Ingredients

1 cup packed brown sugar
3/4 cup butter, softened
1 large egg
2 tablespoons 2% milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup maraschino cherries, well drained and chopped
1/2 cup sweetened shredded coconut
1/2 cup chopped pecans

Steps:

In a large bowl, cream brown sugar and butter until light and fluffy. Beat in the egg, milk and vanilla. In another bowl, mix the flour, salt and baking soda; gradually beat into creamed mixture. Stir in the cherries, coconut and pecans. , Drop by teaspoonfuls onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Remove from pans to wire racks to cool.

This has always been a holiday favorite but it is good anytime. It is a good cookie to put in holiday baskets.

Ingredients

4 1/2 c all purpose flour
1 tsp salt
1 1/2 tsp baking soda
1 1/2 c butter, softened
2 1/4 c sugar
3 large eggs, beaten
1 1/2 tsp vanilla extract
1/4 c reserved cherry juice
3 c oats, quick cooking, uncooked
1 1/2 c pecans, chopped
1 jar(s) 12-oz. maraschino cherries, drain & reserve juice, chop cherries

Steps:

1. Pre-heat oven to 350 degrees. Grease cookie sheets Bake 8 to 10 minutes Watch first batch closely, don't over bake. Makes 9 dozen
2. Sift flour, salt and soda, set aside.
3. In large bowl cream butter, sugar, eggs, vanilla and cherry juice. Mix well. Add dry ingredient, small amounts at a time, mixing well. Stir in oats, cherries and pecans. Note: If mixture seems to stiff you can add a little more cherry juice.
4. Drop by teaspoons on greased cookie sheets. Bake at 350 degrees for 8 to 10 minutes. Watch first batch closely, don't over bake. Makes 9 dozen.
