Meatball Bombs image

These Meatball Bombs are stuffed with marinara, meatball, and cheese, then wrapped in dough and topped with a seasoned garlic butter. They are quick to make and have so much flavor!

1 can (12 oz) Pillsbury Homestyle Butter Tastin' refrigerated biscuits
8 cooked Italian-style meatballs (if using frozen, let thaw completely)
1 cup marinara/pasta sauce
1 cup shredded cheese (mozzarella or Italian blend)
4 tablespoons butter, melted
2 garlic cloves, minced
1/2 teaspoon Italian seasoning
pinch of salt

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  • Using your hands or a rolling pin, flatten each biscuit into a 4 inch round.
  • Place 1 meatball and 2 tablespoons marinara in center of each dough round. Top with 2 tablespoons of cheese.
  • Wrap dough around meatball and cheese, pressing edges to seal. Place seam side down, leaving room for spreading on prepared baking sheet. Continue until all biscuits have been completed.
  • In a small bowl, whisk together melted butter, garlic, Italian seasoning and salt. Evenly spoon on top of each biscuit.
  • Bake for 18 to 20 minutes, or until golden brown. Serve warm!

⅓ cup tomato paste
2 cups tomato sauce
grated parmesan cheese, to serve

Steps:

  • Preheat oven to 425°F (220°C).
  • In a medium-size bowl mix together the beef, pork, bread crumbs, onion, parsley, garlic, eggs, salt, and pepper until just combined.
  • Take a walnut size of the meat mixture and roll into a ball. Repeat with remaining meat and transfer to an oiled rack on a sheet tray.
  • Bake meatballs for 15 minutes, until golden brown. Set aside.
  • Add a little oil to a pan on medium-high heat and cook the onions and garlic until they are deeply caramelized.
  • Add in the oregano, parsley, basil, red pepper flakes, tomato paste, and tomato sauce.
  • Stir the mixture and bring to a simmer for 5 minutes.
  • Add the meatballs and coat them with the sauce.
  • Sprinkle with Parmesan cheese, poke with toothpicks, and serve!
  • Enjoy!

1 tablespoon olive oil
yellow onion, chopped
3 cloves garlic, minced
28 oz crushed tomato, 2 cans
1 ½ tablespoons salt
1 teaspoon pepper
2 sprigs fresh basil
½ cup bread crumbs
½ cup milk
1 egg
½ cup grated parmesan cheese
2 teaspoons salt
½ teaspoon pepper
1 lb ground beef
½ cup onion, minced
24 lasagna noodles, cooked 2 minutes less than package instructions
16 oz ricotta cheese
12 sheets mozzarella cheese, sliced in half
fresh parsley, for garnish

Steps:

  • Marinara sauce: In a large saucepan, heat the olive oil. Add onion and garlic and saute for 5 minutes, until translucent.
  • Stir in tomatoes, salt, pepper, and basil. Simmer for 15 minutes, stirring occasionally. Remove basil sprigs and set sauce aside.
  • In a small bowl, stir together breadcrumbs and milk and set aside. In a large bowl, whisk together egg, parmesan, salt and pepper.
  • Stir in ground beef, onions, and wet breadcrumbs. Combine well, but do not over-mix.
  • With oiled hands, roll the meat into golf-sized balls.
  • Heat a skillet with a drizzle of olive oil. Brown meatballs on all sides, then remove from pan.
  • Preheat oven to 350ºF (180º C).
  • Lay out a lasagna noodle horizontally on a cutting board. Spread a tablespoon of ricotta onto the noodle. Lay a mozzarella slice on one end of the noodle and place a meatball on top of the cheese.
  • Roll up the noodle with the meatball and cheese inside. Place meatball bomb into the baking dish, with the meatball showing. Repeat with the rest of the meatballs and noodles.
  • Ladle approximately ⅔rds of the marinara sauce into a 9x13-inch (23x33-cm) baking dish. Place the meatball rolls on top of the marinara sauce.
  • Bake dish for 25 minutes, until top is lightly browned and meatballs are cooked through completely.
  • Remove from oven, garnish with parsley and serve with reserved marinara on the side.
  • Enjoy!
