2 cups white whole wheat flour or regular whole wheat flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon fine sea salt
1 1/4 cups chocolate chips*
2/3 cup lightly packed coconut sugar or 1/2 cup packed brown sugar
1/2 cup sugar
1/2 cup plus 1 tablespoon melted coconut oil or extra-virgin olive oil**
1/4 cup plus 1 tablespoon water
Maldon flaky sea salt for sprinkling (optional)

Steps:

  • In a medium bowl, combine the flour, baking powder, baking soda and salt. Whisk to combine, then add the chocolate chips and toss to coat.
  • In a large bowl, combine the coconut sugar, regular sugar, oil and water. Whisk until the sugar has incorporated into the oil and the mixture is smooth, about 1 to 2 minutes.
  • Add the flour mixture to the sugar mixture, then stir just until combined and no more flour is visible (don't overdo it).
  • Line 2 baking sheets with parchment paper for easy cleanup. Fill an ice cream scoop two-thirds with dough (or spoon the mixture into even 2-inch mounds), and place the dough onto one of the prepared sheets. Repeat with remaining dough, leaving several inches of space around each cookie.
  • Freeze the cookies on their pans for 30 minutes, or chill them for up to 24 hours in the refrigerator.
  • When you're ready to bake, preheat the oven to 350 degrees Fahrenheit. Bake until the edges are just starting to turn golden, about 14 to 17 minutes. Place the baking sheet on a cooling rack and sprinkle the cookies with flaky salt, if using. Repeat with the remaining cookies.

2 3/4 cups all-purpose flour (see Cook's Note)
1 1/2 teaspoons fine salt
1 teaspoon baking powder
1 teaspoon baking soda
2 1/2 sticks unsalted butter, softened
1 3/4 cups packed dark brown sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract or vanilla bean paste
One 12-ounce bag semisweet chocolate chips (about 2 cups)

Steps:

  • Sift the flour, salt, baking powder and baking soda into a large bowl.
  • Beat the butter and brown sugar in a large bowl with an electric mixer on medium-high speed until pale and fluffy, about 4 minutes, scraping down the sides of the bowl as needed. (Use the paddle attachment for a stand mixer.) Beat in the eggs one at a time, then beat in the vanilla. Reduce the mixer speed to low. Add the dry ingredients and beat until combined. Stir in the chocolate chips by hand.
  • Press plastic wrap directly onto the surface of the dough and refrigerate at least 1 hour or preferably overnight.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Use a 1-ounce ice cream scoop to scoop half the dough onto the prepared baking sheets, spacing about 2 inches apart. Chill the remaining dough while you bake the first batch.
  • Bake at 375 degrees until the cookies are golden around the edges but still soft in the middle, 12 to 15 minutes. Let the cookies cool for 10 minutes on the baking sheets, then transfer them to a wire rack to cool completely. Cool the baking sheets completely, then line with parchment paper and repeat the scooping and baking process with the remaining dough.

1 cup brown sugar
1/4 cup caster sugar (or white sugar)
1 cup self-raising flour
3/4 cup plain flour
1 egg

It's a little more complicated, and you'll have to plan ahead: After assembling the dough, you must chill it for at least 24 hours before baking it, and preferably up to 36. This allows the dry ingredients time to soak up the wet ones, which results in a firmer dough. It leads to a marvelously chewy, chocolate-rich cookie. Don't skimp on good chocolate, and the sea salt is not an option - it's the beacon at the top of this gorgeous treat. (You can certainly put this recipe together by hand, but a stand mixer makes it easy work. These chewy Grandma-style cookies will only leave you wanting more! Slightly crispy on the edges with a soft and chewy middle, they are absolutely divine and VERY easy to make! I received this recipe years ago from my friend Linda and it's become a favorite in our home.

Number Of Ingredients 8

1 cup white sugar
1 1/2 cups brown sugar (slightly packed)
1 1/2 cups butter (room temperature)
2 teaspoons vanilla
3 large eggs
4 cups flour
2 teaspoons baking soda
2 cups chocolate chips (or however much you like! I usually eyeball a couple cups)

Steps:

  • Mix all ingredients together with a handmixer in a large bowl EXCEPT chocolate chips.
  • Fold in chocolate chips with a spatula and spoon 2 tablespoons of dough per cookie onto an ungreased cookie sheet.
  • Bake at 350° for about 10 minutes or until the edges are just slightly brown.
  • Remove immediately from cookie sheet onto cooling racks.

