Steps:
- Combine all Fajita Seasoning ingredients and store in airtight container. You will have more than you need for this recipe.
- Cut chicken into small strips, none longer than 2" and about 1/4" thick.
- Combine fajita seasoning with water, vinegar and lime juice in a small bowl.
- Marinate chicken in this mixture, covered and refrigerated for a couple of hours.
- Heat some oil in a wok. Cook marinated meat over medium high heat until brown. Retain marinade.
- Add green pepper and onion and stir-fry for about 1 minute.
- Add remaining marinade and stir-fry until liquid "escapes".
- Spoon 1/4 of the mixture into the center of each tortilla and add 1/2 slice cheese. Sprinkle with a dash of the fajita seasoning mix.
- Fold like a burrito with one end open and wrap in a 12"x12" sheet of wax paper. Let sit 5-7 minutes.
- Microwave still wrapped for 15 seconds each. Do this seperately.
- Enjoy with picante sauce on the side.

Garlic, lime juice, cumin, and salt make the perfect marinade for chicken. Once the protein is cooked through and the peppers and onion are tender, serve in a tortilla with your desired accompaniments-we love cilantro, cheese, salsa, and sour cream.

- In a medium bowl or resealable plastic bag, combine garlic, lime juice, cumin, 2 teaspoons salt, and 1/2 teaspoon ground pepper; add chicken, and turn to coat.
- Heat 2 tablespoons oil in a large skillet over medium heat. Add chicken breasts; cook until opaque throughout, 6 to 8 minutes per side. Transfer chicken to a plate; wipe skillet with a paper towel.
- Heat remaining tablespoon oil in skillet. Add peppers and onion; season with salt and pepper. Cook, tossing frequently, until vegetables are crisp-tender, 5 to 7 minutes.
- Thinly slice chicken; serve with cooked vegetables and desired accompaniments, letting guests assemble their own fajitas.

- Heat 1 tablespoon oil in a skillet over medium heat; stir in onion and bell pepper. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Remove vegetables to a plate.
- Add chicken to the skillet, adding more oil if needed. Saute until chicken is no longer pink and the juices run clear, about 5 minutes. Add water and taco seasoning; stir until seasoning dissolves. Simmer until sauce begins to thicken and stick to chicken, and chicken is fully cooked, 3 to 5 minutes.
- Serve chicken and vegetables on tortillas.

- Heat broiler, with rack set 4 inches from heat. Arrange chicken on a rimmed baking sheet lined with aluminum foil; rub with 1 tablespoon oil. Sprinkle with chili powder, and season with salt and pepper. Broil, without turning, until chicken is opaque throughout, 5 to 7 minutes. Remove from oven; set aside.
- On another rimmed baking sheet lined with foil, toss peppers, onion, garlic, and remaining tablespoon oil; season with salt and pepper. Broil, tossing occasionally, until vegetables are crisp-tender and slightly charred, 6 to 8 minutes.
- Meanwhile, thinly slice chicken crosswise. Stack and wrap tortillas in a damp paper towel; microwave on high until warm, about 1 minute. Transfer chicken and pepper mixture to a platter, and serve with tortillas, cilantro, sour cream, and lime wedges.
