Montreal steak seasoning is one of those staple spice blends to have in your pantry for when you are grilling up some steaks or burgers. This seasoning is made at home with the perfect balance of savory flavors and bright herbs.

2 Tablespoons whole peppercorns
2 Tablespoons smoked paprika (optional, but highly advised)
2 Tablespoons kosher salt or coarse sea salt
1 Tablespoon garlic powder
1 Tablespoon dehydrated onion or onion powder
2 teaspoons whole coriander seed
2 teaspoons whole mustard seed
2 teaspoons dried dill
2 teaspoons dried rosemary
2 teaspoons red pepper flakes

Steps:

  • Combine the peppercorns, salt, and paprika (optional) in a mortar and pestle or spice grinder. Blend until the peppercorns have almost all broken apart. Add in the rest of the seasonings and blend again until well combined.
  • Transfer to an airtight jar. The flavors are the best if used immediately, but the blend can be stored at room temperature and used for several months. Great on steaks, roasts, burgers, and more!

10 g (1 tbsp) black peppercorns
20 g (1 tbsp) coarse salt
4 g (1 tbsp) onion flakes
2 g (1 tsp) red pepper flakes
4 g (1 tbsp) coriander seeds
12 g (1 tbsp) mustard seeds
4g (2 tsp) dill seeds
40 g (1/3 cup) maple sugar or 30 g (1/3 cup) maple flakes
4 g (1 tsp) garlic powder

Steps:

  • Use a spice grinder or mortar and pestle to grind the peppercorns with the salt, onion flakes, pepper flakes, coriander seeds, mustard seeds, and dill seeds. Work in batches as needed to accommodate the size of your grinder or mortar.
  • Place into your container, then add the maple sugar and garlic powder.
  • Apply this seasoning to meat, fish, or poultry after searing. If you put it on beforehand, the sugar will burn.

4 teaspoons coarse salt
1 tablespoon cracked pepper
1 tablespoon onion flakes
1/2 tablespoon crushed red pepper flakes
1/2 tablespoon thyme
1/2 tablespoon rosemary
1/2 tablespoon coriander seed
1/2 tablespoon dill
1 teaspoon garlic flakes

Steps:

  • Combine ingredients in a glass jar with an airtight lid and shake well to combine.
  • If seasonings are whole, process in a blender or food processor so that they're still large, but not whole.

2 tablespoons black peppercorns
1 tablespoon mustard seeds
2 teaspoons dill seeds
1 teaspoon coriander seeds
1 tablespoon plus 1 teaspoon coarse kosher salt
1 tablespoon plus 1 teaspoon dried minced garlic
1 teaspoon crushed red pepper flakes

Steps:

  • Cook peppercorns, mustard seeds, dill seeds, and coriander seeds in a small skillet over medium heat, stirring, until fragrant and beginning to pop, about 2 minutes. Transfer to a mortar and pestle and coarsely crush, or transfer to a sturdy resealable plastic bag and coarsely crush with the bottom of a heavy skillet. Add salt, garlic, and chile flakes and crush to combine.

  • Spice rub can be made 1 month ahead. Store in an airtight container.
