MATTEO'S BBQ SAUCE

1 dried ancho chile
1 cup brewed coffee, hot
1/2 cup fresh blueberries
1/2 cup dried cranberries
4 cloves garlic
1 chipotle chile
1/2 red onion, diced and sauteed
4 cups ketchup
1 cup brown sugar
1/2 cup brewed coffee
1/2 cup red wine
2 tablespoons Dijon mustard
1 tablespoon freshly ground black pepper
1/4 teaspoon ground cinnamon

Steps:

  • For the puree: Put the ancho chile in the hot coffee in a small bowl and let stand until the chile softens.
  • Combine the blueberries, cranberries, garlic, chipotle chile, onion and the coffee with the ancho chile in a blender and blend until smooth.
  • For the spice mix: Add the ketchup, brown sugar, coffee, wine, mustard, black pepper and cinnamon to a bowl.
  • Add the puree to the spice mix. Whisk to combine. Set the bowl over a pot of simmering water. Simmer the sauce over low heat until thickened, about 2 hours, checking that the water is simmering throughout and adding more water when needed.

½ teaspoon onion salt
½ teaspoon dried oregano
1 tablespoon red pepper flakes
1 ½ tablespoons white sugar
½ teaspoon ground black pepper, or to taste
¼ teaspoon hot pepper sauce, or to taste

Steps:

  • In a medium bowl, stir together the barbeque sauce, whiskey, Worcestershire sauce, ginger, cayenne pepper, paprika, chili powder, garlic powder, onion salt, oregano, red pepper flakes, sugar, ground black pepper, and hot pepper sauce. Cover, and keep refrigerated until ready to use.

2 tablespoons celery seed
2 tablespoons ground cumin
2 tablespoons ground red pepper
2 tablespoons garlic powder
1 tablespoon chili powder
2 quarts ketchup
2 cups apple vinegar
1 1/2 teaspoons liquid smoke
1 teaspoon lemon juice

Steps:

  • In a small bowl, mix together sugar, salt, celery seed, cumin, red pepper, and garlic and chili powders. Set aside.
  • In a large bowl, combine remaining ingredients. Add dry ingredients, and mix well. Serve warm or at room temperature.
