EASY MEAT SAUCE
This is a recipe that you can throw together in 10 minutes and then go and do whatever you want for 1 hour. It is not the thickest sauce, but it is delicious.

Steps:
- Heat olive oil in a large skillet over medium-high heat; saute onion in hot oil until softened, about 5 minutes. Season onion with Italian seasoning; continue to saute until the herbs are fragrant, about 3 minutes more.
- Break beef into small pieces and add to the skillet; cook and stir until browned and crumbly, 5 to 7 minutes.
- Stir tomato sauce and diced tomatoes into the beef mixture; season with salt, place a lid on the skillet, reduce heat to low, and cook at a simmer for 1 hour.
- Splash wine over the mixture, stir, and simmer until thickened, about 20 minutes.

BASIC MEAT SAUCE

Steps:
- Heat oil in a large skillet over medium-high heat. Add onion, garlic, salt, and pepper. Cook until softened, 3 to 5 minutes.
- Add beef and cook, breaking up with a spoon until no longer pink, 4 to 5 minutes. Add tomato paste and cook 1 to 2 minutes.
- Add tomatoes and juice, breaking up tomatoes. Simmer over medium heat until thickened and saucy, 45 to 60 minutes. Season with salt and pepper, to taste.
MANLY MEAT SAUCE
This recipe was easy to make. We enjoyed the flavor and texture. It is one of Rachael Ray's recipes. Good with grated Parmesan or Romano Cheese and crusty bread.

- Add olive oil and crushed red pepper flakes and cook for 10 seconds.

DONATELLI'S - MEAT SAUCE RECIPE

- Brown ground beef with minced garlic and salt and pepper, to taste. Drain ground beef and set aside.
- Place oil and onions in a saucepan and saute on high heat until soft. Add all cans of tomato products. Fill the tomato puree can with hot water and dissolve beef and chicken base in this water. Add this water and base mixture to saucepan. Add all other ingredients and heat through. Once hot, add the browned ground beef and simmer on low heat for approximately 1 hour, stirring occasionally.
- Serve over your favorite pasta -- enjoy!!!!

My grandmother fixed this for us growing up and I love it. It is a thick and hearty sauce for spaghetti or your favorite noodle! Of course the bread of choice would have to be Texas garlic bread!

KATE'S MANLY GRAVY FOR LEAN MEAT
This tasty sauce with a little heat is perfect to keep moist lean meats such as eye of round or roast venison or to simmer tough lean meats. This was for the second night of eye of round cooked on the Showtime Rotisserie. I served it with scalloped potatoes, but DH got a spoon to enjoy the rest of the gravy. To avoid overcooking the previously cooked meat, don't add the meat until the last 15-18 minutes (add until heated through). If cooking "trophy" venison (aka, tougher meat), allow meat to simmer in sauce while it is reducing. I have been very pleased with Spices Etc. (http:/www.spicesetc.com) for quality, prices, and efficiency; I buy spices in bulk from them and their dried wine powders are essential to my crockpot stews. The consomme, sherry and mushroom gravy mix help to thicken the gravy. If you are shy about garlic, cut it back to 2 teaspoons.

- Empty condensed soups into 2 quart saucepan. Bring to a boil, then simmer uncovered for 30 minutes, stirring occasionally.
- Add tomatoes, garlic, wine powder, and dry sherry. Simmer uncovered for 45 minutes, stirring occasionally.

- Crumble beef into a 2-qt. microwave-safe dish. Add the onion, green pepper and garlic.
