This is a wonderful, cheese-enhanced squash casserole that my husband makes from memory of his mother's recipe.

8 yellow summer squash, thinly sliced
1 small yellow onion, thinly sliced
1 egg, lightly beaten
1 cup low-fat sour cream
1 sleeve buttery round crackers (such as Ritz®), crushed, divided
2 cups shredded sharp Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart casserole dish.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add squash and onion, cover, and steam until squash is tender and easily mashed with a fork, 10 to 15 minutes.
  • Whisk egg and sour cream together in the prepared casserole dish; add squash, onions, 2/3 the crackers, and 2/3 the Cheddar cheese. Stir with a fork. Cover the squash mixture with remaining Cheddar cheese and crackers.
  • Bake in the preheated oven until cheese is melted and crackers are lightly browned, about 30 minutes.

Yellow squash is easily overlooked (cauliflower gets all the attention), but with the addition of cheese and a buttery cracker topping, you can transform it into a summer casserole perfect for a barbecue or potluck.

8 tablespoons (1 stick) unsalted butter
4 medium yellow squash, cut into 1/2-inch-thick rounds (about 2 1/2 pounds)
Kosher salt and freshly ground black pepper
1 green bell pepper, diced
Half medium onion, diced
2 cloves garlic, minced
1/2 cup sour cream
4 large eggs
8 ounces shredded Cheddar (about 2 cups)
1/2 teaspoon thyme leaves (from 10 sprigs)
4 sprigs fresh chives, chopped
1 sleeve buttery crackers, such as Ritz (about 30 crackers), crushed
1/2 teaspoon hot sauce

Steps:

  • Preheat the oven to 400 degrees F. Put a large colander inside a large bowl.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Add a third of the squash to the skillet, arrange in a single layer and sprinkle with 1/2 teaspoon salt and a few grinds of pepper. Cook, tossing occasionally, until the squash begins to soften and are golden brown spots, about 5 minutes. Transfer to the colander. Repeat 2 more times using 2 tablespoons of butter for each batch and sprinkling with 1/2 teaspoon salt and few grinds of pepper. Transfer each batch to the colander.
  • Add 1 tablespoon butter to the skillet along with the pepper and onion and cook, stirring occasionally scraping up any brown bits, until the vegetables are soft, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Let cool for 5 minutes then fold into the squash. Transfer the mixture to a 2-quart casserole dish.
  • Whisk together the sour cream, eggs, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Fold in the Cheddar, thyme and chives. Pour over the squash making sure that some of the mixture sinks down to the bottom.
  • Microwave the remaining tablespoon of butter in a medium bowl until melted. Fold in the crackers and hot sauce. Sprinkle evenly over the squash. Bake until the eggs are cooked through and the crackers are golden brown, 30 to 35 minutes. Let sit for 10 minutes before serving.

Her mother thought Ms. Reed spent too much time thinking about complicated, over-the-top recipes at the expense of simple, honest American cooking that draws compliments not because it looks amazing, but because it's delicious. 1 large onion, chopped
1 large clove garlic, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1 jalapeño, seeded and chopped (optional)
4 slices plain white bread, toasted
24 Ritz crackers, crushed finely in food processor
1/2 pound sharp Cheddar, grated
4 large eggs, beaten
1/2 cup heavy cream
1 teaspoon granulated sugar
1 teaspoon kosher salt
1/4 teaspoon ground cayenne

Steps:

  • Heat the oven to 350 degrees. Butter a 2 1/2-quart baking dish. Cut the squash into 1/2-inch-thick slices. Cook in boiling, salted water until tender, about 10 minutes. Drain. Purée in a food processor.
  • Melt 6 tablespoons of the butter over medium heat. Add the onion, garlic and peppers and cook until just tender. Meanwhile, crumb the toast in a food processor, melt remaining butter and toss together.
  • Mix the squash purée, onions, peppers, garlic, cracker crumbs and cheese. Stir in the eggs, cream, sugar and seasonings. Blend well. Pour into the baking dish. Top with bread crumbs and bake until browned, about 40 minutes.

2 pounds yellow squash or zucchini (older larger squash may be used here), cleaned and cut into 1/2-inch rounds
1 yellow onion, peeled and cut into large dice
1 1/2 tablespoons salt
1 1/2 cups fresh breadcrumbs
3 large eggs, lightly beaten
1 cup heavy cream
1 teaspoon fresh thyme, leaves
1 cup shredded sharp cheddar cheese
1 teaspoon freshly ground black pepper
Pinch cayenne, pepper

Steps:

  • Preheat the oven to 350 degrees. Place squash and onion in a medium saucepan, and cover with water. Add 1 tablespoon salt, and bring to a boil. Reduce heat, and simmer until tender, about 20 minutes. Drain well, and transfer to a large bowl.
  • Add 1 cup breadcrumbs, eggs, cream, thyme, 1/2 cup cheese, black pepper, cayenne pepper, and remaining teaspoon salt. Gently stir to combine. Pour into a 2-quart shallow baking dish. Spread remaining 1/2 cup cheese and remaining 1/2 cup breadcrumbs over top. Cover, and bake until set, about 30 minutes. Uncover, and continue baking until top is browned, about 10 minutes more.

