1 (7-ounce) jar or can organic tomato paste
3/4 cup packed dark brown sugar
3 tablespoons spicy Dijon mustard
2 tablespoons BBQ seasoning mix
2 tablespoons Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
4 cups water

Steps:

  • Whisk all the ingredients together in a large saucepan and bring to a boil over medium-high heat. Reduce heat to maintain a simmer and cook, stirring occasionally, until reduced by about half or to desired thickness, about 1 hour.
  • Cool completely before transferring to an airtight container and storing in the refrigerator.
  • Cook's Note: Use the BBQ sauce within 1 week or freeze for up to 6 months.

½ onion, minced
4 cloves garlic, minced
¾ cup bourbon whiskey
½ teaspoon ground black pepper
½ tablespoon salt
2 cups ketchup
¼ cup tomato paste
⅓ cup cider vinegar
2 tablespoons liquid smoke flavoring
¼ cup Worcestershire sauce
½ cup packed brown sugar
⅓ teaspoon hot pepper sauce, or to taste

Steps:

  • In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
  • Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

1 teaspoon red pepper
1/2 teaspoon salt

Steps:

  • Combine all ingredients in a saucepan; cook over medium heat until sugar dissolves, stirring occasionally.
  • Use as basting sauce for pork chops or chicken.
  • Microwave directions: Combine all ingredients in a 1-quart glass bowl.
  • Cover with heavy duty plastic wrap and microwave at HIGH 4 to 5 minutes or until mixture is thoroughly heated, stirring once.

1 tablespoon olive oil
1 tablespoon minced garlic
2 tablespoons small-diced onion
One 6-ounce can tomato paste
4 teaspoons brown sugar
1 tablespoon yellow mustard
1 teaspoon Worcestershire sauce
1/4 cup apple cider vinegar
One 28-ounce can plum tomatoes
1/2 cup beer, such as Heist Brewery Hive Five

Steps:

  • Heat a medium to large saucepot over medium heat. Add the olive oil, garlic and onions and cook until fragrant, about 2 minutes. Add the tomato paste, brown sugar, yellow mustard and Worcestershire; stir together. Stir in the apple cider vinegar and simmer for 1 minute to combine the flavors. Add the canned tomatoes and beer and blend with an immersion blender. Simmer on medium-low heat, stirring occasionally, until the sauce thickens and the flavors have blended, about 45 minutes.

¼ cup grapeseed oil
1 poblano chili
2 serrano peppers, seeds removed
1 large red onion
1 bunch scallions
4 cloves elephant garlic, chopped
1 carrot, chopped
4 chipotle peppers
1 4 ½-oz. tube tomato paste
1 cup habanero ketchup
1 Tbsp. Worcestershire sauce
¼ cup red wine
¼ cup soy sauce
2 shots sake
2 Tbsp. chopped fresh ginger
1 Tbsp. onion powder
1 Tbsp. garlic powder
1 Tbsp. chili powder
1 tsp. cayenne
1 tsp. black pepper
1 tsp. Hungarian paprika
1 Tbsp. poultry seasoning mix
3 Tbsp. molasses
¼ cup dark rum
3 Tbsp. dark brown sugar
¼ cup balsamic vinegar
Hot sauce to taste
¼ cup light olive oil

Steps:

  • Put tomatoes through food mill to remove the seeds. Heat grapeseed oil in a skillet over a small level of heat and add poblano and serrano peppers, red onion, scallions, garlic and carrot. Cook until onions are translucent. Then place the mixture in blender with chipotles and blend to a smooth consistency. In a separate pot, combine tomatoes, tomato paste, habanero ketchup and Worcestershire sauce and bring to boil. Skim the white foam off the top and discard. Add red wine and continue skimming off foam. Then add the pepper mixture from the blender to pot. Stir in soy sauce, sake, chopped ginger, dry spices, molasses, rum and brown sugar. Continue cooking over a small amount of heat; at the end, add balsamic vinegar, a shot of hot sauce and olive oil. Cook for 45 minutes to 1 hour, stirring frequently until desired consistency is reached.
