This recipe is a tender, lighter variation of the marinated ginger-sake flank steak my mother used to make. It has a wonderful flavor and aroma. - Shawn Solley, Morgantown, West Virginia.

1/4 cup Worcestershire sauce
1/4 cup reduced-sodium soy sauce
3 tablespoons honey
1 tablespoon sesame oil
1 teaspoon Chinese five-spice powder
1 teaspoon minced garlic
1/2 teaspoon minced fresh gingerroot
1 beef flank steak (1-1/2 pounds)
2 tablespoons hoisin sauce, warmed
3 green onions, thinly sliced
1 tablespoon sesame seeds, toasted, optional

Steps:

  • In a shallow dish, combine the first 7 ingredients; add steak and turn to coat. Cover and refrigerate overnight. , Drain and discard marinade. Grill steak, covered, over medium heat for 6-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes., Thinly slice steak across the grain. Drizzle with hoisin sauce; garnish with onions. Sprinkle with sesame seeds if desired.

3 tablespoons soy sauce
3 tablespoons mirin
6 tablespoons water
2 teaspoons sesame oil
1 teaspoon dried chili peppers
2 tablespoons chopped fresh lemongrass
1 tablespoon grated fresh ginger
2 cloves garlic, smashed
2 tablespoons chopped green onion
1 teaspoon sesame seeds
1/2 pound flank steak, cut into 1/2-inch thick slices against the grain
3 tablespoons olive oil, plus 3 tablespoons
2 tablespoons Chinese black bean sauce
1 green pepper, stemmed, cored, and julienned
1 yellow pepper, stemmed, cored, and julienned
1 red pepper, stemmed, cored, and julienned
Crushed garlic, in the skin
I pack dry Chinese curly egg noodles, boiled according to the package directions
1 small bok choy cut into 1/2-inch slices

Steps:

  • Combine the marinade ingredients in a medium sized bowl, and soak the flank steak in the marinade for 1 hour.
  • In a hot wok over the highest heat, add 3 tablespoons of the oil and black bean sauce. Using the Chinese ladle, spread the bean sauce in the wok until nice roasted smell comes out. Add the beef and stir-fry for 2 minutes. Do not over cook! Remove the beef and set aside.
  • To the wok, add the remaining 3 tablespoons oil, the peppers, and the crushed garlic. Add the boiled noodles and the marinade for the beef and cook for 2 minutes. Add the bok choy and cook until wilted. Add the reserved beef and toss until heated through. Serve.

1 (1 1/4 pound) flank steak
¼ cup vegetable oil
¼ cup orange juice
3 tablespoons soy sauce
3 tablespoons honey
3 tablespoons rice wine vinegar
2 tablespoons minced green onions
1 ½ teaspoons grated fresh ginger
1 clove garlic, pressed
½ teaspoon cornstarch
3 tablespoons water

Steps:

  • SCORE steak diagonally across grain at 3/4-inch intervals.
  • COMBINE oil and next 7 ingredients in a shallow dish or heavy-duty zip-top plastic bag; add steak. Cover or seal, and chill 8 hours, turning occasionally.
  • REMOVE steak from marinade, reserving marinade.
  • GRILL steak, covered with grill lid, over high heat (400 to 500 degrees) about 6 minutes on each side or until desired degree of doneness.
  • BRING reserved marinade to a boil in a saucepan, and boil at least 1 minute or until reduced by one-third.
  • STIR together cornstarch and 3 tablespoons water until smooth. Add to marinade; bring to a boil over medium heat, stirring constantly. Boil, stirring constantly, 1 minute; remove from heat. Spoon over steak.

1/4 cup rice-wine vinegar
1/4 cup soy sauce
1 tablespoon minced ginger root
1 tablespoon sesame oil
1 tablespoon brown sugar
1/2 teaspoon red pepper flakes
2 pounds flank steak
3 tablespoons peanut oil
1 shallot, minced
2 small bird chilies, seeded and minced
1 tablespoon lime juice
1 teaspoon sesame oil
3/4 teaspoon kosher salt
3 cups very thinly sliced red cabbage
2 carrots, peeled and cut into fine julienne
2 scallions, thinly sliced
1 cup thinly sliced basil leaves

Steps:

  • To make the steak, whisk together the vinegar, soy sauce, ginger, sesame oil, sugar and pepper flakes. Place the steak in a large plastic bag or in a shallow, nonreactive pan. Pour the marinade over the steak and refrigerate for at least 6 hours and up to 36 hours.
  • To make the slaw, whisk together in a large bowl the peanut oil, shallot, chilies, lime juice, sesame oil and salt. Add the cabbage, carrots and scallions to the bowl. Refrigerate for at least an hour.
  • When ready to cook, prepare a charcoal or gas grill or preheat the broiler. Grill or broil the steak, turning once, until it reaches the desired doneness, about 5 minutes per side for medium rare. Allow to rest 10 minutes. Meanwhile, toss the slaw with the basil and place a mound of slaw on each of 4 plates. Slice the steak thinly on the bias, drape over the slaw and serve.

2 teaspoons cornstarch
3 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons hoisin sauce
1 teaspoon minced gingerroot
1 teaspoon minced garlic
¼ teaspoon salt
¼ teaspoon pepper
1 (14 ounce) package frozen stir fry vegetable blend
1 ½ cups shredded carrots
2 teaspoons sesame oil, divided
1 ½ pounds beef flank steak, cut into thin strips
2 teaspoons sesame seeds, toasted

Steps:

  • In a large bowl, soak noodles in boiling water for 10 minutes. Meanwhile, in a small bowl, combine the cornstarch, soy sauce, vinegar, hoisin sauce, ginger, garlic, salt and pepper until blended; set aside.
  • In a large skillet or wok, stir-fry the vegetable blend and carrots in 1 teaspoon oil for 2-3 minutes or until crisp-tender. Remove and keep warm. In the same pan, stir-fry beef in remaining oil for 3-4 minutes or until no longer pink.
  • Stir soy sauce mixture and add to pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Drain noodles. Stir noodles and vegetables into beef mixture; heat through. Sprinkle with sesame seeds.

  • Preheat broiler. Transfer steak to broiler pan. Drain marinade from dish into medium saucepan; boil 3 minutes. Broil steak until cooked to desired doneness, about 4 minutes per side for medium-rare. Using tongs, transfer steaks to platter; let stand 5 minutes. Cut crosswise into thin slices and serve, passing cooked marinade as sauce.

This recipe appeared in my local newspaper as part of a syndicated column "Fave Foods of the Famous." This recipe is from the Academy-Award-winning deaf actress Marlee Matlin. This is one of my favorite flank steak recipes, and worth the trouble to find Chinkiang Vinegar (try Whole Foods or The Fresh Market, if these stores are in your area).

2 lbs lean flank steak
1/2 cup Chinkiang vinegar (a black rice vinegar)
1/2 cup light soy sauce
1/4 cup Worcestershire sauce
1/2 cup fresh squeezed orange juice
2 minced garlic cloves
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1/2 teaspoon lemon pepper seasoning
1 large onion, sliced

Steps:

  • In a bowl, mix vinegar, soy sauce, worcestershire sauce, orange juice, garlic, salt, pepper, and lemon pepper. (The orange should be the dominant taste, so add juice if needed).
  • Place steak in container and pour marinade over it, then add onions on top. Let sit in refrigerator for at least one hour.
  • Grill to desired level of doneness.
