Chilled Cucumber, Basil, and Mint Soup image

Flecks of herbs, a squeeze of lemon juice, and a dash of hot sauce add zing to the cool cucumber in this no-cook soup.

1 cup sour cream
1/2 cup fresh basil
1/2 cup fresh mint
1/4 cup sliced scallion
1 cup water
1 English cucumber, peeled, seeds removed, and chopped
1 tablespoon fresh lemon juice
1/2 teaspoon hot sauce, such as Tabasco
Salt
Optional: Thin cucumber slices

Steps:

  • Puree sour cream, basil, mint, scallion, and water in a blender. Add cucumber. Pulse until just combined but still slightly chunky.
  • Stir in lemon juice and hot sauce, and season with salt. Chill soup at least 3 hours (soup is best served the same day). Top each serving with thin cucumber slices if desired.

Steps:

  • Roughly chop 1 1/2 cucumbers; dice remaining cucumber half. Place roughly chopped cucumber in a blender with buttermilk and blend until smooth, 1 minute. Season with salt and pepper. Divide soup among four bowls and stir in diced cucumber. To serve, top with cucumber rounds, a drizzle of oil, and more pepper, if desired.

1 1/3 cups low-fat yogurt
1 1/3 cups low-fat milk
2 tablespoons roughly chopped fresh dill
1/2 teaspoon ground coriander
1 teaspoon fresh lemon juice
2 teaspoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh mint

Steps:

  • Process the cucumbers in a food processor until smooth. Add the remaining ingredients and pulse to combine.
  • Chill the soup in the refrigerator until cold, about 1 hour.
  • Divide among 4 chilled soup bowls and garnish with the chopped cucumber.

2 cups homemade or low-sodium canned chicken stock
1 whole skinless and boneless chicken breast
2 tablespoons extra-virgin olive oil
1 onion, finely chopped
1 large garlic clove, minced
1 jalapeno pepper, seeded and minced
2 pounds cucumbers, peeled, seeded, and cut into 1/2-inch pieces
1 13 1/2-ounce can unsweetened coconut milk
1/2 cup lightly packed fresh cilantro leaves, plus more for garnish
1/4 cup freshly squeezed lime juice
Coarse salt and freshly ground pepper

Steps:

  • Bring chicken stock to a boil in a small saucepan. Add chicken; return to a simmer, and reduce heat. Cook, covered, until chicken is cooked through, about 12 minutes. Transfer chicken to a plate, reserving stock, and let cool.
  • Heat olive oil in a medium saute pan over medium heat. Add onion; cook until soft and translucent, about 4 minutes. Add garlic, jalapeno, and cucumbers; cook 1 minute more. Add reserved chicken stock, and bring to a simmer; cook until cucumbers are tender, about 5 minutes. Remove from heat; let cool slightly.
  • Working in batches, transfer cucumber mixture to a blender or food processor, and puree until smooth. Add coconut milk and cilantro to last batch, pureeing until cilantro is very finely chopped. Transfer to a large bowl, and cover with plastic wrap; place in refrigerator until soup is completely cool. Stir in lime juice, and season with salt and pepper.
  • To serve, shred chicken into bite-size pieces. Ladle soup into bowls; top each with chicken, and garnish with cilantro.

1 cup margarine
4 cups confectioners' sugar
1 (14 ounce) can sweetened condensed milk
2 cups shredded coconut
2 cups chopped pecans
2 teaspoons vanilla extract
2 cups semisweet chocolate chips

Steps:

  • Line 2 cookie sheets with wax paper. Set aside.
  • Mix margarine, sugar and sweetened condensed milk in large mixing bowl. Add coconut, pecans, and vanilla; mix well, using a sturdy large spoon. Chill until firm enough to handle.
  • Form into small balls and place on prepared cookie sheets . Chill until very firm.
  • Melt chocolate chips in top pot of double boiler over simmering water. Using a toothpick, dip balls into melted chocolate. Let cool on wax paper.

