I quote and agree with everything Chef Anna Olson says about this recipe - one featured on her Food Network Canada TV program, SUGAR. "This recipe looks like a spectacular baked souffle without the effort or worry of whether it will sink! Essentially a light, frozen mousse, the rhubarb flavour compliments the white chocolate making it a refreshing dessert."

2 cups chopped rhubarb
1/2 cup white sugar
2 teaspoons vanilla extract
8 ounces white chocolate, chopped
1 1/3 cups whipping cream
2 eggs, separated
2 tablespoons water
2 tablespoons brandy or 2 tablespoons rum
3 tablespoons white sugar
1 dash salt
3 -5 seasonal berries (to garnish)

Steps:

  • THE RHUBARB: Simmer rhubarb, sugar and vanilla until soft.
  • Puree, then set aside to cool.
  • THE MOUSSE: Prepare 6 x 4oz ramekins by wrapping outsides with parchment or waxed paper rings to stand 2 inches above the ramekin's lip.
  • Secure parchment with an elastic band or string.
  • Over a pot of simmering water (or in a microwave) melt chocolate and set aside to cool. (Keep water simmering on stove.)
  • Whip cream to soft peaks and chill.
  • Over simmering water,whisk together egg yolks, water, brandy and 2 tbsp sugar for 2 minutes to warm eggs.
  • Remove from simmer, and whisk chocolate into egg yolk mixture.
  • Let mixture sit until at room temperature.
  • Fold in whipped cream in two additions just until incorporated.
  • Whip egg whites to medium-peak, and add the remaining 1 tbsp of sugar and a dash of salt.
  • Fold one third of the egg-whites into mousse followed by the remaining two thirds.
  • Quickly fold in the rhubarb.
  • Spoon mousse into the ramekins, filling up over the edge of each ramekin.
  • Freeze overnight- or at least 6 hours.
  • TO ASSEMBLE: Simply remove the parchment/waxed paper and garnish the frozen mousse (what IS the plural of"mousse"?) with a few fresh berries.

This is like a cross between a souffle and a light pudding. A souffle is an old-fashioned classic that I always try to avoid making these days, as I made so many of them when I was at college! Like a good omelette, a souffle is the test of a really good cook - if you don't get your temperature, speed and stages right you can end up with something as flat as a pancake. But now I've come up with a recipe that's so delicious, with such a beautiful flavor and texture, it doesn't really matter if it sinks. My favorite bit is getting everyone to make a hole in the top of their hot souffle and pour in some very cold custard. There's nothing better.

14 ounces rhubarb, cut into 1-inch chunks
1/3 cup sugar, plus 2 tablespoons
2 tablespoons softened butter
6 gingersnap cookies
10 tablespoons store-bought custard, plus extra for serving
1 large free-range or organic egg yolk, plus 4 egg whites
1 teaspoon all-purpose flour
Sea salt

Steps:

  • Preheat the oven to 350 degrees F and put in a baking sheet to heat up.
  • Put the rhubarb into a saucepan with the 1/3 cup of sugar. Put a lid on the pan and simmer gently for about 10 minutes, until the rhubarb is soft. Put aside and leave to cool completely.
  • Get yourself 6 ramekin dishes and rub their insides with the butter. Put the gingersnap cookies into a sandwich bag, tie a knot in the top and smash the cookies with a rolling pin or the bottom of a pan to make quite fine crumbs. Dust the insides of the buttered ramekins with the smashed cookies, then shake out any excess crumbs and keep them for later. (You can put the dishes into the refrigerator at this point until you're ready to put your souffles together.)
  • Blob a tablespoon of the cooled stewed rhubarb into each ramekin dish. Mix the rest of the rhubarb with the custard, the egg yolk and the flour. In a large, clean bowl, using an electric mixer, beat the egg whites with a pinch of salt until you have soft peaks. Add the remaining 2 tablespoons of sugar and whisk on a high speed until the whites are very stiff - this should take about 3 minutes.
  • Working gently, fold 2 spoonfuls of the stiff egg whites into the rhubarb mixture. Tip this into the bowl containing the remaining egg whites and fold together very carefully. Divide the mixture between the ramekins and level the tops. Wipe the rims of the dishes clean.
  • Remove the hot baking sheet from the oven and place the ramekins on it. Put back into the preheated oven and bake for 18 to 20 minutes, or until the souffles are a lovely golden color and have risen nicely. Serve immediately, sprinkled with your leftover gingersnap crumbs.

