- Clean potatoes and cut into 1-inch sized pieces. Cook in covered pot over medium heat in broth until very tender, about 30-40 minutes. Alternatively, cook on high pressure in electric pressure cooker for 12 minutes.
- Add cream cheese, butter, roasted garlic, herbs, salt and pepper to cooked potatoes and mash together until well blended. Add additional salt and pepper, if needed.

- Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
- Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
- Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
- Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
- Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
- Preheat oven to 425°F (220°C).
- Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
- Transfer to oven and roast, without moving, for 30-35 minutes.
- Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
- Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.

- Place potatoes in 4-quart saucepan; add enough water to cover potatoes. Add 1 teaspoon salt. Heat to boiling; reduce heat. Simmer uncovered 20 to 30 minutes or until tender; drain. Mash with potato masher or electric mixer on low speed.
- While potatoes are cooking, melt butter in 1-quart saucepan over medium-low heat. Cook garlic in butter 3 to 4 minutes, stirring frequently and being careful not to brown butter, until garlic is very soft. Stir in milk and herbs. Cook until thoroughly heated.

- Preheat oven to 350 degrees F (175 degrees C).
- Drizzle garlic with olive oil, then wrap in aluminum foil. Bake in preheated oven for 1 hour.
- Bring a large pot of salted water to a boil. Add potatoes, and cook until tender, about 15 minutes. Drain, cool and chop. Stir in butter, milk, salt and pepper.

- Bring milk with parsley and chives to a simmer in a saucepan, then remove from heat. Let stand, covered, 20 minutes.

MASHED POTATOES WITH ROASTED GARLIC AND HERBS

- 1. Separate the garlic cloves from the bulbs, leaving the clove wrappers intact. Place in a small oven-proof dish, drizzle with the oil, and toss to coat. Cover with aluminum foil and bake in a preheated 350°F oven for about 30 minutes, or until soft and mushy. Set aside until cool enough to handle. 2. Scrub the potatoes and cut out any eyes or discolorations. Peel if not organic or if the skins are too thick, and place in a medium-size sauce pan with the water.* Bring to a boil, then reduce the heat and cook for about 20 minutes, or until tender. Add more water if necessary. 3. While the potatoes are cooking, remove the garlic cloves from their wrappers. To do this, pierce the wrappers with a paring knife and then squeeze out the roasted cloves. Set aside. 4. When the potatoes are tender, drain them, reserving the cooking water, and place in a large bowl. Mash, along with the flax oil, potato water, parsley, and rosemary, if desired. 5. Stir in the garlic, salt, and pepper, and serve immediately. *It is not necessary to completely cover the potatoes with water to cook them. If you completely cover them, you will not only lose a lot of healthy minerals, but the potatoes will take longer to cook. I either pressure-cook my potatoes using about 11/2 cups of water or cook them in waterless cookware using just 1-2 tablespoons of water. In a conventional pan, you will need about 2-3 cups of water. I usually then mash any remaining cooking water into the potatoes. If you have more than enough cooking water remaining, put the leftover water into a freezer container and freeze for future use in soup stocks.
