ROAST BEEF ROLL-UPS



Roast Beef Roll-Ups image

Got this idea from a Pillsbury cookbook. Made a few adjustments. This was the result. Hubby enjoyed this one.

8 slices deli roast beef, 1/8 inch
1 mushroom
1/2-3/4 cup broccoli, chopped small
1 garlic clove, minced
3 cups cooked mashed potatoes (thinned with a little milk or use roasted garlic instant mashed potatoes for 4)
1/4 cup romano cheese, grated
2 plum tomatoes, diced
1 1/2 tablespoons tomato paste
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
12 ounces beef gravy (homemade or jar)
2 tablespoons romano cheese, grated

Steps:

  • Spray a casserole pan (3 quart) with cooking spray.
  • Microwave on high the broccoli, mushroom and garlic about 1 1/2 minutes.
  • Blend together the gravy, tomato paste, tomatoes, oregano and basil; set aside.
  • Mix broccoli mixture and 1/4 cup of cheese with the mashed potatoes.
  • Put 1/4-1/2 cup potato mixture down the center of each roast beef slice,.
  • Roll up and place seam side down in prepared pan.
  • Pour gravy mixture over top.
  • Cover with foil.
  • Bake 25 minutes at 350°F.
  • Uncover, sprinkle with 2 tbps cheese.
  • Bake 5 minutes more until cheese melts.
  • Let stand 5 minutes before serving.
  • Serves 4.

2 cups Jiffy baking mix
1 1/2 lbs hamburger
1 medium onion, thinly sliced
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk

Steps:

  • Preheat oven to 400°,
  • grease baking sheet.
  • In a large skillet brown hamburger;
  • add onion, salt and pepper.
  • Cook until onion is tender; drain any excess fat.
  • Blend baking mix and milk to soft dough.
  • Turn onto lightly floured surface and roll into 12"x9" rectangle.
  • Spread meat mixture over dough.
  • Roll up and place on prepared baking sheet, seam side down.
  • Slash top several times.
  • Bake 20-25 minutes.
  • Serve with gravy, tomato or mushroom sauce.
  • Variation:
  • Chicken, turkey or other meats may be substituted.

MY MOM used to make this and it was a favorite of mine. I remember watching her make it and snitching bites of the meat that were leftover in the pan. I had several tastes before she realized what I was doing.

1 pound ground beef
1 small onion, chopped
1 can (4 ounces) mushroom stems and pieces, drained
1/4 cup dill pickle relish
1 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon pepper
2 tablespoons all-purpose flour
1/3 cup water
PASTRY:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon poultry seasoning
1/4 cup shortening
3/4 cup plus 2 tablespoons milk, divided
GRAVY:
2 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups milk

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the mushrooms, relish, salt, mustard and pepper. Combine flour and water until smooth; stir into beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Set aside. , For pastry, in a large bowl, combine the flour, baking powder, salt and poultry seasoning. Cut in shortening until mixture resembles coarse crumbs. Stir in 3/4 cup milk to form a soft dough. Turn onto a floured surface; pat dough into a 12-in. x 9-in. rectangle., Set aside 1/4 cup meat mixture. Spread remaining mixture over dough to within 1 in. of edges. Roll up, starting with a long side; pinch seam to seal. Place seam side down on a greased baking sheet; brush with remaining milk. , Bake at 425° for 15-20 minutes or until golden brown. , For gravy, melt butter in a saucepan over medium heat. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in reserved meat mixture; heat through. Slice roll; serve with gravy.

½ cup milk
⅓ cup dry bread crumbs
2 tablespoons heavy cream
1 teaspoon heavy cream
1 large egg
1 large clove garlic, minced
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground white pepper
¼ teaspoon ground allspice
1 pound ground beef
½ pound ground pork
½ medium onion, minced
2 tablespoons finely chopped fresh parsley
1 tablespoon salted butter
2 teaspoons olive oil
⅓ cup salted butter
¼ cup all-purpose flour
1 cup vegetable broth
1 cup beef broth
1 cup heavy cream
2 teaspoons soy sauce
1 teaspoon Dijon mustard
salt and ground black pepper to taste

Steps:

  • Mix milk, bread crumbs, 2 tablespoons plus 1 teaspoon cream, egg, garlic, salt, black pepper, white pepper, and allspice together in a large bowl. Set aside to soak until bread crumbs have absorbed the milk, at least 10 minutes.
  • Mix in beef, pork, onion, and parsley, using your hands to mix until well combined. Roll into about 24 small meatballs or 16 larger meatballs.
  • Heat butter and oil in a pan over medium-high heat. Fry meatballs in small batches until cooked through and browned on all sides, 10 to 12 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Transfer to a warm plate and cover with foil.
  • Add butter for gravy sauce to the pan juices. Melt over medium heat. Whisk in flour. Cook and whisk until flour dissolves and turns brown, about 5 minutes. Pour in vegetable broth, beef broth, cream, soy sauce, and Dijon. Bring to a simmer. Season with salt and pepper and mix to combine all of the flavors together. Continue to simmer until thickened, 5 to 7 minutes.
  • Add meatballs to the gravy. Toss gently to coat and serve.

This is an old fashioned German recipe that my family enjoys. It has been passed down from my mother who is from Germany, try it you will love it.

4 -6 thinly sliced steak (some grocery stores will call it rouladen)
1 large onion, chopped
8 -12 slices uncooked bacon, chopped (smoked bacon may be substituted)
pickle, chopped (opptional)
dry mustard
salt
pepper
garlic
2 -3 beef bouillon cubes

Steps:

  • Pound steaks ,if necessary, to thin them out. Season with garlic, salt, pepper and mustard to your liking. Place chopped bacon, onions, and pickles down the center of the steaks and roll up. Tie with string.
  • In large pot brown in vegetable oil, then add beef boullion and cover with water, let simmer for at least 3 hours. Add more water, if necessary, to keep them covered.
  • Remove rouladen from pot and thicken liquid to make gravy. Season to taste. Return meat to pot and heat through.
  • Serve with mashed potatoes or potato dumplings.

  • Mix ground beef, slightly beaten eggs, Worchestershire sauce, salt, pepper and garlic powder together in a large bowl until fully combined. Set aside.
  • Mix ingredients for stuffing in a small bowl (bread crumbs, onion, sage, pepper, and chicken broth). Set aside.
  • Divide the meat evenly into 6 portions. Place on wax paper, leaving space between each ball of meat. Lay a piece of wax paper on top of the meat (enough to cover). Use your hands to flatten out each piece of meat, shaping it into a 4 inch square. Place 2 Tablespoons of stuffing mixture onto each meat square. Use your fingers to "spread" the mixture out to within 1/2" of each edge. Carefully roll up each square, one at a time, tucking filling in as you go (if stuffing falls out, just put it right back in), continuing until all 6 beef rolls are done. Make sure you seal up or tuck in the seam and ends of each roll to hold stuffing in while it bakes.
  • Spray a 13x9 inch baking dish with non-stick spray. Place beef rolls, SEAM SIDE DOWN onto baking pan, leaving space between each roll. Bake in a preheated 375° oven (uncovered) for 20 minutes.
