2 1/2 servings = 1 (10.5 oz.) can Campbell's Healthy Request Condensed Cream of Mushroom Soup
4 servings = 1 tsp. Mrs. Dash Original Seasoning Blend
8 servings = 1 cup Kraft Simply Light Sour Cream
4 servings = 1 lb Wal-Mart 93/7 Lean Ground Beef
3 servings = 1 cup shredded Reduced Fat Mild Cheddar Cheese
11 servings = 1 (32 oz.) bag Ore-Ida Diced Hash Brown Potatoes, thawed
1 tsp Black Pepper

Steps:

  • Preheat oven to 350 °F (175 °C).
  • Form ground beef into 20 meatballs (if desired season with salt and pepper). Spray baking sheet with cooking spray and place meatballs on baking sheet. Bake 20 minutes or until cooked through.
  • In a bowl, stir together soup, sour cream, cheese, seasoning blend, and pepper. With a paper towel, pat hash browns dry and then stir into soup mixture.
  • Spray a 9"x13" baking dish with cooking spray and spread hash brown mixture into prepared dish.
  • Slightly press cooked meatballs into hash brown mixture in even rows.
  • Cover and bake 35 minutes. Uncover and bake 10-15 minutes more or until hash browns are done.
  • Note: you can use frozen fully cooked meatballs if you are in a hurry, but it's better if you bake your own.

1 pkg frozen shredded hash brown potatoes or hash brown patties thawed
1 container sour cream
1 jar Cheddar cheese pasta sauce or a jar of cheddar cheese dip (I use the cheese dip as it adds a nice tangy flavor to the cheese)
4 T dried chives
1-1/2 cups shredded Colby cheese
24 frozen precooked meatballs
1/2 cup shredded Colby cheese

Steps:

  • Preheat oven to 350 degrees F. In large 13x9" glass baking dish, combine potatoes, sour cream, soup, and 1-1/2 cups cheese; mix until combined and well blended. Top with frozen meatballs. Cover with foil and bake for 40 minutes. Uncover casserole and bake for 25-35 minutes longer until casserole is bubbly and meatballs are crisp on top. Sprinkle with remaining cheese and bake for 5-10 minutes longer, until cheese is melted.

6 cloves garlic, minced
2 teaspoons salt, divided
1 1/2 teaspoon black pepper, divided
1 pound lean ground beef
1 can (10.75 ounce size) condensed cream of chicken soup, undiluted
1 container (8 ounce size) sour cream
1 cup shredded cheddar cheese
1 large onion, chopped
1 package (30 ounce size) frozen shredded hash brown potatoes, thawed

Steps:

  • In a bowl, lightly beat eggs. Stir in cracker crumbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper. Crumble beef over mixture; mix well. Shape into 1-inch balls. In a covered skillet over low heat, cook meatballs in a small amount of water until browned. Drain. In a bowl, combine the soup, sour cream, cheese, onion and remaining salt and pepper. With paper towels, pat hash browns dry. Stir into the soup mixture. Transfer to a greased 13-inch x 9-inch x 2-inch baking dish. Arrange meatballs over top, pressing lightly into mixture. Cover and bake at 350 degrees F for 45 minutes. Uncover and bake 15 minutes longer or until meat is no longer pink and potatoes are tender.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 large onion, chopped
1 cup shredded cheddar cheese
1 cup sour cream
1-1/2 teaspoons pepper, divided
1 teaspoon salt, divided
1 package (30 ounces) frozen shredded hash brown potatoes, thawed and patted dry
2 large eggs, lightly beaten
3/4 cup crushed saltines (20-25 crackers)
6 to 8 garlic cloves, minced
1 pound lean ground beef (90% lean)

Steps:

  • Preheat oven to 350°. Mix first four ingredients, 1 teaspoon pepper and 1/2 teaspoon salt; stir in potatoes. Spread evenly in a greased 13x9-in. baking dish., In a large bowl, combine eggs, cracker crumbs, garlic and the remaining pepper and salt. Add beef; mix lightly but thoroughly. Shape into 1-in. balls., In large skillet, brown meatballs over medium-high heat. Place over potato mixture, pressing in lightly., Bake, covered, 45 minutes. Uncover; bake until meatballs are cooked through and potatoes are tender, 10-15 minutes.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
2 eggs
1 lb ground beef
4 tablespoons soy sauce
8 ounces mascarpone cheese

Steps:

  • Preheat oven to 350 degrees.
  • Place eggs into a large bowl and beat until yolk and egg white are blended.
  • Add package of Simply Potatoes Shredded Hash Browns to the bowl and mix well with eggs.
  • In a separate bowl, add soy sauce with the ground beef and use hands to mix together.
  • Cook beef with soy sauce in a skillet on medium heat for about 5 minutes until browned. Remove from heat and drain any excess grease.
  • Add package of mascarpone cheese to the beef and mix well.
  • Take about a tablespoon of the hash brown mix and cup it in your fingers of one hand. Then place about 2 tablespoons of the cooked beef on top of the potatoes. Finally top with an other tablespoon of hash browns on top of the beef and form everything into a ball.
  • Place the ball onto a greased baking tray and repeat with remaining ingredients forming more meatballs.
  • Bake the meatballs for 25-30 minutes until golden brown.
  • Serve as an appetizer.
  • Another option would be to spread half the potatoes on the bottom of a greased casserole dish, followed by a layer of meat and then topped with the rest of the potatoes. Bake for 25-30 minutes until golden brown and serve as main entree dish.

1/2 pound ground lamb
1/2 pound ground round
5 ounces frozen spinach, thawed and drained thoroughly
1/2 cup finely grated Parmesan
1 whole egg
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried parsley
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon red pepper flakes
1/2 cup bread crumbs, divided

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large mixing bowl, combine the pork, lamb, ground round, spinach, cheese, egg, basil, parsley, garlic powder, salt, red pepper flakes, and 1/4 cup of the bread crumbs. Using your hands, mix all ingredients until well incorporated. Use immediately or place in refrigerator for up to 24 hours.
  • Place the remaining 1/4 cup of bread crumbs into a small bowl. Using a scale, weigh meatballs into 1.5-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds, roll in the bread crumbs and place the meatballs in individual, miniature muffin tin cups. Bake for 20 minutes or until golden and cooked through.
