1 cup honey
1 cup maple syrup
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon ground black pepper
1 teaspoon apple cider vinegar
1/4 teaspoon cayenne
1/2 teaspoon kosher salt
2 cups all-purpose flour
1 cup shredded sharp Cheddar
2 tablespoons sugar
2 teaspoons baking powder
3 to 4 scallions, chopped, whites and greens separated
7 to 8 dashes hot sauce
2 teaspoons kosher salt, plus a pinch
2 large eggs
2 cups whole milk
8 tablespoons (1 stick) unsalted butter, melted
Nonstick cooking spray, for the waffle iron
Vegetable or canola oil, for frying
8 boneless, skin-on chicken thighs
1 cup buttermilk
2 cups all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon ground black pepper
1 1/2 teaspoons kosher salt, plus more for seasoning

Steps:

  • For the glaze: Combine the honey, maple syrup, chili powder, paprika, black pepper, vinegar, cayenne and salt in a small saucepot. Bring just to a simmer. Remove from the heat and let steep for 20 minutes, then strain into a clean container.
  • For the waffles: Preheat the oven to 250 degrees F and place a rack in the middle of the oven. Place a baking sheet fitted with a wire rack in the oven.
  • Whisk together the flour, Cheddar, sugar, baking powder, hot sauce, scallion whites and salt in a large bowl and set aside.
  • In another large bowl, whisk the eggs and a pinch of salt until just broken up, then add the milk and whisk. Pour in the melted butter and whisk until combined.
  • Add the wet ingredients to the dry ingredients and stir with a rubber spatula until the flour is just incorporated and no streaks remain (the batter may have a few lumps).
  • Preheat a Belgian waffle iron to medium heat according to the manufacturer's instructions. Spray with nonstick cooking spray, add some batter, close the lid, and cook until the steam starts to diminish (open the top and peek for doneness after a few minutes). Transfer the waffle to the wire rack in the oven to keep warm. Repeat with the remaining batter to make 8 waffles.
  • For the chicken: Pour 5-inches of oil in a heavy-bottomed pot. Heat over medium-high heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F.
  • Place the chicken thighs and buttermilk in a bowl. In a separate bowl, add the flour, garlic powder, onion powder, paprika, pepper and salt, and mix to combine. Dredge each thigh in the flour mix, then shake off any excess flour and carefully place in the oil. Fry until golden, 7 to 8 minutes. Remove the chicken to a paper bag or paper towels to drain excess grease and immediately season with salt.
  • Place each piece of fried chicken on top of a waffle and top each with some glaze and scallion greens to serve.

8 chicken drumsticks
1/4 cup kosher salt
1/4 cup maple syrup
2 tbsp sugar
2 tbsp dried thyme
1 tsp black peppercorns
2 bay leaves
1 head of garlic (sliced in half crosswise)
6 cups water
2 cups buttermilk
Canola oil for frying
1 box Jiffy cornbread mix
1 egg
2 tbsp canola oil
1/2 cup buttermilk
1 cup maple syrup
1/2 jalapeno (roughly chopped)
1 cinnamon stick

Steps:

  • For the brine, add all ingredients except the chicken to a large stockpot. Bring to a boil, then cover and remove from heat to steep for 30 minutes. Remove lid and let cool completely. Strain the liquid and pour into a gallon sized plastic bag. Add drumsticks. Refrigerate for at least 12 hours, up to 36.
  • When ready to fry, remove chicken from brine and rinse under cold water. Pat dry with paper towels. Place chicken in a bowl and pour 2 cups buttermilk over it to soak.
  • Heat enough canola oil in a large cast iron skillet or dutch oven to be about 2 inches deep. Over medium high heat, bring the oil to 325-350 degrees. Be careful to keep it in this range throughout the entire frying process.
  • Shake excess buttermilk off chicken and add to hot oil. Do not overcrowd the skillet, fry in batches if needed. Keep an eye on the temperature throughout the frying process to make sure it doesn't exceed 350 degrees.
  • Fry drumsticks for 10 minutes, then flip over and fry for another 10. Remove to a cooling rack set over a sheet pan when done frying.
  • While the chicken is frying, add syrup, jalapeno, and cinnamon stick to a small saucepan. Set to medium low heat to steep. Strain before serving.
  • Preheat your waffle iron. Whisk together all ingredients for waffles. For Belgian waffles, this will yield two waffles. Prepare waffles according to the instructions for your waffle iron.
  • To assemble, top half of a waffle (if Belgian) with two fried drumsticks. Pour a generous amount of maple syrup over the top.