1/3 cup water

1 can (16 oz) whole berry cranberry sauce
2 cups frozen whipped topping, thawed

Steps:

  • In large bowl, beat egg whites and salt with electric mixer on high speed until soft peaks form; set aside. In 1-quart saucepan, heat 1/3 cup water and 3/4 cup sugar to boiling over medium-high heat, stirring frequently, until sugar is dissolved. Cook over medium heat to 245°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a firm ball.
  • Slowly beat sugar mixture into egg whites on low speed. Beat on medium speed about 8 minutes or until mixture cools to room temperature.
  • Fold cranberry sauce and whipped topping into egg white mixture. Spoon into 6 individual soufflé dishes, about 1 1/4 cups each; smooth tops. Cover with plastic wrap; freeze at least 8 hours but no longer than 24 hours.
  • Line cookie sheet with waxed paper. In 1-quart saucepan, heat 1/2 cup water and 1/2 cup of the sugar to boiling over medium-high heat, stirring frequently, until sugar is dissolved. Cook over medium-high heat to 234°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a soft ball that flattens when removed from water. Remove from heat; stir in cranberries. Let stand about 2 minutes or until cranberries are softened. Remove cranberries with slotted spoon to cookie sheet. Place remaining 1/4 cup sugar on plate; roll cranberries in sugar to coat. (Cranberries can be prepared up to 6 hours before using; keep refrigerated.)
  • Let soufflé stand at room temperature 30 minutes before serving. Garnish with candied cranberries and mint leaves.

4 large eggs
2 oz unsweetened baking chocolate
1/2 cup granulated sugar
2 tablespoons cornstarch
1 cup milk
2 tablespoons butter or margarine, room temperature
1 teaspoon vanilla
About 2 teaspoons butter or margarine, room temperature, to grease soufflé dish
Additional granulated sugar for coating soufflé dish
1/2 teaspoon salt
1/4 teaspoon cream of tartar
Frozen whipped topping, if desired

Steps:

  • Place an egg separator over a small bowl. Crack open 1 egg, letting the yolk fall into the center of the separator and the egg white slip through the slots into the bowl. Place yolk in another small bowl, then separate 2 more eggs. When separating fourth egg, place the yolk in another container; cover and refrigerate up to 4 days to use in another recipe. Set remaining 3 egg yolks aside.
  • Place the 4 egg whites in a clean large bowl, and let stand at room temperature up to 30 minutes.*
  • Meanwhile, coarsely chop the chocolate. In a 1-quart saucepan, stir the sugar and cornstarch until mixed. Gradually stir in the milk. Add the chocolate. Cook over medium heat, stirring constantly, until chocolate is melted and mixture thickens and boils. Boil and stir 1 minute. Remove from heat.
  • In a small bowl, beat the egg yolks with an electric mixer on medium speed until very thick and lemon colored. Gradually beat in the chocolate mixture. With a wooden spoon, stir in 2 tablespoons butter and the vanilla. Cool to room temperature.
  • Heat the oven to 350°F. Spread 2 teaspoons butter on the bottom and side of a 6-cup soufflé dish, using a paper towel or piece of waxed paper. Sprinkle additional sugar over the butter. Make a 4-inch band of triple thickness of foil that is 2 inches longer than the circumference of the dish; butter one side of the band and sprinkle with sugar. Extend depth of dish by securing foil band, buttered side in, with masking tape around top outside edge of dish. (A buttered and sugared 2-quart casserole can be used instead of a soufflé dish and foil band.)
  • Add the salt and cream of tartar to the egg whites; beat with an electric mixer on high speed just until egg whites form stiff peaks when beaters are lifted. Stir about 1/4 of the egg whites into the chocolate mixture. Add remaining egg whites; to fold in, use a rubber spatula to gently cut down vertically through the mixture, then slide the spatula across the bottom of the bowl and up the side, turning mixture over. Rotate the bowl 1/4 turn, and repeat this down-across-up motion. Continue folding just until egg whites are blended into mixture. Carefully pour batter into the soufflé dish; use a rubber spatula to scrape batter from bowl, spread batter evenly in pan and smooth top of batter.
  • Bake 45 to 55 minutes or until a knife inserted halfway between the center and the edge comes out clean. Do not be alarmed if cracks appear on the top because they are characteristic of this soufflé.
  • Meanwhile, make Sweetened Whipped Cream. Serve soufflé immediately. Carefully remove foil band and divide soufflé into sections with 2 forks. Serve with whipped cream.

