8 slices thick-cut bacon, cut crosswise into 1/4-inch lengths
1 teaspoon olive oil
2 sheets puff pastry, defrosted but still cold
1/4 cup maple syrup
1/4 cup granulated sugar
2 teaspoons ground cinnamon
1/2 cup golden raisins
1 large egg
1 cup powdered sugar
1 tablespoons milk, plus more if necessary

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the bacon in a saute pan and bring to a medium-low heat. Add the olive oil and cook the bacon until brown and crispy, about 10 minutes. Remove the bacon to paper towels. Save the fat.
  • Working with one sheet at a time, lay out the puff pastry on a clean dish towel. Brush the puff pastry with the reserved bacon fat, and then with some maple syrup, leaving a 1/2-inch border along the side furthest away from you. Combine the granulated sugar and cinnamon in a small bowl and sprinkle the brushed area liberally with cinnamon sugar. Top with half the crispy bacon and raisins.
  • Beat together the egg with 1 teaspoon water in a small bowl. Brush the border with egg wash. Starting with the side closest to you, roll the puff pastry into a long log, using the towel to help you. Press firmly to close the log, arranging the seam on the bottom. Cut the log crosswise into 6 equal pieces. Repeat with the second sheet.
  • Brush a 6 1/2-by-9-inch baking dish with the remaining bacon fat. Snuggle the 12 rolls into the baking dish. Brush the tops of the rolls with the remaining egg wash. Bake until the rolls are puffy and golden brown, about 25 minutes.
  • For the glaze: Combine the powdered sugar, milk and a little bit of the remaining maple syrup in a small bowl until it reaches a frosting-like consistency, adding more milk if necessary. When the rolls come out of the oven, slather them with the glaze.
  • You're on a roll!

1 cup warm whole milk (110° to 115°)
1/4 cup sugar
1/4 cup butter, softened
1 large egg yolk
1-1/2 teaspoons vanilla extract

2-3/4 to 3-1/4 cups all-purpose flour
FILLING:
5 bacon strips, chopped
1/2 cup packed brown sugar
1 tablespoon maple syrup
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
FROSTING:
2 cups confectioners' sugar
1/2 cup butter, softened
2 tablespoons whole milk
1 tablespoon maple syrup

Steps:

  • In a small bowl, dissolve yeast in warm milk. In a large bowl, combine sugar, butter, egg yolk, vanilla, salt, nutmeg, yeast mixture and 1 cup flour; beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour., In a small skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons., In the same skillet, combine brown sugar, syrup, cinnamon, nutmeg and reserved bacon drippings; cook and stir until blended. Cool to room temperature., Punch dough down. Roll into an 18x12-in. rectangle. Sprinkle brown sugar mixture and bacon to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seams to seal. Cut into 12 rolls., Place rolls, cut side down, in a greased 13x9-in. baking dish. Cover and let rise in a warm place until doubled, about 45 minutes. Preheat oven to 400°. Bake 18-20 minutes or until golden brown. Cool 20 minutes., In a small bowl, beat frosting ingredients until smooth. Spread over warm rolls. Serve warm.

½ cup granulated sugar
1 stick unsalted butter, melted
2 ¼ teaspoons active dry yeast
5 cups all purpose flour, divided, plus more for dusting

2 teaspoons kosher salt
1 tablespoon unsalted butter, softened, for greasing the pan
¾ cup light brown sugar
1 ½ sticks unsalted butter, sofeted
2 tablespoons ground cinnamon
14 strips cooked bacon
½ cup maple syrup
4 oz cream cheese, cubed and softened
½ cup powdered sugar

Steps:

  • Make the dough: In a large bowl, whisk together the warm milk, granulated sugar, and melted butter. The mixture should be just warm, registering between 100-110°F (37-43°C). If any warmer, let cool slightly.
  • Sprinkle the yeast evenly over the milk mixture, whisk to incorporate, and let sit in a warm place for about 10 minutes, until foamy.
  • Add 4 cups (500 G) of flour to the milk mixture and stir with a wooden spoon until just combined.
  • Cover the bowl with a kitchen towel or plastic wrap and let the dough rise in a warm place for 1 hour, until nearly doubled in size.
  • Meanwhile, make the filling: In a medium bowl, mix together the brown sugar, butter, and cinnamon. Set aside.
  • Generously grease a 9-inch (22 cm) round baking pan with the softened butter and set aside.
  • Uncover the dough and add the remaining cup of flour, baking powder, and salt. Stir well to incorporate.
  • Turn the dough out onto a clean surface. Leave a bit of flour nearby to use as needed, but try not to incorporate too much. Knead the dough for at least 10 minutes, adding more flour as necessary, until the dough just loses its stickiness. The dough should be very smooth and spring back when poked.
  • Roll the dough out into a 14-inch (35 cm) square about ½-inch (1 ¼ cm) thick. Square the corners with a bench scraper or a spatula to make sure they are sharp and even.
  • Spread the filling evenly over the dough.
  • Slice the dough lengthwise into 7 pieces that are 2 inches (5 cm) wide.
  • Place 2 strips of bacon on each piece of dough. Starting from one short end, roll up each strip of dough and pinch the seam closed.
  • Place the cinnamon rolls in the prepared pan, 1 in the center and 6 around the sides. Cover with a kitchen towel and let rise in a warm place for 35-45 minutes, until expanded by about half of their original volume.
  • Preheat the oven to 350°F (180°C).
  • Bake the cinnamon rolls for 35-40 minutes, until golden brown and cooked through. Remove from the oven and let cool for about 10 minutes.
  • While the cinnamon rolls are baking, make the icing: In a small pot, cook the maple syrup over medium-high until reduced by half, about 5 minutes. Remove the pot from heat and let cool slightly, about 5 minutes.
  • In a medium bowl, whisk together the reduced maple syrup, cream cheese, and powdered sugar until smooth and creamy.
  • Drizzle the icing over the cinnamon rolls, using the back of a spoon to spread if desired.