1 ½ tablespoons McCormick® ground black pepper
1 tablespoon McCormick® Poultry Seasoning
1 tablespoon cayenne pepper

2 cups all purpose flour
¼ cup cornstarch
2 large eggs
1 cup buttermilk, room temperature

1 ½ sticks unsalted butter
2 ice cubes

Steps:

  • Brine the chicken: In a large bowl or container, combine the buttermilk and 2 tablespoons of salt. Add the chicken to the brine, making sure to submerge fully. Cover and refrigerate for at least 2 hours, or overnight. When ready to use, remove the chicken wings from the brine and pat dry with paper towels. Transfer to a wire rack set over a baking sheet.
  • Preheat the oven to 300°F (150°C).
  • Fill a large cast iron skillet ¾ of the way with peanut oil and heat over medium-high heat until the temperature reaches 350°F (180°C).
  • In a small bowl, whisk together 2 tablespoons salt, the onion powder, paprika, garlic powder, black pepper, poultry seasoning, cayenne, and ground mustard until well combined.
  • Transfer all but 2 tablespoons of the spice mixture to a medium bowl with the flour and cornstarch and whisk until well combined.
  • In a separate medium bowl, whisk together the eggs, buttermilk, hot sauce, and a pinch of salt until well combined.
  • Coat a chicken wing in the flour mixture, shaking off any excess, then dip in the buttermilk mixture, letting any excess drip off. Coat again in the flour mixture, pressing the flour into the chicken. Return the coated chicken to the wire rack and repeat with the remaining wings.
  • Working with 2-3 wings at a time, fry the chicken in the hot oil until golden brown and the internal temperature reaches 160-165°F (70-75°C). Remove the chicken from the oil, sprinkle on both sides with a pinch of the reserved spice mix, then set on a clean wire rack set over a baking sheet to cool. Repeat with the remaining chicken. When finished frying, transfer the chicken to the oven to keep warm until ready to serve.
  • Make the waffles: Melt the butter in a medium nonstick saucepan over medium-high heat. Cook, stirring occasionally, until the butter turns dark brown and smells nutty, between 7-10 minutes. Watch carefully and focus on color, so the butter does not burn, aiming from brown not black bits. Remove the pot from the heat.
  • Add an ice cube to the butter and slowly let it melt. It may froth and bubble. Add the remaining ice cube and gently stir until melted. Pour ½ cup of the browned butter into a liquid measuring cup or heatproof bowl and let cool completely, about 5 minutes. Store any remaining browned butter in the refrigerator for another use.
  • Preheat a waffle iron to medium-high heat.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a medium bowl or large liquid measuring cup, whisk together the buttermilk, browned butter, eggs, and vanilla until well combined.
  • Pour the wet ingredients into the dry ingredients and whisk until just combined, being careful not to overmix. Let the batter sit for 5-7 minutes while the leavening agents activate.
  • Grease the waffle iron with nonstick spray, then cook the waffles according to the manufacturer's instructions. You should have about 6 total, depending on the waffle iron. Set the waffles on a baking sheet as they finish cooking and transfer to the oven with the chicken to keep warm until ready to serve.
  • To serve, place a waffle on each plate (either whole or cut into 4 pieces) and set 2-3 wings on top of or next to each waffle. Top the waffles with butter, maple syrup, and/or hot sauce, if desired. Serve hot.
  • Any leftover waffles can be wrapped individually in plastic wrap, then placed in a zip-top bag and stored in the refrigerator for up to 2 days.

1 tablespoon pure maple syrup
3 cloves garlic, smashed
Small bunch fresh thyme sprigs
Kosher salt and freshly ground black pepper
2 pounds bone-in chicken pieces, such as legs, thighs and breasts, halved
Olive or vegetable oil for brushing the grill grates
Serving suggestions: green salad, cornbread and/or your favorite barbecue sauce

Steps:

  • Stir the maple syrup, garlic, thyme, 1 tablespoon salt, a generous grind of pepper and 3 cups of water together in a large bowl until the salt is dissolved. Add the chicken, making sure it's completely covered by the brine. Cover and refrigerate for 2 to 3 hours.
  • Prepare an outdoor grill or grill pan for high heat.
  • Drain the chicken and pat very dry. Lightly oil the grill grates and grill the chicken, flipping occasionally, until no longer pink near the bone, 15 to 20 minutes (depending on the size of the chicken pieces). 2/3 cup all-purpose flour
1/3 cup cornstarch
1 1/2 tablespoons baking powder
2 teaspoons sugar

1 2/3 cups whole milk (oat milk may substituted)
2 large eggs
1/4 cup (4 tablespoons) unsalted butter
2 pounds organic chicken pieces (can be a combination or choice of breast, thigh, leg, wing)
Neutral oil, for frying
1/4 cup paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon cayenne pepper
Kosher salt and freshly cracked black pepper
3 cups all-purpose flour
1 cup cornstarch
2 cups buttermilk
1 cup 100% Vermont maple syrup
1/4 cup hot sauce, such as Frank's RedHot