250 g rhubarb, cut into 2 . 5cm pieces
1 tablespoon orange juice
4 tablespoons caster sugar
1 teaspoon spices
100 g strawberries, sliced
3 eggs, separated
1 teaspoon finely grated orange zest
25 g butter
icing sugar
4 tablespoons creme fraiche, to serve

Steps:

  • Place the rhubarb, orange juice, 3 Tbsp of the caster suage and the mixed spice in a pan and bring to the boil; simmer for 4 minutes until tender and thickened. Sir in the strawberries and set aside.
  • Beat the egg yolks and remaining caster sugar until pale, then stir in the orange zest. In a separate bowl, whisk the egg whites until stiff. Fold the egg yolks carefully into the whites.
  • Pre heat the grill to medium. Melt the butter in a 23cm frying pan and spoon in the egg mixture so that it covers the base. Cook over a gentle heat for a few minutes until golden underneath and beginning to set, then grill for 1 minute until golden and puffy.
  • Slide the souffle onto a serving plate and spoon some of the fruit and sauce over half of it. Fold over and dust liberally with icing sugar. Serve in wedges with extra fruit and a spoonful of creme fraiche.

1 tablespoon butter, for ramekins
white sugar for dusting
2 teaspoons unsweetened cocoa powder
2 tablespoons cornstarch
¼ cup white sugar, divided
2 tablespoons butter
2 tablespoons bread flour
¾ cup milk
4 egg yolks
4 egg whites
½ teaspoon vanilla extract
¼ cup chocolate liqueur
2 tablespoons semisweet chocolate chips, melted
½ cup fresh raspberries for garnish

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Thoroughly grease the the bottom and sides of four ramekins with the tablespoon of butter. Coat with sugar, tipping out any excess. If desired, place a raspberry and a drizzle of chocolate as a "surprise" at the bottom of each cup.
  • Combine the cocoa powder, cornstarch, and a tablespoon of the sugar; set aside. Mix the butter and flour to form a paste. Lightly whisk one egg yolk in a heatproof bowl.
  • Heat the milk to the boiling point in a heavy saucepan; whisk in the flour-butter mixture until it melts. Gradually pour the hot milk into the egg yolk in a steady stream, whisking constantly. Return the mixture to the saucepan and bring the custard to a simmer over low heat, stirring constantly with a wooden spoon or spatula.
  • Cook and stir the custard until it thickens, about 1 minute. Remove from the heat, stirring occasionally to keep it smooth. Combine the three remaining egg yolks with the vanilla, liqueur, and the sugar-cocoa-cornstarch mixture. Whisk in the warm custard, cover, and set aside. (The custard can be made ahead of time up to this point and refrigerated for a day before proceeding with the recipe.)
  • About 35 minutes before serving, whip the egg whites until they are thick and foamy and have quadrupled in volume. Gradually mix in the remaining 3 tablespoons of the sugar, whipping until the egg whites are stiff but not dry. Fold 1/3 of the meringue into the custard to lighten it, using a whisk or rubber spatula. Fold in the remaining meringue.
  • Immediately transfer the souffle batter into the prepared ramekins, making a smooth mound slightly above the rim of each ramekin. (If you have a piping bag, you may pipe the mixture into the ramekins.) Bake at once in the preheated oven for 20 to 25 minutes, or until the souffles have risen and the edges are set. Serve hot, with raspberry sauce and fresh raspberries to garnish, if desired.

  • Wash and chop the rhubarb into small pieces. Tip into a wide pan along with the golden syrup and cinnamon Stir over gentle heat until the sugar has dissolved, then cook over a high heat for about 3-5 minutes until the rhubarb has softened. Transfer to a food processor and whiz until you get a smooth puree. Transfer to a bowl and set aside to cool.
  • To make the crème patissière, heat the milk and cream in a heavy-based pan with 1 tablespoon of sugar. Meanwhile, sift the flour and cornflour together. In a separate bowl, beat the egg yolks with half of the remaining sugar, then gradually beat in the flour.
  • When the milk and cream begin to scald, remove from the heat and pour into the hot liquid over the egg mixture, whisking thoroughly as you do so. Transfer the mixture back into the pan and stir over gentle heat for about 3-5 minutes until it is smooth. Transfer the crème patissière to a bowl and leave to cool, stirring occasionally to prevent a skin from forming on the surface.
  • Mix the rhubarb paste into the crème patissière.whisk until the form stiff peaks.Gradually whisk in the rest of the sugar until you have a glossy meringue. Fold this into the rhubarb mixture. Quickly divide the mixture into the prepared ramekins. Place the dishes on a baking tray and bake for 12-15 minutes until risen and golden on top. (Do not be tempted to open the oven door halfway through or the soufflés may collapse).