These are like traditional cinnamon rolls but a little bigger, with a sweet maple syrup mixture brushed onto the soft, yeasted dough before rolling and a generous amount of crumbled bacon beneath the drizzle of rich cream cheese glaze. Once cut into the individual portions, you can refrigerate it until ready to bake. Make them the day before, if you'd like, then take them out first thing in the morning, when you're nursing your first cup of coffee, to warm them up slightly before baking. 1/3 cup sugar, divided
3 eggs, divided
10 tablespoons butter (1¼ sticks), at room temperature, diced into ½-inch pieces; plus 2 tablespoons butter, melted, divided
3 1/2 cups (15 3/4 ounces) bread flour, divided
1/2 teaspoon salt
1 1/2 pounds thick-cut bacon, preferably applewood-smoked, sliced crosswise into ¼-inch pieces
1/4 cup plus 1 tablespoon maple syrup, divided
1 cup light brown sugar
2 tablespoons ground cinnamon
1/4 cup cream cheese
1/2 cup plus 2 tablespoons powdered sugar, sifted
Milk, for thinning the glaze, if needed

Steps:

  • In a small pan, heat the milk over medium heat just until warmed. Remove from heat and pour the milk into a small bowl or measuring cup. Stir in the yeast and 1 teaspoon sugar, then set aside until the yeast is activated and the milk is foamy, about 10 minutes.
  • Whisk two of the eggs in the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl with a hand mixer) until light and fluffy, about 1 minute. Stir in the yeast mixture and remaining sugar until fully incorporated.
  • With the mixer running, add the diced 10 tablespoons room temperature butter, one or two pieces at a time, until all of it has been incorporated.
  • In a medium bowl, whisk together 3 cups of the bread flour and the salt. With the mixer running, add the flour mixture, a spoonful at a time, until all of it has been incorporated into the dough.
  • Remove the dough to a lightly floured surface and knead until it is soft and elastic with a silky texture, 5 to 7 minutes. Knead in additional bread flour as needed, up to the remaining one-half cup. Place the dough in a lightly oiled bowl and loosely cover with plastic wrap. Set aside in a warm place until doubled in size, 1 to 11/2 hours.
  • While the dough is rising, cook the bacon in a large skillet over medium heat until the fat is rendered and the bacon is crisp, about 15 minutes. Stir frequently so the bacon cooks evenly and does not stick to the bottom of the pan. Remove from heat and drain the bacon on a paper towel-lined plate, saving 2 tablespoons of bacon grease for the glaze and the rest for another use.
  • In a small saucepan, warm the melted butter with 2 tablespoons maple syrup, then remove from heat and set aside. In a small bowl, whisk together the brown sugar and cinnamon.
  • When the dough is doubled, punch it down and roll it out on a lightly floured surface into a 12-by-18-inch rectangle. Brush the dough with the butter-maple syrup mixture. Sprinkle over the brown sugar-cinnamon mixture, then the bacon bits, keeping 1 inch clear along one of the long edges. Loosely roll the dough into a long tube, pressing the clear edge along the length of the dough to seal the tube. Place the tube, seam-side down, on the work surface.
  • Cut the tube crosswise into 12 evenly sized rolls using a length of unflavored floss (slide the floss under the roll and then pull both ends tight, which doesn't squash the dough as much as a knife would). Place the rolls, spiral side up, on a parchment-lined baking sheet, spaced approximately one-half inch apart.
  • Loosely cover the rolls with plastic wrap and set aside until almost doubled in volume, 45 minutes to an hour. Alternatively, loosely cover and refrigerate the dough overnight; remove from the refrigerator about 1 hour before baking for the dough to come to room temperature.
  • About halfway into the rising time, heat the oven to 375 degrees. If the rolls are coming out of the refrigerator, set them out for 30 to 45 minutes to warm them slightly, heating the oven halfway through the rising time.
  • In a small bowl, whisk together 1 tablespoon maple syrup with the remaining egg. Brush the egg wash over the outside of the rolls. Place the baking sheet in the oven and bake the rolls until puffed and golden brown, about 20 to 25 minutes, rotating the sheet halfway through cooking. Remove the rolls from the baking sheet and cool, still on the parchment paper, on a rack.
  • While the cinnamon rolls are baking, make the glaze. In a medium bowl, whisk together the cream cheese, powdered sugar and 2 tablespoons each bacon grease and maple syrup. If the glaze is too thick, thin with milk, whisking in 1 tablespoon at a time.
  • Drizzle the glaze over the warm cinnamon rolls before serving.

  • Using the paddle attachment, mix the butter, sugar, salt, and eggs in the bowl of a mixer. Add the yeast/milk mixture and stir.
  • Switch to the dough hook. Add the flour slowly. Start with one cup and then add an additional cup. I only needed 2 cups, but you can use up to an extra 1/2 cup if you need, for the dough to come together). The dough will be sticky, but not so much that you can’t handle it.
  • Once dough comes together, spray a large bowl with cooking spray, place the dough inside and cover with plastic wrap. Allow to rise until doubled in size, about 1-2 hours. (It helps if you do this in a warm place. My dough didn’t quite double, but it still worked!)

  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and maple syrup together on medium-high speed until combined and creamy.
