Steps:

  • Put onions and peaches into a 4-quart or larger slow cooker; top with chicken.
  • In a glass measuring cup, whisk together barbecue sauce, vinegar, chipotle pepper and adobo sauce; pour over chicken. Cover and cook on LOW for 6-7 hours.
  • Use two forks to shred chicken in slow cooker; stir in salt. Divide chicken and slaw among buns.

2 pounds boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper
1 tablespoon dark brown sugar
2 teaspoons paprika
1/4 teaspoon cayenne
1 cup hot sauce, such as Frank's Red Hot
12 small rolls, such as Hawaiian or Parker House rolls, buttered and griddled
Ranch dressing, for serving
1 cup blue cheese crumbles
Tomato slices, for serving
Green leaf lettuce, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a 12-inch ovenproof skillet over medium-high heat. Add in the oil. Sprinkle both sides of the chicken with salt, pepper, the brown sugar, paprika and cayenne. Sear both sides of the chicken until golden, about 4 minutes. Add in the hot sauce to the skillet. Bring to a simmer and then place in the oven to finish off, and the chicken registers 160 degrees F on an instant-read thermometer.
  • Let the chicken cool, and then pull the meat with your hands. Adjust the seasoning if necessary, and then place back in the oven at BROIL until crusty and caramelized on top, about 4 minutes.
  • Sandwich Build: Place some chicken on the bottom buns, top with ranch, blue cheese crumbles, tomatoes and then lettuce. Serve.

Steps:

  • Combine the butter, hot sauce, white vinegar, Worcestershire, and garlic powder to create your buffalo sauce (or substitute with two cups of premade buffalo sauce).
  • Place four chicken breasts in your slow cooker and cover with the sauce.
  • Cook on high heat for four hours.
  • When the chicken has finished cooking, shred the chicken breasts with two forks.
  • On the side, mix together the coleslaw veggie mix and blue cheese dressing.

12 rolls dinner rolls, 1 pack
1 ½ cups shredded mozzarella cheese
3 cups rotisserie chicken, shredded
¾ cup hot sauce
½ cup ranch dressing
2 tablespoons butter, melted

Steps:

  • Carefully slice the pack of dinner rolls in half, being sure to keep the rolls connected as a single units as they are split into tops and bottoms.
  • Remove the top and place the bottom section in a 9x12 inch (23x30 cm) baking dish.
  • Sprinkle the bottom with about 1 cup (100 g) of the shredded mozzarella cheese (make sure it is evenly coated as this will act as a barrier between the sauce and the bread, preventing the rolls from getting soggy).
  • Top the cheese with the shredded rotisserie chicken. Drizzle the hot sauce and ranch dressing evenly over the chicken and spread out evenly with a spoon. Top with remaining mozzarella cheese.
  • Place the top half of the rolls on top and brush evenly with melted butter.
  • Bake in a preheated oven for 20-25 minutes, until the cheese is melty and the rolls have heated through.
  • Remove from oven, cool slightly before transferring to a cutting board.
  • Using a large knife, follow the lines of the rolls, cutting them into 12 individual sliders.

1 cup crumbled blue cheese

Steps:

  • Preheat the oven to 400 degrees F. Heat a 12-inch ovenproof skillet over medium-high heat. Add the vegetable oil. 2 tablespoons plus 1/3 cup Louisiana-style hot sauce, divided
1/4 teaspoon pepper
1/4 cup butter, cubed
1/4 cup honey
12 Hawaiian sweet rolls, warmed
Optional ingredients: Lettuce leaves, sliced tomato, thinly sliced red onion and crumbled blue cheese

Steps:

  • Place chicken in a 3-qt. slow cooker. Toss with 2 tablespoons hot sauce and pepper; cook, covered, on low 3-4 hours or until tender., Remove chicken; discard cooking juices. In a small saucepan, combine butter, honey and remaining hot sauce; cook and stir over medium heat until blended. Shred chicken with 2 forks; stir into sauce and heat through. Serve on rolls with desired optional ingredients. Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. 4 (4 ounce) boneless, skinless chicken breasts
½ cup buffalo wing sauce, or more as needed
4 slices LAND O LAKES® Deli American, cut into quarters
8 slider buns, sliced
8 tablespoons blue cheese salad dressing
1 rib celery, cut into 2-inch thin sticks

Steps:

  • Cut each chicken breast in half; place into large resealable plastic food bag. Flatten each to about 1/2-inch thickness with meat mallet.
  • Pour desired amount of buffalo wing sauce into bag; seal bag. Gently shake to coat chicken; refrigerate at least 30 minutes.
  • Heat gas grill on medium or charcoal grill until coals are ash white.
  • Remove chicken from hot sauce; discard sauce.
  • Place chicken onto grill. Grill, turning once, 10-12 minutes or until internal temperature reaches at least 165 degrees F and chicken is no longer pink in center. Hands down, these are the best sliders I have ever had!! The combination of red peppers and onions make them very moist little burgers. With the addition of buffalo sauce making them a little spicy and blue cheese topping, tomato and lettuce puts these in a league all their own!! I made 4 dozen for Memorial Day 2012 and they were a hit with the adults and children. I grilled them up the night before and refrigerated them. Took them to my parents camp and heated them for about 5 -7 minutes in the oven and they were ready. What a fabulous healthy choice for the Grilling season. 8 pts for 2.

1 medium onion, finely chopped (yes, finely so not to be noticed to much) lol
1 medium red bell pepper, finely chopped
2 tablespoon(s) water
1 pound(s) ground skinless chicken breast
2 tablespoon(s) buffalo wing sauce (we use frank's)
1 1/2 teaspoon(s) italian seasoning
1/4 teaspoon(s) salt
- cooking spray
8 - (2 1/2 inch) mini whole-wheat buns
8 - green-leaf lettuce leaves
8 - tomato slices
2 tablespoon(s) crumbled low-fat blue cheese

Steps:

  • Spray large nonstick skillet or ridged grill pan with nonstick spray and set over medium heat. Add onion, red bell pepper, and water; cook, covered, stirring occasionally, until liquid is evaporated and vegetables are very tender, about 8 minutes.
  • Transfer to large bowl and let cool 10 minutes. Add chicken breast, Buffalo wing sauce, Italian seasonings and salt; mix well.
  • With wet hands, form into 8 (1/2-inch thick) patties.
  • Cover with plastic wrap and chill until firm, at least 1 hour or overnight. [This is important because it helps the chicken sliders to firm up and makes them easy to grill w/o falling apart. The addition of onions & peppers makes them very moist.]
  • Take you sliders out of refrigerator and place on the grill (preferably on a grill stone or cover grate with some tinfoil and poke holes) over medium to low heat as they are going to cook very fast. Or you can spray skillet with nonstick spray and set over medium-low heat.
  • They need to register 165F on an instant-read thermometer inserted into side of each burger. Should take about 4 to 5 minutes per side. Now make your burgers.
  • 6/11/13 ---- It's slider time! I made these tonight and decided to try and melt the cheese on burger which worked well. I did add a shake or two of hot sauce first and then the crumbled bleu cheese.
  • 4th of July 2014--Made these for our holiday meal along with yellow dogs and some acini de pepe salad for dessert.

  • Variation: Cut chicken into strips. Lightly coat chicken with sauce. Bake in preheated 375 degree F oven for 15-20 minutes, until cooked through. Remove to platter and coat with remaining sauce.
  • 4-5 WW points per serving.
