BIG BEEF IN RED WINE PIE



Big beef in red wine pie image

Slow cook a cheap cut of meat like braising steak in rich red wine gravy for the perfect base to a classic pie

1 ½kg braising steak , cut into large chunks
large sprig of fresh thyme
3 fresh bay leaves
1 star anise , optional, but add if you have
750ml bottle cheap red wine
3 tbsp sunflower oil
4 sticks celery , chopped
1 large onion , chopped
6 large carrots , cut into chunks
2 garlic cloves , chopped
pinch golden caster sugar
3 tbsp plain flour , plus extra for dusting
1 heaped tbsp tomato purée
2 beef stock cubes
500g block shortcrust or puff pastry , preferably all butter
1 egg , beaten
flaky sea salt

Steps:

  • If you have time, place the beef in a large bowl with the herbs and star anis and season well with pepper. Pour over all the wine, cover with cling film and chill for up to 24 hrs. The next day sit a colander over another bowl and drain the beef well. Pick out the herbs and star anis and set aside. If you don't have time just start with all the ingredients prepared and ready to cook.
  • Heat oven to 170C/150C fan/gas 3 - 4. Heat a drizzle of oil in a large casserole until very hot then brown the meat well in batches. For each batch, heat more oil and brown for around 10 mins before transferring to a plate and repeating the process. When all the meat is done add the vegetables and cook for 5 mins until starting to colour then add the herbs and star anis and cook for a minute more.
  • Sprinkle sugar over the vegetables, then scatter over the flour and stir together. Cook for a few minutes until starting to brown, stir in the tomato purée then pour over the wine, scraping the bottom of the pan with your spoon. Tip in the beef and any juices then crumble in the stock cubes. Pour over just enough boiling water from the kettle to cover the meat and vegetables. Season with salt and pepper and bring everything to the boil, stir well, cover and place in the oven for 2 1/2 hrs until the meat is really tender. This can be done up to 3 days in advance and chilled until ready to make the pie or frozen for up to 3 months.
  • To make the pie heat oven to 200C/180C fan/ gas 6. Tip the filling into a 2-litre pie or baking dish. Roll the pastry out on a lightly floured surface to fit the pie dish with a slight overhang and drape over the dish. Crimp the edges if you are able to and poke a couple of little steam holes in the middle. Brush the pastry with the beaten egg and sprinkle with flaky sea salt. Bake for 30 mins until golden brown. This is goes well with mash and buttered green beans.

3/4 cup chili sauce
1/4 cup red wine vinegar
2 tablespoons sugar
2 tablespoons soy sauce
1/2 teaspoon garlic-pepper blend

Steps:

  • In large resealable food storage plastic bag, combine all ingredients except roast; mix well. Add roast; seal bag and turn to coat. Refrigerate at least 8 hours or overnight to marinate.
  • Heat oven to 325°F. Remove beef from marinade; reserve marinade. Place beef in shallow roasting pan. Bake at 325°F. for 1 1/2 to 1 3/4 hours or until of desired doneness, brushing occasionally with marinade.
  • To serve, bring any remaining marinade to a boil in small saucepan. To serve, slice beef thinly; serve with marinade.

1 cup soy sauce
3/4 cup beef broth
1/2 cup olive oil
2 tablespoons red wine vinegar
4 to 5 garlic cloves, minced
1 teaspoon coarsely ground pepper

1/2 teaspoon hot pepper sauce
1 bay leaf
1 beef tenderloin roast (3-1/2 to 4 pounds)

Steps:

  • In a bowl, combine the first nine ingredients; mix well. Cover and refrigerate 1 cup for basting. Pour remaining marinade into a shallow dish; add bay leaf and tenderloin. Turn to coat; cover and refrigerate overnight., Drain and discard marinade and bay leaf. Place tenderloin on a rack in a shallow roasting pan. 6-8 pound filet
1 cup Japanese soy sauce
3 cloves garlic, finely chopped
2 tablespoons chopped fresh ginger, or 1 tablespoon chopped candied ginger, washed free of excess sugar
1/2 cup sherry
1/4 cup peanut or olive oil

Steps:

  • Trim the filet well. Combine soy sauce, garlic, ginger and sherry in a large bowl. Rub the filet thoroughly with the oil and place it in the bowl. Turn a number of times, and let it marinate for several hours, turning once or twice.
  • Place the filet on a rack, and roast in a 350°F. oven for 45-50 minutes, or until the meat thermometer registers 120°F. (for rare). Baste with the marinade several times during the roasting. Remove from the oven, and let it rest for several minutes before serving on a hot platter. Pour pan juices over the filet.
  • Garnish with broiled mushrooms and watercress and serve with wild rice and toasted almonds. Drink a Châteauneuf-du-Pape.

2 cups beef stock
1/2 cup olive oil
1 onion, chopped
1 stalk celery, chopped
1 carrot, chopped
1 garlic clove, crushed
1 teaspoon marjoram
1 teaspoon salt

1 kg beef, cubed
flour
puff pastry sheet
1 egg, beaten

Steps:

  • Combine all ingredients for marinade in saucepan and bring to boil, allow to cool.
  • Cut beef into bite size pieces, marinate for 24 hours in fridge.
  • Drain meat and toss in flour.
  • Brown in oil.
  • Transfer to a saucepan and pour in the marinade.
  • Simmer 1 hour or until tender.
  • Pour into pie dish.
  • Place pastry over the top.
  • Glaze with egg.
  • Bake at 200 degrees celcious for 20 minutes or until pastry is cooked.
  • Serve with a leafy green salad or mashed potatoes.