18 cups sliced zucchini or yellow summer squash (about 6 pounds)
6 medium carrots, shredded
3 medium onions, chopped
1-1/2 cups butter, divided
3 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
3 cups sour cream
3 packages (8 ounces each) crushed stuffing mix

Steps:

  • In a Dutch oven, saute squash, carrots and onions in 6 tablespoons butter until tender; remove from the heat. Stir in soup and sour cream. Melt the remaining butter; add to stuffing mix. Gently stir into the squash mixture. , Transfer to two greased 13-in. x 9-in. baking dishes. Bake, uncovered, at 350° for 35-40 minutes or until stuffing is heated through.

1/2 teaspoon salt (divided)
1 egg
1/4 cup mayonnaise (full fat only)
2 teaspoons sugar
pepper
1/4 cup cheddar cheese
2 tablespoons crushed corn flakes
1 1/2 teaspoons butter

Steps:

  • In a small saucepan, combine squash, onion and 1/4 tsp salt.
  • Cover with water and bring to a boil. Reduce heat, simmer uncovered for 2 minutes or until squash is crisp tender. Drain.
  • In a bowl, beat egg, mayonnaise, sugar, pepper and remaining salt until blended.
  • Stir in cheese and squash mixture.

I defy you to find a covered dish supper in the South that doesn't include at least one of these golden-brown, gratinlike squash casseroles. Unassuming as it may appear, this cheesy, egg-puffed dish is possessed of a mild, sweet squash flavor and wonderfully creamy texture that wins the hearts of even the pickiest eaters.

Yield serves 8 to 10

Number Of Ingredients 10

4 slices thick-cut bacon
2 tablespoons unsalted butter
3 pounds yellow summer squash, chopped
1 onion, chopped
1 cup your favorite or Homemade Mayonnaise (page 280)
1 cup (3 ounces) freshly grated Parmesan cheese
3 large eggs
3/4 cup fresh bread crumbs or cornbread crumbs (see Know-how, page 134)
6 fresh basil leaves, thinly sliced
Sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350°F. Lightly grease a 2-quart casserole dish.
  • Fry the bacon in a large skillet over medium heat until crispy. Remove from the skillet and place on a paper towel to drain. Add the butter to the same skillet and melt over medium heat. Add the squash and onion and cook and stir for about 10 minutes, until soft and lightly brown. Remove from the heat and let cool slightly.
  • Combine the mayonnaise, Parmesan cheese, eggs, and 1/2 cup of the bread crumbs in a large bowl and whisk to combine. Add the squash mixture and basil, season with salt and pepper to taste, and stir to mix.
  • Spoon the casserole mixture into the prepared dish, sprinkle with the remaining 1/4 cup bread crumbs, and crumble the reserved bacon on top. Bake for about 40 minutes, until bubbling around the edges, puffy, and slightly soft in the center. Remove from the oven and let sit for about 5 minutes before serving warm.
  • This creamy, comforting squash casserole is the vegetable equivalent of mac and cheese, and it's great with all the same things, like Beer-Barbecued Brisket (page 194), Crispy Pork Chops (page 162), and Granny Foster's Sunday Fried Chicken (page 127).

This is another variation on my "easy casserole" but is a little more involved. It's worth the effort, though, it you like squash. I personally prefer to prepare the squash the day before since it is the lengthiest process.

2 -3 small yellow squash
2 -3 small zucchini, squashes
1 vidalia onions or 1 sweet onion
1 carrot
1 (10 1/2 ounce) can cream of mushroom soup, condensed
1/2 lb of grated white cheddar cheese
1 egg
8 ounces sleeve Ritz cracker crumbs

Steps:

  • Start by preparing the squash.
  • Slice the squash into thin circles and cut the onion into strips.
  • Sauté the squash and onions together in butter and set them on paper towels to help absorb the oil and water. You don't want your squash too soggy or you'll get a watery casserole.
  • Preheat the oven to 350°F.
  • "Slice" a carrot in to thin strips using a vegetable peeler.
  • Combine the squash, onions, carrots, white cheddar, condensed soup, egg, and a handful of cracker crumbs in a large mixing bowl and mix.
  • Place the mixture in a 9X13 casserole dish and bake at 350°F for 30-45 minutes.
  • Remove from the oven and top with remaining cracker crumbs.
  • Bake an additional 5 minutes or until the crackers brown slightly.
