GRILLED ZUCCHINI SKEWERS



Grilled Zucchini Skewers image

Number Of Ingredients 5

2 medium zucchini, thinly sliced lengthwise on a mandoline
1 tablespoon olive oil
1/2 teaspoon kosher salt
4 ounces Robiola cheese, cut into 1/2-inch cubes (see Cook's Note)
4 thin slices Black Forest ham, sliced into 3/4-inch strips

Steps:

  • Preheat a grill pan over medium-high heat.
  • On a rimmed baking sheet, toss the zucchini strips with the olive oil and salt. Grill the zucchini until just soft, about 45 seconds per side. Don't worry about the grill marks at this point. Remove to a board and lay out the strips.
  • Lay the strips of zucchini on a board. Roll 1 cube of cheese in 1 strip of ham, then position the ham and cheese roll on a zucchini strip so the exposed ends of the cheese will be rolled up in the zucchini, preventing it from squeezing out. Roll the zucchini around the ham and cheese roll. Use 2 skewers to secure the roll. Repeat with the remaining ingredients, placing 2 rolls on every pair of skewers. Place the skewers back on the grill and grill until just warmed through and grill marks have formed, about 1 minute per side. Serve warm.

SUMMER VEGETABLE SKEWERS



Summer Vegetable Skewers image

Of all the possible vegetables to grill on skewers, zucchini and eggplant are some of the best, turning velvety soft and richly flavored as they sear over the flames. In this recipe, they're quickly marinated in oregano, garlic and olive oil while the grill heats, then brightened with plenty of fresh lemon juice just before serving. Salting them for 10 or so minutes before grilling helps season them through and through, but you can skip that step if you're short on time.

2 pounds zucchini or eggplant, or a combination, cut into 1-inch cubes
Fine sea salt
2 fat garlic cloves, finely grated, pressed or minced
2 tablespoons minced fresh oregano or marjoram
1/4 teaspoon red-pepper flakes
1/3 cup extra-virgin olive oil, plus more for serving
Lemon wedges, for serving
Flaky sea salt, for serving

Steps:

  • Heat the grill to high. With a colander set in the sink, lightly sprinkle the eggplant or zucchini with a little salt. Toss well and set aside for 10 minutes.
  • In a large mixing bowl, combine garlic, oregano and red-pepper flakes. Whisk in oil. Pat vegetables dry with a clean kitchen towel or paper towels, and add to the bowl. Gently toss to coat. Let marinate while the grill heats up.
  • Thread vegetables onto metal or pre-soaked bamboo skewers (see Tip), keeping the eggplant and zucchini on separate skewers, if using both vegetables. Reserve any leftover marinade at the bottom of bowl.
  • When the grill is hot, add the skewers. Cook, rotating them carefully every few minutes, until evenly browned and slightly charred in places, about 7 to 12 minutes. Transfer to a serving platter. Brush with remaining marinade and squeeze a lemon wedge all over. Sprinkle with flaky sea salt and serve.

Marinated Zucchini & Tortellini Skewers image

Tender fresh-made cheese tortellini, thin zucchini ribbons, ripe cherry tomatoes, and fragrant basil make these delectable Zucchini & Tortellini Skewers a super easy party appetizer. Make ahead of time, or whip them up day-of for a crowd-pleasing treat.

2 medium zucchinis
1/3 cup your favorite vinaigrette
1 9 oz. package fresh tortellini {found in refrigerated section of grocery store}
16 grape tomatoes (halved*)
Fresh basil leaves

Steps:

  • Cut the ends off of the zucchini, and using mandolin or a sharp knife, thinly slice lengthwise. {I was able to get about 8 slices from 1 zucchini, but this will depend on the thickness.}
  • Cut the longer strips in half, then place them a zip top bag and pour in the vinaigrette. Gently massage the bag to ensure that all the pieces are coated. {You can use store bought, or make your own. I made my own using 1/4 cup olive oil, 1 tablespoon lemon juice, 1/2 teaspoon dried dill weed, 1 minced clove of garlic, and 1/8 teaspoon salt whisked together.} Refrigerate for at least an hour, and up to 3 hours.
  • Meanwhile, make the tortellini according to package directions. {The one I bought took 7 minutes.} Drain and cool slightly, then toss with a few teaspoons of olive oil to coat them -- this will help them not to stick to one another.
  • When you're ready to start skewering, pour the marinade from the bag of zucchini into the bowl with the tortellini and toss gently to coat.
  • To assemble: Skewer a basil leaf, then a piece of zucchini, a piece of tortellini, and then a grape tomato. Repeat one more time or place as many pieces onto the skewer as desired, then end with another basil leaf. Repeat with all 16 skewers.
  • Refrigerate until ready to serve with extra vinaigrette or a balsamic glaze for drizzling.

2 pints cherry tomatoes
½ cup pesto
toothpicks

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini. Cook uncovered, stirring occasionally, until the tortellini float to the top, 5 to 6 minutes. Drain and rinse with cold water.
  • Place tortellini, cherry tomatoes, and pesto in a large bowl; toss until evenly coated.
  • Skewer one tortellini and one tomato on each toothpick. Arrange on a tray. Keep refrigerated until serving.

1 pound zucchini
½ cup vegetable oil
3 tablespoons white vinegar
2 tablespoons honey
1 tablespoon chopped fresh parsley, or to taste
1 tablespoon chopped fresh dill, or to taste
1 tablespoon chopped fresh basil, or to taste
3 cloves garlic, minced, or more to taste
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Slice zucchini with a vegetable peeler and place in a bowl.
  • Mix oil, vinegar, honey, parsley, dill, basil, garlic, salt, and pepper together in another bowl.
  • Cover zucchini with marinade and refrigerate for at least 2 hours. Serve cold.

2 teaspoons red wine vinegar
2 packages spinach tortellini, cooked and cooled
2 pints cherry tomatoes
12 ounces fresh mozzarella, cubed
1/4 cup minced fresh parsley

Steps:

  • Mix together the olive oil, pesto and vinegar in a bowl.
  • On small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube per skewer. Lay the skewers on a platter and lightly drizzle the dressing over them with a spoon.
  • Serve immediately or refrigerate. Sprinkle on the minced parsley just before serving.