Steps:

  • For the cornbread waffles: Preheat a waffle maker.
  • In a medium bowl, whisk together the cornmeal, flour, cornstarch, baking powder, sugar and salt. Add the milk and eggs and mix until just combined. Set aside while you grease the bottom half of the waffle maker with 1 tablespoon butter. Pour some batter into the waffle maker and cook until golden brown. Repeat with the remaining butter and batter.
  • For the fried chicken: Rinse off the chicken pieces and arrange on a sheet pan; pat dry with paper towels. In a large, high-sided fry pan, add roughly 2 to 3 inches of oil (depending on the size of the pan) and bring to 345 degrees F. Fit a sheet pan with a wire rack and set aside.
  • In a medium bowl, combine the paprika, garlic powder, onion powder and cayenne and sprinkle with salt and pepper. Lightly sprinkle over the chicken pieces until 1 tablespoon spice mix is left.
  • Add the leftover spices to a shallow dish and mix well with the flour and cornstarch. Put the buttermilk in another shallow dish. Dredge the chicken pieces first in the flour mix, second in the buttermilk and third again in the flour mix.
  • Place the chicken pieces in the hot oil in batches as needed. Cook, flipping halfway for even browning, until the internal temperature reaches 165 degrees F, 5 to 10 minutes. Remove to the rack between batches. Season immediately with salt.
  • For the maple hot sauce: In a small saucepan, combine the maple syrup and hot sauce and bring to a light simmer over medium heat.
  • Portion the waffles and add to a platter alongside the chicken. Drizzle the maple hot sauce on top and serve.

BETTER THAN GRANNY'S, MAPLE FRIED CHICKEN

Chicken was on sale this week $.29 / pound for leg quarters. After I did the butchers job, separating legs from thighs, cut off the backs and tails, removed all the extra fat, I still had a little over $3.00 in 12 legs and 12 thighs. I bought so much 'cause it's Sunday and I'm cookin' for the week. I've been hankerin' for Fried Chicken so I figured I'd have another shot at it. I had some fried chicken tenders at the Super Bowl party at my local watering hole that were great and REAL moist. When I asked Charlie (head chef) how he did it, he told me that he always brines chicken prior to frying it. 6 months later I'm trying it. I looked all over my favorite web sites for different brines and found that the common denominators were; water, salt, vinegar, sweet, and spices. Lookin' around the galley for available stuff, I came up with this recipe. I took half the chicken and made it according to my Fried Chicken recipe, letting it soak in buttermilk with a little chipotle tabasco in it for a little bite. Then, I created the other marinade (recipe shown below), which is really a brine. Let both soak in the refrigerator for about 8 hours. Cooking the buttermilk batch, the smell was of normal fried chicken. The brined version smelled of the vinegar and I was concerned that the vinegar might give it an off flavor. Boy, was I wrong. Now, don't get me wrong, the buttermilk chicken was good, but, the brined chicken was GREAT. The smell of the vinegar while cooking must have been the vinegar cooking out. This brined version was more moist with a better sense of the flavors that were in the brine, especially the maple syrup. And, the Cajun Spice flavors of the Butt Kickin' Blacken really come through. Now you could say that it was just me talking about something that I made, but I had a buddy over tonight. A Southern buddy. Even he liked my version better than the buttermilk, even though the buttermilk version tasted just like his Granny used to make. So I guess it's a keeper and I figured I'd write it down before I forgot what I did. I can't even think of anything that I'd do different. 2 tablespoons cajun seasoning, Butt Kickin' Blacken

Steps:

  • Make the brine by combining all of the ingredients, and mixing well. Place the chicken in a plastic bag, add the marinade, and place in the refrigerator for about 8 hours, but at least 2 hours.
  • Mix the flour and seasonings together in a large flat pan like a jelly roll pan (I use a half chafer pan 'cause of the high sides. Take the chicken out of the bag with tongs, lay in the flour mixture then turn over. Take 3 legs and 3 thighs out to coat with this flour mixture. Rub the flour into the chicken with your hands, don't shake off the excess and place in a pan to get ready for frying.
  • Heat the oil to about 300°F in a black frying pan, and place the chicken in being careful not to splash the oil.
  • Leave the chicken alone for 10 - 12 minutes. When you start to see some blood being forced out of the chicken (this means that the chicken is cooking), carefully turn them over. Leave another 10 - 12 minutes. The second side should be well colored.
  • Take them out with tongs letting them drain back into the pan prior to placing on paper towels.
  • To make a crispier chicken, change the way you flour the pieces. Get 3 bowls going. One with the seasoned flour, the next with beaten egg and milk, and the third with seasoned flour. Dredge the chicken in the seasoned flour, then the egg mixture, then the seasoned flour again.
  • Serve while hot.
