Steps:

  • Pierce each sweet potato twice with fork so excess steam can escape while cooking.
  • Microwave on HIGH 5 to 10 minutes or until tender, turning over halfway through cooking.
  • Let stand 5 minutes or until cool enough to handle.
  • Remove skin from the sweet potatoes.
  • Place sweet potatoes and remaining ingredients in large bowl.
  • Mash until smooth and well blended.
  • Serve immediately.

2 lbs yams (or sweet potatoes) sliced into ½ inch thick disks, skin on
water
2 tablespoons coconut oil, butter, ghee, or olive oil
1 shallot, finely diced
2 teaspoons fresh ginger, grated or paste
2 garlic cloves, minced
1 teaspoon salt
pepper to taste

Steps:

  • Slice sweet potatoes into disks and place them in a pot, cover with water, bring to a boil, cover with lid and simmer 12-15 minutes.
  • When the sweet potatoes are fork tender, drain, saving the water. In the same pot, heat olive oil, butter or coconut oil over medium heat and add shallots, ginger and garlic, stirring until fragrant and golden about 2-3 minutes.
  • At this point, you could add the sweet potatoes back into the pot and mash ( using a potato masher) adding some of the reserved sweet potato water to loosen it, or place it all in a food processor to whip until silky smooth.
  • I usually add about ½ cup liquid for a looser, almost saucy consistency. Season with the salt, pepper.
  • Top with maple pecans for a crunchy texture.

3 pounds sweet potatoes
6 tablespoons unsalted butter
2 tablespoons plus 2 teaspoons ginger pulp, (freshly grated (see notes))
2 teaspoons brown sugar
½ teaspoon ground cinnamon
6 tablespoons heavy cream
salt and freshly ground black pepper to taste

Steps:

  • Peel the sweet potatoes, and then cut them into bite-sized pieces, about 2-inch cubes.
  • Put a large steamer into a large pot with the water level just below it. Over high heat, bring the water to a boil and then add sweet potatoes to the rack. Turn the heat to low, cover, and steam until the sweet potatoes are very tender, about 15 minutes. (You can stick a fork into one of the pieces to see how tender they are -- it should easily slide right out when they're done.)
  • Add the sweet potatoes -- along with the butter, ginger, brown sugar, and cinnamon -- to a large mixing bowl and use a very large fork or potato masher to mash them. They can be as smooth or as chunky as you'd like -- mine are mostly smooth with a few chunks. (This must be done while they're still hot, so that the butter melts in nicely.)
  • Now mix in the cream and season to taste with salt and pepper. (Here's How.)

2 tablespoons white sugar
2 teaspoons cornstarch
½ teaspoon salt

½ cup orange juice

  • Pierce skin of sweet potatoes in several spots with a fork.
  • Cook sweet potatoes in microwave oven until just tender, 12 to 15 minutes. Refrigerate sweet potatoes until cooled completely, at least 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Prepare a shallow 1 1/2-quart baking dish with cooking spray.
  • Peel sweet potatoes and cut into cubes; spread into prepared baking dish.

I saw this recipe posted in a local newspaper for the upcoming Thanksgiving. I haven't made this yet, but wanted to post it for others who are looking for a nice side dish for the holidays. Prep time includes the time needed to bake the potatoes.

10 large sweet potatoes (approx. 5 lbs)
3/4 cup butter
1/3 cup dark brown sugar (packed)
1/4 cup honey
1/4 cup orange marmalade
2 tablespoons candied ginger (minced)
1 1/2 teaspoons salt
1 teaspoon black pepper
1/4 cup dark rum (optional)

Steps:

  • Preheat oven to 375F.
  • Bake potatoes on a cookie sheet until soft (approx. 1.5 hrs).
  • When cool enough to handle, peel and chunk potatoes into a large bowl.
  • Add butter and other ingredients and toss to mix.
  • Mash potatoes thoroughly or puree in a blender. A hand mixer works well also.
  • Lower oven temperature to 350F.
  • Turn mashed potatoes into a casserole dish and dot the top with a bit of additional butter.
  • Bake 30-40 minutes until hot.
  • NOTE: This can be made ahead of time. Bring the mashed potato mixture to room temperature before dotting with butter and baking until hot.

Mashed Sweet Potatoes With Roasted Garlic image

There's no reason we can't treat sweet potatoes like regular potatoes, meaning mashing them with butter, cream and lots of salt. Roasting sweet potatoes in the oven - individually wrapped in foil to help them steam - is not just a hands-off way to cook them by avoiding large pots of boiling water, it also concentrates their flavor. Roasted garlic is an easy addition here; since the potatoes already need an hour's worth of oven time, the garlic can cook alongside. The mellowed, caramelized garlic cloves are then smashed into the silky spuds, creating a minimalist yet rich and savory side dish. Make this the night before and reheat it in a buttered casserole dish in the oven - or even in the microwave - with a couple of extra pats of butter on top, right before eating.

1 large head of garlic
1 tablespoon extra-virgin olive oil
Salt and black pepper
2 pounds sweet potatoes (see Tip)
1/2 cup heavy cream
4 tablespoons unsalted butter

Steps:

  • Heat oven to 350 degrees. Turn the garlic head on its side and carefully cut off the very top end to expose the cloves. (Discard the top.) Place the head of garlic on a sheet of foil, cut side up, and drizzle with the oil and season with salt and pepper. Wrap tightly and place on a sheet pan. Wrap each sweet potato individually in foil and place on the pan alongside the garlic.
  • Bake until the sweet potatoes are tender and the garlic is soft, fragrant and slightly caramelized, about 1 hour. Set aside, still wrapped, to cool slightly.
  • Meanwhile, heat the cream and butter in the microwave in 30-second intervals, checking after each, until the butter is melted, about 1 minute. (Alternatively, you can heat the cream and butter in a small saucepan over medium until the butter is melted.)
  • Unwrap the sweet potatoes and peel them, discarding the skin and adding the flesh to a large bowl. Squeeze the garlic head, cut side down, into the bowl to release the roasted cloves. Pour in the hot cream and butter. Using a whisk or fork, break up the potatoes and garlic and vigorously stir until smooth and fluffy, at least 30 seconds. Taste for seasoning, adjusting with salt and pepper as needed. Transfer to a serving bowl and serve warm. (To make ahead, transfer to a buttered casserole dish or cake pan, cover and refrigerate for up to 24 hours, until ready to eat. Bake in a 350-degree oven or microwave until heated through, about 15 minutes. On Thanksgiving, you should reheat this when the turkey is out of the oven and resting.)
