Maple Pumpkin Butter image

This is a recipe I cut out of the newspaper that I amended to crock pot cooking. If I make this on a day that I am home, I do stir the crock pot every hour or two just to keep from anything on the sides from burning. If you want to cook in the oven, then cook at 350 degrees for two hours while stirring every 15 minutes.

1 (29 ounce) can pumpkin puree or 2 (15 ounce) cans pumpkin puree
3/4 cup sugar
3/4 cup apple cider
3/4 cup pure maple syrup
1 teaspoon cinnamon
1 teaspoon ginger

Steps:

  • -Mix all ingredients into your crock pot.
  • -Cook on low for 8-10 hours until the mixture becomes thick or to your desired consistency.
  • -Pack into sterlized jars and seal.

This sweet and creamy butter is great on sweet potatoes, waffles, and French toast. This butter is the only way I can get my husband to eat sweet potatoes!

½ cup brown sugar
¼ cup maple syrup
1 tablespoon pumpkin pie spice

Steps:

  • In a medium bowl, mix together the butter, brown sugar, maple syrup and pumpkin pie spice until well blended. Chill in the refrigerator, for about 30 minutes. Form into a roll using waxed paper and store wrapped. It can be frozen for later at this point if desired.
