Steps:

  • In a bowl, combine the first four ingredients; mix well. Stir in the cucumbers and onions. Cover and refrigerate for several hours or overnight.

5 medium cucumbers, peeled & cut into 1/4-inch thick slices
1 cup finely chopped green bell pepper
1/2 teaspoon grated lemon peel
2 onions, finely chopped
1 cup white vinegar
2 cups sugar
1 teaspoon celery seed
2 teaspoons salt

Steps:

  • In large saucepan, combine vinegar, sugar, celery seed, and salt. Bring to a boil. Remove from heat; refrigerate, covered, at least 4 hours.
  • In large bowl, combine cucumbers, bell pepper, lemon peel, and onions. Mix well; set aside.

1 cup white vinegar

Stuffed Cucumbers image

I have been making these for years. Another fast, easy and tasty pupu. The "stuffing" really does need to sit and marinate for a while so make it the morning of or no more then 12 hours before serving. Otherwise it becomes a runny mess. The website did not recognize the words Japan or seedless - but I usually use the longer slim Japanese or seedless variety.

2 large cucumbers
2 ounces feta
dill weed
white pepper

Steps:

  • Cut about 2+1/2 inches off each end of cucumber (assuming you are using the Japan or seedless, since they are typically rather long).
  • Grate the ends using a hand grater & place into a fine mesh strainer.
  • Cut the cucumbers in half, then again lengthwise.
  • Scoop out seeds so you have four boats & run the bottom side of boat across a grater. This creates a flat bottom so the boat doesn't rock. Save the shavings & rough chop into the grated cuc ends from above.
  • The longer you let the cucumber strain, the drier the stuffing will be, I usually wait about 30 minutes.
  • Remove grated cuc from the strainer, add to bowl.
  • Add 2oz feta, white pepper and dill weed. Stir gently.
  • Chill at least a couple hours but no longer than 12 hours.
  • Wipe the boats dry (makes the stuffing easier) and place stuffing inside.
  • Garnish: black lava sea salt & dots of sriracha mixed with mayo.
  • You can also slice into smaller bite sized "U's" if you refrigerate after stuffing to re-firm the feta/cuc mixture.
  • Prep time does not include refrigerator marinade time.

As a rule, I stay away from making specific time promises because everyone moves at a different pace, and life gets in the way of a "20-minute recipe." But! I'm going to break my own rule and say that in 20 minutes or less you can have dinner on the table.

1 English seedless cucumber (14 to 16 oz/400 to 455 g), very thinly sliced
8 radishes (about 8 oz/225 g), very thinly sliced
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1/4 cup chopped fresh dill, plus more for serving
2 tablespoons poppy seeds
Kosher salt and freshly ground black pepper
4 (6-oz/170-g) thin pieces skin-on or skinless Arctic char
1/8 teaspoon cayenne pepper

Steps:

  • In a medium bowl, combine the cucumber, radishes, oil, lemon juice, dill, poppy seeds, 1 teaspoon salt and 1/2 teaspoon pepper. Let sit, tossing occasionally, until the cucumbers and radishes soften slightly, 10 to 15 minutes.
  • Meanwhile, cook the fish. Preheat your broiler to high. Line a baking sheet with aluminum foil and place the fish on top. Season with the cayenne pepper and 1 teaspoon each salt and black pepper. Broil until just barely opaque throughout, 3 to 5 minutes. Watch them like a hawk! They cook faster than you think and thin pieces cook super quickly.
  • Serve the fish with the cucumber radish salad, sprinkled with dill, salt and black pepper.
