A very good sugar cookie with a hint of almond flavor.

1 cup butter, softened
1 ½ cups sifted confectioners' sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon almond extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
¼ cup granulated sugar for decoration

Steps:

  • In a large bowl, cream together the butter and confectioners' sugar until smooth. Beat in the egg and stir in the vanilla and almond extract. Combine the flour, baking soda and cream of tartar; blend into the creamed mixture. Cover and chill for at least two hours.
  • Preheat the oven to 375 degrees F (190 degrees C). Divide the dough into two parts. On a lightly floured surface, roll each piece of the dough out to 3/16 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto greased cookie sheets. Sprinkle cookies with plain or colored granulated sugar.
  • Bake for 8 minutes in the preheated oven, until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 cup unsalted butter, softened (1 stick)
4 cups powdered sugar (454g)
1 teaspoon vanilla
4 tablespoons milk (or more, enough to make it spreadable)
Optional garnish - sprinkles

Steps:

  • Mix sugar and butter. Add egg and flavorings; mix thoroughly. Measure flour. Stir dry ingredients together and blend in. Refrigerate for 2 hours.
  • Heat oven to 350°F. Divide dough in half and roll 3/16" thick on lightly floured surface. (I roll it between two sheets of parchment.) Cut with cookie cutter. Place on lightly greased baking sheet or, if using parchment paper to roll out cookies, just place the parchment paper with cut cookies right onto a cookie sheet. 1/2 cup shortening
3/4 teaspoon salt
1 teaspoon vanilla
1 cup sugar
1 egg, beaten
3 cups flour, sifted
3 teaspoons baking powder

Steps:

  • Cream shortening, sugar and beaten egg.
  • Mix in dry ingredients, then alternate mixing in with milk.
  • Chill dough overnight or as long as it takes to make the dough easy to handle.
  • Roll and cut into circles, one for the top and one for the bottom.
  • Place the bottom circle on the greased cookie sheet, add one+ teaspoon jam/jelly in the center. With a moistened finger, wet the outside edge of the bottom circle, place the top circle over the bottom and seal the edges by pressing down. (You can do this with a fork if you prefer, like the edge of a pie crust).
  • You can also put the jam on one side and flip the top over to make a half moon.
  • Bake @ 350 degrees for 12-15 minutes or until the bottom edge is starting to brown.

During our most recent testing of this recipe, we also noticed that there were no instructions for a glaze in this recipe. Not wanting to leave you-or your cookies-high and dry, we tested a few glazes. The one we landed on is simple and made with common pantry staples, but the magic is in the ratio of ingredients-we ensured that it results in a glaze that's easily tintable, covers smoothly and dries firmly so that you can stack the finished cookies without fear of smudging them. However you chose to decorate them, dress these classic sugar cookies up in holiday style and they'll be the star of every Christmas gathering.

  • Heat oven to 375°F.
  • Roll each disk on lightly floured surface until 1/4 inch thick. Cut with 2- to 2 1/2-inch cookie cutters into desired shapes. On ungreased cookie sheets, place cutouts at least 2 inches apart.
  • Bake 7 to 8 minutes or until edges are light brown. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely.
  • In medium bowl, beat 3 cups powdered sugar, 3 tablespoons milk and 1/4 teaspoon vanilla with spoon until smooth and spreadable. If frosting is too stiff to spread, add additional milk, 1 teaspoon at a time. Tint with food color. Spread frosting on cooled cookies. Decorate as desired with colored sugar or candy sprinkles. Let stand about 4 hours or until frosting is set. Store covered in airtight container at room temperature with waxed paper between layers.

Steps:

  • In a large bowl whisk together the flour, baking soda, baking powder and salt; set aside.
  • In a bowl, beat together butter and sugar together at medium speed until light and fluffy. Add the eggs, one at a time, beating until each is mixed in well.
  • Add the vanilla and sour cream and beat at low speed until combined.
  • Add the dry ingredients and beat at low speed until just combined. Dough is supposed to be a little sticky. Chill in the refrigerator for two hours or more.
  • Preheat the oven to 425 degrees F. Line large baking sheets with parchment paper or Silpats; set aside.
  • Lightly flour the work surface and top of the dough. With a rolling pin, roll the dough out to 1/4 inch thickness.
  • Using cookie cutters, cut out the cookies and place on prepared baking sheets. Bake for 7 minutes, until cookies are slightly golden around the edges. Immediately transfer cookies to a wire rack to cool. Cook cookies completely before frosting.
  • To make the frosting, cream together the butter and vanilla. Slowly beat in powdered sugar and the pinch of salt. Once smooth and creamy, add in heavy cream, then beat at medium-high speed for a minute or two until light and fluffy. Add food coloring, if desired, and beat until combined.
  • Once cookies have cooled, frost and eat!
