This Spicy Sausage & Cabbage Soup is light on calories but big on flavor. It will heat you from the inside out on a chilly evening.

2 tbsp olive or avocado oil
1 lb beef sausage (Cut into half-circles. Chicken or Pork would also work.)
2 medium white or yellow onions (finely diced)
4 ribs celery (chopped)
2 green bell peppers (finely diced)
1 head of cabbage (chopped)
56 oz cans of diced tomatoes (two 28 oz cans)
32 oz chicken stock
1 1/4 tbsp cajun or creole seasoning
salt & pepper to taste
4 green onions (thinly sliced)
1/2 cup fresh cilantro (chopped)

Steps:

  • Heat oil over medium heat in a large pot. Add sausage, onion, and celery. Sauté for approximately 5 minutes, stirring frequently.
  • Add bell pepper, stir, and sauté for an additional 3 minutes.
  • Add cabbage, diced tomatoes, chicken stock, and Cajun seasoning (I like Tony Chachere's Original Creole Seasoning). If your sausage is already spicy start with less Cajun seasoning and taste before adding more.
  • Stir. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  • Salt and pepper to taste.
  • Stir in green onion and cilantro a few minutes before you're ready to serve.

This soup was served in my college student union and was a hit with starving college students as it's big on flavor while using only frugal ingredients. I was never able to wheedle the recipe from the cooks, but this is a very close clone of it. It's a super diet recipe as it has a spicy kick that other cabbage soup recipes don't. I think diets fail more from lack of flavor than from hunger pangs! Also, it's the first soup I think of at the first sign of a cold as this one warms you from the inside out. With a toasted cheese sandwich and a hot cup of tea with honey, it's better than penicillin!

1 small green cabbage, coarsely chopped
1 medium sweet onion, chopped
1/2 lb fresh carrot, peeled and diced
2 (15 ounce) cans diced tomatoes with juice
1 teaspoon salt (or salt substitute)
1 teaspoon black pepper
2 tablespoons light olive oil (optional)

Steps:

  • Chop veggies and add to a large soup pot along with tomatoes and juice.
  • Add salt or salt substitute, pepper, and oil if desired.
  • Add enough water to cover the veggies by an inch or two.
  • Bring to a slow boil, then reduce heat to simmer and cook for an hour or until cabbage is very soft and translucent.
  • Adjust pepper to desired level of heat. You want a nice "bite" to this.
  • Serve in warmed bowls with homeade wheat bread and butter. Great for the sinuses and immune system!

I was given this recipe by a "Cookie" on a hunting trip. People try to add stuff to this, but you can't argue with the Cookie, keep it simple (at least for the first time so you will see what I mean)

2 links Jimmy Dean sausage
3 (10 1/4 ounce) cans tomato soup
3 (10 1/4 ounce) cans water
1 head cabbage
Pickapeppa Sauce

Steps:

  • On top of stove -- In a large soup pan crumble and brown sausage - drain.
  • Add to sausage, soup with water.
  • Cut up cabbage and add.
  • Bring to boil, then reduce heat & simmer.
  • Add "PickaPeppa" sauce to your taste (spicy). Bottle has a picture of a parrot on the front and usually found around the steak sauces at the store.

1 tablespoon butter
1 tablespoon olive oil
1 lb Italian sausage, casings removed and chopped into bite size pieces
1/2 head cabbage, shredded
1 onion, sliced thin
red pepper flakes, to taste
1 teaspoon salt
1 teaspoon pepper
1 teaspoon sage
1 tablespoon sugar
1 tablespoon Worcestershire sauce
2 teaspoons garlic, minced
1 (28 ounce) can diced tomatoes, undrained
6 cups water
2 -3 tablespoons chicken bouillon granules
1/2 cup instant rice

Steps:

  • In a large pot, saute cabbage and onion in butter and olive oil on HIGH heat until onions start to soften.
  • Add remaining ingredients EXCEPT rice and bring to a boil.
  • Once boiling, reduce heat and cover. Simmer until sausage is done and cabbage is tender.
  • Add rice and return heat to HIGH. Simmer uncovered until rice is cooked.

1 lb Polish sausage, smoked, halved length-wise and chopped 3/4 inch
3 teaspoons extra virgin olive oil
6 cups chicken broth
2 cups water
1 head green cabbage, chopped
3 carrots, peeled and coarsely chopped
1 white onion, coarsely chopped
2 -3 garlic cloves, peeled
2 teaspoons caraway seeds
1 1/2 teaspoons italian seasoning
1 teaspoon celery salt

Steps:

  • Heat skillet with olive oil over medium heat. Add chopped sausage and sautee until heated through.
  • Add sausage, cabbage, carrots, garlic, onion, caraway seeds, italian seasoning, celery salt, broth, and water to crock pot. Cook on high for two hours, stirring occasionally.
  • Add remaining seasonings to crock pot, stir well. Continue cooking on high for three more hours until carrots are soft and all cabbage is cooked throughout. Enjoy!

Do not use dark ale or stout....it will be too bitter...only use a light wheat beer. To make this easier, buy a bag of shredded cabbage and carrots to equal the correct amounts. Adapted from Sunset.

12 ounces linguica sausage, sliced 1/4 inch thick
1 onion, peeled and chopped (6 oz.)
1 large garlic clove, peeled and minced
5 cups chicken broth, fat-skimmed
1 (12 ounce) bottle wheat beer (hefeweizen)
1 lb small red potato, scrubbed and quartered (1 1/2-inch wide)
1 1/2 quarts cabbage, finely shredded (8 to 12 oz)
1 cup carrot, sliced 1/4 in. thick
1 teaspoon coriander seed
1/2 teaspoon whole allspice
1/2 teaspoon peppercorn
2 tablespoons parsley, chopped
whole grain mustard

Steps:

  • In a 5- to 6-quart pan over medium-high heat, stir sausage often until lightly browned, 6 to 8 minutes. Spoon out and discard all but 1 tablespoon fat from pan.
  • Add onion and garlic to pan; stir often until limp, 3 minutes.
  • Increase heat to high. Add broth, beer, potatoes, cabbage, and carrots. Wrap and tie coriander, allspice, and peppercorns in cheesecloth; add to the pot. Cover and bring to a boil; reduce heat and simmer until potatoes are tender to bite, 10 to 15 minutes. Discard wrapped spices.
  • Stir in parsley. Ladle soup into bowls. Serve mustard alongside to add to taste.

1/2 lb smoked kielbasa or 1/2 lb Polish sausage, halved and cut into 1/4-inch slices
1 (14 1/2 ounce) can diced tomatoes, undrained
1 tablespoon brown sugar
1 (15 ounce) can white kidney beans, rinsed and drained
1 tablespoon white vinegar
1 teaspoon salt
1/4 teaspoon pepper
fresh parsley, Minced

Steps:

  • In a 3-qt. saucepan, saute onion in oil and butter until tender.
  • Add carrots and celery; saute for 3 minutes. Add caraway; cook and stir 1 minute longer. Add water, cabbage, sausage, tomatoes and brown sugar; bring to a boil.
  • Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender.
  • Add beans, vinegar, salt and pepper.
  • Simmer, uncovered, for 5-10 minutes or until heated through.
  • Sprinkle with parsley.
  • Yield: 6 servings.
