MAPLE CHICKEN SAUSAGE PATTIES
Maple syrup loves chicken! Here large flake rolled oats are combined with lean ground chicken and sausage-type seasonings to create tasty sausage patties. Serve with your favourite egg and potato dishes for a healthy breakfast. This fast and flexible recipe can also be made into burgers or meatballs.

- Add ground chicken and an egg to a large bowl. Sprinkle over large flake rolled oats, minced garlic, diced onion, maple syrup, Dijon mustard, fresh minced thyme leaves, paprika, nutmeg, red hot chili pepper flakes, salt and freshly ground black pepper. Use clean hands to mix very well.
- Use a ¼ cup (60 ml) measure and shape ten portions into 2-inch (5 cm) patties. Cover and refrigerate for at least 1 hour to help the patties stay together better during cooking.
- Coat a large non-stick skillet coated with cooking spray or vegetable oil. Arrange a single layer of patties and pan fry over medium heat for 4-6 minutes on each side or until a thermometer reads 165°F (74°C).

- Preheat broiler and preheat a medium skillet over medium-high heat with 1 tablespoon oil and 1 tablespoon butter. Mix chicken with apple, syrup, grill seasoning, poultry seasoning, cinnamon and nutmeg and score the meat into 4 sections. Form 4 large, thin patties and set into hot butter and oil. Cook 5 minutes on each side.
- Place fork split muffins on broiler pan and toast. Butter toasted muffins and reserve.
- Heat a second nonstick skillet over medium heat and melt a tablespoon of butter in the pan. Beat eggs with milk, salt and pepper and scramble to desired doneness.
- Pile 1 sausage patty, 1/4 of the eggs and Cheddar cheese on each of 4 muffin halves. Return muffins to broiler to melt cheese, 1 to 2 minutes, then set tops into place and serve.

- Heat a small nonstick skillet over medium heat. Add butter and melt. Add apples and onions and season with a little salt, pepper and fennel seeds. Gently saute the mixture 5 minutes to soften and remove from heat to cool.
- Heat a griddle pan or large nonstick skillet over medium-high heat.
- Place chicken in a bowl and season with salt and pepper, poultry seasoning, allspice, paprika and a healthy drizzle of extra-virgin olive oil. Add in the apples, onions and fennel and mix the sausage. Score meat into 4 sections and form 3 small, thin patties from each section, 2 1/2 inches across, 12 small patties total. Cook patties 3 to 4 minutes on each side and serve warm.
SPICED MAPLE SAUSAGE PATTIES

- Mix the pork, onion, garlic, sage, thyme, syrup, paprika, allspice, coriander, cayenne, 2 1/2 teaspoons salt and 1/2 teaspoon black pepper with your hands. Form into 18 patties, 2 inches wide and 1/2 inch thick; put on a foil-lined baking sheet, cover and chill overnight.
- The next day, preheat the oven to 350 degrees F. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook half of the patties, turning once, until golden, about 5 minutes. Transfer to a baking sheet. Wipe out the skillet. Repeat with the remaining 1 tablespoon oil and patties, then transfer the patties to the oven to finish cooking, 5 to 10 minutes.
