALLS)
This calls for ground beef, however I think it might be better with pork. Found it in my mango recipe hunt. Meatballs: 1 oz big .5 oz nice Serve on butter lettuce and add chutney or dip them!!! This is nice with chutney....for a recent dinner I offered Nepali Chutney 452765 and Mango Chutney Spicy 451858 this has an afterburn and Peanut dipping sauce ala Cheesecake Factory 453586.

- Begin by zesting the limes. Pour the coarse sugar over the lime zest and toss with your fingers to combine. Set aside.
- Throw the mango chunks into a blender. Top off the blender with ice. Pour in the tequila and triple sec. Add the granulated sugar and squeeze in the juice of the limes. Blend until completely smooth, adding more ice if necessary to get the consistency you want. Use a piece of one of the limes to moisten the rims of the glasses. Dip the rims in the lime sugar. Pour the drinks and serve immediately.

- Preheat the oven to 425 degrees F (220 degrees C). Grease 2 baking sheets with cooking spray.
- Combine chicken, olive oil, chili powder, cumin, garlic powder, salt, and pepper in a bowl. Add mango, onion, peppers, agave, and lime juice; toss until fully coated. Spread 1/2 of the chicken mixture in a single layer on each baking sheet.
- Bake in the preheated oven until chicken is no longer pink, about 10 minutes. Turn on oven's broiler and place baking sheets about 6 inches from the heat source; broil chicken until golden, 3 to 5 minutes. Serve over warm tortillas.
