SWEET MAPLE BARBECUE CHICKEN KABOBS
With a touch of caramelized sweetness, this takes your traditional barbecue sauce and elevates it to a whole new level.

- Mix brown sugar, ketchup, red wine vinegar, water, pure maple syrup Worcestershire sauce, ground mustard, paprika, kosher salt and pepper in a large bowl. Place chicken tenders in the marinade. Cover and let the chicken marinate for at least 2-4 hours or overnight. I like to throw all the ingredients in a Ziplock and let it marinate this way.
- If you are using metal skewers skip this part, if you are using wood skewers follow the directions below. I know there is a debate whether or not to soak your skewers and to each their own. But I soak mine, I have found that I get less wood pieces in the chicken and they don't go up in flames.
- I completely soak my skewers for at least 30 minutes. Make sure the entire stick is completely dredged in water. Once they have soaked, remove and start to assemble the skewers.
- Remove the chicken from the fridge, one piece at a time grab a tender and lace through the skewer. I start at the chunkier end and do a weave motion. Or you can just slide the entire tender on the kabob and not make it all fancy like a wave. Either way, they will taste the same. Set kabob on a plate and repeat the process. Once completed drizzle extra marinade over the chicken, and let it sit while grill is heating up.
- Heat gas or charcoal grill, remove chicken from marinade. Place chicken on grill over medium heat. Cover grill and cook 3 minutes, then turn over the kabob and cook another 3 minutes. At this point check the chicken. To know if the chicken is done the juices should be clear and the center of thickest part is cut (170°F). If not done, continue to cook, at this point I leave the lid open and just turn the kabobs so they are cooked evenly on both sides. My chicken takes about 8-10 minutes.
- Remove from grill and serve immediately. Or cover with foil and serve later.
- Great to serve with grilled corn on the cob, cornbread - my favorite Sweet Jalapeno Cornbread and coleslaw.
- Use the leftovers the next day for a grilled chicken salad.

- Heat broiler. Coat broiler pan with non-stick spray. Soak 20 bamboo skewers in warm water for 20 minute Combine maple syrup and barbecue sauce. Set aside.
- Cut bacon in half crosswise and cook in skillet over medium heat about 3 minutes per side, until lightly cooked but still flexible. Place on paper towels and let cool. Cut onion into wedges; separate pieces. Microwave 20 pieces on a plate on igh for 30 seconds.
- Cut chicken into 20 pieces, 1 inch each. Wrap cooked bacon piece around chicken. Thread 1 onion piece onto skewer, then chicken, then pineapple. Repeat for other skewers. Divide maple-barbecue sauce in half. Brush skewered food with half the sauce.
- Broil skewers 4 inches from heat for 4 minutes; remove from oven and turn over. Brush with remaining sauce. Broil 4 more minutes.

MAPLE BARBECUE GRILLED CHICKEN

- Heat olive oil in a small saucepan over medium. Cook garlic, turning occasionally, until golden brown, about 4 minutes. Add tomato paste and cook, stirring constantly and scraping bottom of pan, until slightly darkened, about 3 minutes. Add maple syrup, soy sauce, Worcestershire sauce, vinegar, and Sriracha. Bring to a boil, then reduce heat to medium-low and simmer until flavors have come together, about 1 minute. Remove from heat. - Prepare a grill for medium-high indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off); oil grate. Season chicken generously with salt. Grill chicken over direct heat, turning every minute, until browned on all sides, about 5 minutes. Move chicken over indirect heat. Cover, positioning vent (if your grill has one) over chicken, and continue to grill, keeping grill covered as much as possible and turning every 5 minutes or so, until an instant-read thermometer inserted into thickest part registers 140°F-145°F, 18-25 minutes depending on the size of the pieces. Baste chicken with barbecue sauce and grill, turning and basting occasionally, until an instant-read thermometer inserted into thickest part registers 160°F for breast and 165°F for dark meat, about 10 minutes longer.
- Arrange chicken on a platter. Serve with reserved barbecue sauce alongside.
- Do Ahead: Barbecue sauce can be made 2 weeks ahead. Transfer to an airtight container; cover and chill.
