Number Of Ingredients 10

1 can (20 ounces) crushed pineapple, juice drained and reserved
1 cup water
1 package (6 ounces) strawberry gelatin
1 can (14 ounces) whole-berry cranberry sauce
3 tablespoons lemon juice
1 teaspoon grated lemon zest
1/2 teaspoon ground nutmeg
2 cups sour cream
1/2 cup chopped pecans
Fresh strawberries, optional

Steps:

  • Combine pineapple juice and water in a 2-qt. saucepan; heat to boiling. Remove from heat; add gelatin and stir until it dissolves. Stir in cranberry sauce, lemon juice, zest and nutmeg. Chill until mixture thickens slightly. Add sour cream; stir until thoroughly combined. Fold in pineapple and pecans. Pour into an 8-cup mold; chill until firm. Unmold onto a serving plate. Garnish with fresh strawberries, if desired.

4 cups cranberries
1-1/2 cups sugar
3/4 cup water
1 envelope unflavored gelatin
1/4 cup lemon juice
2 tablespoons orange juice
1-1/2 cups heavy whipping cream
3 tablespoons confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a saucepan, bring the cranberries, sugar and water to a boil. Reduce heat and cook until berries burst. Strain through a food mill or sieve into a large bowl. , Stir in the gelatin, lemon juice and orange juice. Cool until mixture coats the back of a spoon. , In a small bowl, whip cream until soft peaks form. Add confectioners' sugar and vanilla; beat until stiff peaks form. Fold into cranberry mixture. Chill until set.

2 1/2 cups graham cracker crumbs
1/2 cup sugar
1 (16 ounce) container Cool Whip, thawed
2 (8 ounce) packages cream cheese, softened
1 cup powdered sugar
2 (21 ounce) cans cherry pie filling

Steps:

  • Melt margarine and combine thoroughly with the graham cracker crumbs and sugar. Press onto bottom of a 9x13 pan. Blend whipped topping, cream cheese, and powdered sugar with a mixer. Carefully spread this over the pressed crumbs. Evens spread the pie filling over the cheese mixture. Refrigerate.

Tired of eating cranberries out of a can? This is a great recipe to spice up an old family tradition. I never ate cranberries until I discovered this recipe and tried it out on my roommates.

1 (3 ounce) package strawberry Jell-O gelatin dessert
1 cup boiling water
1/2 cup orange juice, from concentrate
1 (12 ounce) package cranberries, chopped (fresh or frozen)
1 medium apple, peeled and chopped
1 1/2 cups sugar
1/2 cup chopped pecans

Steps:

  • Dissolve jello in boiling water.
  • Stir in orange juice.
  • In a seperate bowl, combine cranberries, sugar, and apple.
  • Add cranberry blend to jello mixture.
  • Stir in pecans.
  • Pour into 1 1/2 qt serving dish. Refridgerate for at least 4 hours or overnight.

This is another prized recipes from our church. It is also the "secret" ingredient in "Maxine's Potato Salad", and many other recipes. I consider this to be one of the staples in our pantry and one of the reasons I grow cucumbers.

Number Of Ingredients 8

4 quarts sliced cucumbers
1 gallon water
7 tablespoons salt
3 pints apple cider vinegar
4 cups sugar
1 tablespoon celery seed
2 tablespoons mustard seeds
3 teaspoons curry powder

Steps:

  • Soak cucumber slices in salt water overnight.
  • Drain and rinse.
  • Make a syrup of last 5 ingredients and bring to a boil.
  • Put cucumbers into syrup and reduce heat to below boiling point.
  • Stir constantly for 4 minutes.
  • Place cucumbers in hot sterile jars.
  • Bring liquid back to boiling point and pour into jars.
  • They will seal.

2 (3 ounce) packages apricot gelatin
2 cups boiling water
2 cups cold water
2 large bananas, sliced
1 (20 ounce) can crushed pineapple
1 cup colored miniature marshmallows
1/2 cup pineapple juice (from reserves)
1/2 cup sugar
1 egg, slightly beaten
2 tablespoons flour
1 tablespoon butter
1 (8 ounce) package cream cheese
1 (8 ounce) container Cool Whip

Steps:

  • Drain pineapple and reserve juice for topping. Dissolve jello in hot water. Then add cold water. Let partially set. Add crushed pineapple & banana slices and chill in refrigerator.
  • While chilling in refrigerator, prepare topping. Cook pineapple juice, sugar, egg, flour and butter together on the stove. When thick, remove from heat and cool slightly. Fold in cream cheese. Whip prepared topping and fold into mixture. When completely cool, spread on jello mixture.

3 cups boiling water
1/2 cup sugar
1 tablespoon lemon juice
1 (8 ounce) can crushed pineapple
3 cups fresh cranberries
1 small orange, quartered and seeded
1 cup celery, finely diced
1/2 cup nuts, chopped

Steps:

  • Dissolved gelatin in boiling water. Add sugar. Add lemon juice and undrained pineapple. Chill until partially set.
  • Grind oranges and cranberries in grinder or food processor. Fold into gelatin mixture along with celery and nuts.
  • Let chill until firm.
