Steps:
- Whisk all the ingredients together in a large saucepan and bring to a boil over medium-high heat. Reduce heat to maintain a simmer and cook, stirring occasionally, until reduced by about half or to desired thickness, about 1 hour.
- Cool completely before transferring to an airtight container and storing in the refrigerator.
- Cook's Note: Use the BBQ sauce within 1 week or freeze for up to 6 months.

- In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
- Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

- Heat a medium to large saucepot over medium heat. Add the olive oil, garlic and onions and cook until fragrant, about 2 minutes. Add the tomato paste, brown sugar, yellow mustard and Worcestershire; stir together. Stir in the apple cider vinegar and simmer for 1 minute to combine the flavors. Add the canned tomatoes and beer and blend with an immersion blender. Simmer on medium-low heat, stirring occasionally, until the sauce thickens and the flavors have blended, about 45 minutes.

- It's pretty simple. Just mix all ingredients, pour into saucepan and let simmer for about 10-15 minutes. It'll have the house smelling of barbecue brilliance in no time.
MARLBORO FINALIST FIERY BBQ SAUCE
Steps:
- Put tomatoes through food mill to remove the seeds. Heat grapeseed oil in a skillet over a small level of heat and add poblano and serrano peppers, red onion, scallions, garlic and carrot. Cook until onions are translucent. Then place the mixture in blender with chipotles and blend to a smooth consistency. In a separate pot, combine tomatoes, tomato paste, habanero ketchup and Worcestershire sauce and bring to boil. Skim the white foam off the top and discard. Add red wine and continue skimming off foam. Then add the pepper mixture from the blender to pot. Stir in soy sauce, sake, chopped ginger, dry spices, molasses, rum and brown sugar. Continue cooking over a small amount of heat; at the end, add balsamic vinegar, a shot of hot sauce and olive oil. Cook for 45 minutes to 1 hour, stirring frequently until desired consistency is reached.