A great variety of vegetables were grown including artichokes, cucumbers, cauliflower, peppers, asparagus, beets, peas, lettuce, and salad greens. This enabled Mrs. Washington to serve her guests sophisticated soups such as this one.

3 cups cucumbers, sliced thin
4 cups chicken stock
1 slice onion
1 tablespoon butter
1/4 cup flour
1 teaspoon salt
1/2 teaspoon pepper
2 cups milk, hot

Steps:

  • Parboil the cucumber slices for 10 minutes.
  • While doing this, put the chicken stock in a kettle and let it simmer.
  • Drain the cucumber slices and add them to the chicken stock.
  • Add the slice of onion.
  • Cook until the cucumbers and onion are soft.
  • Remove vegetables from the kettle and press through a strainer.
  • Put back into the chicken stock. Now blend the butter and the flour.
  • Add this to the soup to thicken, strirring continuously.
  • Season with the salt and pepper.
  • Lastly, stir in the hot milk.
  • Strain and serve while piping hot.

2 cucumbers (about 675g)
150g Greek yogurt
2 limes, juiced
small handful of tarragon, chopped
3 mint sprigs, leaves picked
small bunch of chives, chopped
rapeseed oil, to serve

Steps:

  • Finely chop a third of one of the cucumbers and set aside for when you're ready to serve later. Roughly chop the remaining cucumbers and tip into a blender or food processor along with the yogurt and lime juice. Add the tarragon, most of the mint leaves and most of the chives. Blitz until the mixture is smooth.
  • Pour the soup into bowls or small cups, scatter over the finely chopped cucumber, remaining mint leaves and the rest of the chives. Drizzle with a little rapeseed oil just before serving.

2 eggs, lightly beaten
1 teaspoon vanilla extract
1 tablespoon unsweetened cocoa powder
2 teaspoons baking powder
1 cup milk
2 cups all-purpose flour
¾ cup golden raisins
1 cup chopped walnuts
2 (9 inch) unbaked pie crusts
1 cup confectioners' sugar
½ teaspoon vanilla extract
4 tablespoons milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • To Make Filling: Mix butter, sugar, eggs, vanilla, cocoa and baking powder together until smooth; alternately mix in the milk and flour. Stir in raisins and walnuts.
  • Pour mixture into pastry shells and bake at 375 degrees F (190 degrees C) for 60 to 70 minutes. Do not underbake.
  • To Make Icing: Combine confectioners' sugar and vanilla. Gradually stir in milk until desired consistency is reached.
  • Spread icing on pie once its out of the oven and still warm.

1 tablespoon extra-virgin olive oil
1/2 cup chopped onion
1 russet potato (9 ounces), peeled and chopped into 1/2-inch pieces
2 medium cucumbers, peeled and coarsely chopped
Coarse salt and freshly ground pepper
1 1/4 cups homemade or store-bought low-sodium chicken stock
3/4 cup low-fat buttermilk
3 tablespoons chopped fresh dill
4 cucumber spears, for garnish

Steps:

  • Heat oil in a medium saucepan over medium heat. Cook onion until soft, about 3 minutes. Add potato; cook, stirring occasionally, until almost tender, about 3 minutes. Add cucumbers, and season with pepper; cook until almost tender, about 5 minutes.
  • Add stock, cover, and bring to a boil. Reduce heat; simmer until ingredients are tender, about 12 minutes. Let cool slightly.
  • Working in batches, puree mixture in a blender until smooth. (For safety, remove cap from hole in lid, and cover with a dish towel to prevent spattering.) Transfer mixture to a large bowl; stir in buttermilk, dill, and 3/4 teaspoon salt. Refrigerate until chilled, about 2 hours. Divide soup among 4 glasses, and garnish each with a cucumber spear.

  • Add crabmeat to milk mixture, simmer 5 minutes.
