BANANA AND STRAWBERRIES DELIGHT

1 1/2 cups granulated sugar
1 1/2 sticks (3/4 cup) unsalted butter, softened, plus for greasing the pans
1 tablespoon pure vanilla extract
3 eggs
2 ripe bananas, mashed
2 1/4 cups all-purpose flour, plus for flouring the pans
1 teaspoon baking soda
1/4 teaspoon kosher salt
3/4 cup sour cream
Pinch kosher salt
1 pound confectioners' sugar
1 teaspoon pure vanilla extract
1/2 cup pasteurized egg whites
8 sticks (4 cups) unsalted butter, softened
1/2 cup fresh strawberries, chopped

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease and flour two 8-inch round cake pans.
  • Cream the granulated sugar and butter with an electric mixer until light and fluffy. Mix in the vanilla, eggs and bananas. In a separate bowl, mix the flour, baking soda and salt. Mix the flour mixture into the butter mixture, alternating with the sour cream--do not overmix. Pour the batter into the prepared cake pans and bake until a tester comes out clean, 20 to 25 minutes. Let the cakes cool before removing from the pans.
  • For the buttercream: In a stand mixer with the paddle attachment, mix the salt, confectioners' sugar, vanilla and egg whites for 5 minutes on medium-high speed. Add the butter, little by little, and mix for 10 minutes. Fold in the chopped strawberries.
  • To assemble the cake: Using a serrated knife, cut the top dome off of the cakes to make them level. Cut one of the cakes in half horizontally to form 2 layers. Repeat with the second cake for 4 layers total. Place one cake layer on a serving plate and spread buttercream on top. Stack a second layer on top and spread buttercream on top. Repeat with the remaining 2 layers. Using an offset spatula, spread buttercream on the outside of the cake. Smooth using up and down strokes, and then scrape off any excess buttercream.

1 mango - peeled, seeded, and chopped
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon salt
½ teaspoon pumpkin pie spice
¾ cup unsalted butter, softened
½ cup white sugar
½ cup brown sugar
3 large eggs
1 ¼ teaspoons vanilla extract
½ cup mashed banana
½ cup toasted shredded coconut
¼ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Take about 1/4 of the chopped mango and puree in a food processor or blender until it is the same consistency as mashed bananas; it should yield about 1/2 cup pureed mango. Reserve remaining chopped mango.
  • Sift flour, baking soda, cinnamon, salt, and pumpkin pie spice together in a large bowl.
  • Combine butter, white sugar, and brown sugar in a small bowl until blended; mix in eggs and vanilla extract. Fold into the dry ingredients until just combined. Fold in chopped mango, pureed mango, banana, coconut, and walnuts. Let sit for 10 to 15 minutes. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 55 to 65 minutes.

1 cup confectioners' sugar
1 cup Cool Whip
8 ounces cream cheese
2 small banana instant pudding
3 cups milk

Steps:

  • Mix flour, butter and 3/4 of the nut meal together.
  • Press in bottom and sides of pan and bake 15 minutes 350*.
  • Let cool and place in freezer.
  • Mix together, conf.
  • sugar, Cool Whip, cream cheese.
  • When creamy, spread over crust.
  • Mix 2 small boxes banana cream pudding, cold milk, pour over cream cheese layer.
  • put remainder of Cool Whip over top.
  • Sprinkle with remaining nut meal or chopped nuts.

¾ cup water
½ medium lime, juiced

1 teaspoon chili-lime seasoning (such as Tajin®)
2 tablespoons diced fresh mango

Steps:

  • Place 1 teaspoon chamoy on a plate. Place 1 teaspoon chili-lime seasoning on another plate. Dip rim of glass first in chamoy, then in chili-lime seasoning. Set aside.
  • Combine frozen mango, water, and lime juice in a blender; blend until smooth.

1 sliced mango
1 sliced banana
1 tablespoon wheat germ
1 tablespoon brown sugar
1 -2 teaspoon condensed milk

Steps:

  • Cut the mango into slices.
  • Cut the banana into slices.
  • Set the banana in a small bowl (To make it look nice, set them around the bowl).
  • Set the mango in the bowl (To make it look nice, set them inside the banana).
  • Drizzle the condensed milk on the fruit, you can put as much as you want.
  • Drizzle the wheat germ on top of the fruit.
  • Lastly, drizzle the brown sugar on top of the fruit, once again you can put as much of these ingredients as you want, now you can enjoy your breakfast delight!
