AWARD WINNING OLD FASHIONED FUDGE RECIPE

Steps:
- Add butter, sugar and evaporated milk in heavy bottom good quality saucepan. I use my 6 quart Le Creuset Dutch Oven.
- Turn heat on high. Start stirring and continually stir while the mixture comes to a rolling boil.
- Continue stirring constantly for about 5 minutes or until it gets to a "soft ball" stage. Your candy thermometer should read between 234 - 240 degrees. If you don't have a candy thermometer, after 5 minutes drop a small dollop of the sugar mixture into a glass of cold water. If it forms a soft ball "clump" the sugar mixture is hot enough. If the ball doesn't form, cook for another minute or so.
- Remove from the pan from the heat; stir in the chocolate chips, and marshmallow creme. After a few stirs, add the vanilla. Mix until well blended then add nuts and stir to combine.
- Pour into a buttered 9 x 13 inch pan.
- Let the fudge completely cool at room temperature before cutting into squares.

MAMA'S MARSHMALLOW CREAM FUDGE
My mama made this every year at Christmas.

Steps:
- 1. In a medium saucepan, combine marshmallow cream, sugar, evaporated milk, butter and salt.
- 2. Over medium heat, bring to a boil stirring constantly. Boil 5 minutes, stirring constantly.
- 3. Remove from heat. Add chocolate chips.
- 4. Stir until chips melt and mixture is smooth.
- 5. Stir in nuts and vanilla.
- 6. Pour into aluminum foil lined 8 x 8 inch baking pan. Chill until firm (about 22 hours).
- 7. ***You can substitute another type of nut if you like.

- Line an 8-in. square pan with foil; grease foil with 1 teaspoon butter., Cube remaining butter. In a large saucepan, combine cubed butter, brown sugar and milk. Bring to a full boil over medium heat, stirring constantly. Cook 10 minutes, stirring frequently. Remove from heat., Stir in maple flavoring, vanilla and salt. Add confectioners' sugar; beat on medium speed 2 minutes or until smooth. Immediately spread into prepared pan. Cool completely., Using foil, lift fudge out of pan. Remove foil; cut into 1-in. squares. Store in an airtight container.

THE ORIGINAL FANTASY FUDGE
This recipe used to be found on the back of a well known brand of marshmallow cream. Many were surprised when it was changed. This is the original! You may find that most packages of chocolate chips are 10 ounces now; 12 ounces of chocolate chips is roughly 2 cups.

- Combine 1 1/2 cups sugar, 2/3 cup evaporated milk, 1/4 cup margarine and 1/4 teaspoon salt. Bring to a FULL BOIL over medium high heat stirring constantly. Boil 5 minutes, stirring constantly.
- Remove from heat and add Nestle's morsels and 1 teaspoon vanilla stir until melted, add 1 jar marshmallow cream, . Stir in 1/2 cup chopped nuts. Pour into greased 9" pan. Chill until firm.

- Grease a 13x9-in. pan with 1-1/2 teaspoons butter; set aside., In a large heavy saucepan, combine the sugar, cream and remaining butter. Cook and stir over low heat until sugar is dissolved. Bring to a boil; cook and stir for 4 minutes. Remove from the heat; stir in chips and marshmallow creme until smooth., Remove 1 cup and set aside. Add orange extract and food coloring to the remaining mixture; stir until blended. Pour into prepared pan.
