8 ounces radishes
1 bunch fresh broccoli stems (dispose of florets)
1/2 yellow pepper, finely diced
1/2 red pepper, finely diced
3 scallions, sliced
3 tablespoons Gefen Light Olive Oil
1 tablespoon Kedem White Wine Vinegar
2 tablespoons lemon juice
1 teaspoon honey
1 teaspoon Haddar Kosher Salt
1/2 teaspoon black pepper
1 cube Gefen Frozen Dill, or 1 teaspoon chopped fresh dill

Steps:

  • Shred radishes and broccoli stems. Transfer to a large bowl and add peppers and scallions.
  • Combine all dressing ingredients. Whisk together and pour over salad. Toss well.

RADISH CUCUMBER SALAD

I put this salad together with vegetables I had left in my garden. My family liked it so well, I started bringing it to community suppers and was often asked for the recipe. It's a refreshing side dish for any meat entree. -Mildred Sherrer, Bay City , Texas

1/2 medium cucumber, peeled, seeded and cut into 1-inch julienne strips
2 radishes, julienned
2 tablespoons chopped red onion
1 tablespoon olive oil
1-1/2 teaspoons lemon juice
1/8 to 1/4 teaspoon garlic salt
1/8 teaspoon lemon-pepper seasoning

Steps:

  • In a serving bowl, combine the cucumber, radishes and onion. In another bowl, combine the remaining ingredients. Pour over vegetables and toss to coat. Serve immediately.

SUMMER RADISH SALAD

Looking for a recipe to use radishes from my garden, I came across this salad at a local restaurant. It's so good, I had to share.

2 cups sliced radishes
½ teaspoon salt
1 cup sliced red onion
1 cup seeded and sliced cucumber
½ cup extra virgin olive oil
2 tablespoons white wine vinegar
½ teaspoon white sugar
1 clove garlic, minced
1 teaspoon chopped fresh dill

Steps:

  • Toss radishes with salt; let stand for about 10 minutes. Drain any liquid and transfer radishes to a large bowl. Add red onion and cucumber slices.
  • Whisk olive oil, vinegar, sugar, garlic, and dill in a small bowl until well mixed; pour over vegetables and toss to combine. Cover and refrigerate for at least 1 hour before serving.

Number Of Ingredients 10

8 large bunches radishes (sliced)
8 green onions (chopped)
1/4 cup fresh dill, chopped
1/2 cup olive oil
1/4 cup lemon juice
1 tsp sugar
1 tsp Dijon mustard
1/2 tsp salt
1 dash pepper
6 ounces Swiss cheese, shredded

Steps:

  • Combine radishes, onions, and dill.
  • Stir together everything else except the cheese and pour over radish mixture, toss lightly, cover and refrigerate 2-4 hours. Remove 30 minutes before serving. Stir.
  • Sprinkle cheese on top just before serving. (I forgot this part, and it was just fine).

MOO SAENG CHAE (MARINATED RADISH SALAD)



Moo Saeng Chae (Marinated Radish Salad) image

I don't know how closely this recipe follows the traditional Korean recipe; I make do with what produce is available here. For this recipe I used both daikon radish and icicle radish. I'm sure other varieties will work. Use fresh, crisp farm fresh radishes. Limpy grocery chain radishes won't work. Spicy!

1 large crisp apple
2 cups white radishes
3 green onions
3 teaspoons sugar
2 teaspoons regular sesame oil
1 tablespoon salad oil
1 teaspoon salt
1/2 lemon, juice of
1 tablespoon soy sauce
1 tablespoon sesame seeds, toasted
3 tablespoons mild rice vinegar
1/2 red jalapeno chile, seeded and finely chopped

Steps:

  • Prepare marinade and set aside. Note: I cut down the amount of soy sauce from 3 T. to 1 T.- add more if you wish.
  • Peel radishes and cut into matchstick strips.
  • Peel, core and seed apple; cut into matchstick strips. Soak in cold water with a good squeeze of lemon juice to prevent browning.
  • Slice the spring onions crosswise into thirds then lengthwise cut into thin strips, including both white and green parts.
  • Combine the salad dressing with the radish, well-drained apple strips and green onion.
  • Cover and chill before serving. Best made 1-2 hours in advance to allow to marinate.
