2 large sweet potatoes, peeled and cubed
½ cup honey
¼ cup olive oil
2 tablespoons ground cinnamon
1 tablespoon honey, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Toss sweet potatoes, 1/2 cup honey, and olive oil together in a bowl until potatoes are completely coated. Spread potatoes out on a baking sheet and drizzle any remaining olive oil mixture over the top.
  • Bake in the preheated oven until tender, 25 to 30 minutes. Cool on the baking sheet, 5 to 10 minutes; dust potatoes with cinnamon. Transfer sweet potatoes to plates and drizzle with remaining honey.

2 pounds red-skinned sweet potatoes
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon fresh lemon juice
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • Peel and cut the sweet potatoes into 1-inch pieces and put in a 9 by 13 baking dish. In a small bowl whisk together olive oil, honey and lemon juice. Pour mixture over potatoes and toss to coat. Sprinkle with the salt, and bake, stirring occasionally, for about 1 hour, until potatoes are tender.

2 tablespoons unsalted butter
2 tablespoons dark amber maple syrup, grade A or B
1/2 teaspoon grated orange zest
1/2 teaspoon balsamic vinegar
3/4 teaspoon kosher salt, plus more as needed
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Bake in a roasting pan for 45 to 60 minutes, until tender. Cut the potatoes in half, lengthwise. Hold the sweet potatoes with a potholder or towel and scoop out the potato flesh into a food mill or ricer.
  • In a medium saucepan, heat the butter, syrup, zest, and vinegar over medium heat. Remove from the heat and mash the sweet potatoes in the pan. Stir to combine evenly. Season to taste with salt and pepper. Serve immediately.

6 sweet potatoes
8 tablespoons butter, diced
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1 cup honey
salt and pepper, to taste

Steps:

  • Preheat the oven to 350.
  • Peel and quarter the sweet potatoes and place them in a roasting pan.
  • Place the diced butter evenly on top of the potatoes, sprinkle the cinnamon and nutmeg on top, drizzle with the honey, and season them with salt and pepper.
  • Gently pour about 2 cups of water into the pan (without washing anything off the potatoes).
  • Cover and bake for 1 1/2 hours, or until the potatoes are very tender.
  • (You could cook at 400 for about 60 minutes too, depending on your time available).
  • Remove the cover, stir and cook for 30 minutes more.
  • The potatoes should have a dark brown color on top and be very tender.
  • Remove the potatoes and place in a mixer, or mash by hand.
  • Adjust seasoning to your taste- add more cinnamon, honey etc.

  • Also, you can choose the desired lumpiness.
  • I like them rather lumpy, but some like them smooth, like whipped topping.