1 cup packed brown sugar
1/2 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2-1/3 cups all-purpose flour

1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, about 3 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into creamed mixture. Stir in chocolate chips., Drop dough by rounded tablespoonfuls 3 in. apart onto greased baking sheets. Flatten slightly. Bake 10-12 minutes or until light brown. Remove from pans to wire racks to cool.

3/4 cup butter flavor shortening
1 1/4 cups firmly packed light brown sugar
2 tablespoons milk
1 tablespoon vanilla
1 egg
1 3/4 cups flour
1 teaspoon salt
3/4 teaspoon baking soda
1 1/2 cups chocolate chips
1 cup chopped nuts (*) (optional)

Steps:

  • Pre-heat oven to 375 degrees (350 if using convection).
  • Combine shortening, brown sugar, milk, and vanilla in large bowl.
  • Beat at medium speed until well blended.
  • Beat egg into mixture.
  • Combine flour, salt, and baking soda.
  • Mix into creamed mixture just until blended.
  • Add chocolate chips and nuts and mix.
  • Drop rounded teaspoons of dough on ungreased baking sheet about 3 inches apart (I prefer to use a baking stone).
  • Bake 8-10 minutes for chewy, 11-13 minutes for crisp cookies.
  • Cool 2 minutes on baking sheet then transfer to foil to cool completely.
  • *If nuts are used decrease chips to 1 cup.

3 1/2 cups all purpose or baking flour (Gold Medal is the best, King Arthur is next if your store doesn't have Gold Medal)
1 cup granulated white sugar (Go for C&H or 365 Organic)
1/2 cup DARK brown sugar (Packed) (C&H or 365 Organic)
1 tsp. baking soda (Arm and Hammer)
4 EXTRA large brown eggs (Anything's great as long as it's cage-free and organic is a good plus)
2 sticks unsalted sweet cream butter (Softened, read description) (Generic's fine, but Cremerie Classique softens faster and I think it tastes better)
1 cup mini chocolate chips (MUST be minis, and Nestle Tollhouse makes the best)
1 tbs. vanilla extract (Any brand as long as the vanilla is from Madagascar)

Steps:

  • 1. Preheat oven to 350° 2. Using a large (preferably metal) fork, the kind you use for tossing/serving salad, thoroughly mix the eggs, butter, vanilla, and sugar in a large (see description) mixing bowl until it forms a paste with small chunks of butter (no more than 1/2 of an across) throughout. 3. Cup by cup, mix in the flour with the fork, not adding the next cup until the last one has been fully incorporated in to the wet mixture until you have done so three times. 4. Add the last 1/2 cup of flour and the tsp. of baking soda mix until one consistency. 5. Dump in the chocolate chips and hand mix them in until evenly distributed, touching the dough as little as possible (it is quite sticky, so you will end up wasting a lot down the sink otherwise) 6. Put liberal balls of the dough on a cookie sheet, 1-2 inches across. Do not roll them around, just get them into a generally spherical shape and plunk them on. They rise and spread a lot, so put them at least 2 inches apart from each other. I can usually get 6 or so on a standard cookie sheet. 7. Put the cookie sheet in the middle of the oven and give them 10 minutes. When the timer goes off, use a knife and stick it through one of the cookies. If there is wet dough on the knife, they need more time. Give them another 2 or 3 minutes, but do not be fooled by going through a chocolate chip. Look for clear dough. 8. When you have deemed the cookies done, take the sheet out of the oven and use a flipping spatula to take the cookies off the sheet, placing them on pretty much any clean surface to cool. Do not stack them until they have finished cooling or run the risk of having them glue together. 9. Repeat steps 6 through 8 until you are out of dough. IMMEDIATELY clean the mixing bowl with hot water and a sponge or scrubbing brush, as if you don't it will glue to the bowl and take the rest of your waking life to clean. Trust me, unfortunately I speak from experience.
