- Sprinkle salt over garlic and chop, occasionally smearing mixture with blade of knife, until paste forms. Whisk garlic paste, vinegar, and thyme in a medium bowl. Add cheese; mash with the back of a fork until cheese is finely crumbled. Stir in sour cream and mayonnaise. Season dip to taste with salt and pepper. Serve with assorted vegetables. DO AHEAD: Can be made 2 days ahead. Cover and chill.

- Preheat oven to 325°F. Place both cheeses, shallots, garlic, cream, Worcestershire, 1/2 teaspoon salt, and 1/4 teaspoon pepper in the bowl of a food processor; blend until smooth, scraping down bowl as needed.
- Transfer to an 8-inch gratin dish or other shallow baking dish. Bake until heated through and lightly browned in places, 20 to 25 minutes (if heated through but not browned, broil 30 to 60 seconds).
- Decorate with edible insects (use dates and raisins for bodies, and pepitas and almonds for appendages), and serve warm, with crackers and crudités.

- Melt butter in a skillet over medium heat. Add mealworms and cook until puffed and lightly browned, about 10 minutes. Spread out onto a plate and place into the refrigerator to chill until cold, about 20 minutes.
- Mix together cream cheese and blue cheese until smooth; season to taste with salt and pepper. Stir in blue cheese salad dressing. Roughly chop mealworms into 1/4 inch pieces. Fold into dip.
- Refrigerate dip for 2 hours before serving.
