CHEESY MEATBALL SKILLET

Number Of Ingredients 11

1 jar (24.5 oz.) Marinara (I used Mezzetta)
1 ¼ cup shredded mozzarella
Optional for topping: grated parmesan cheese and fresh basil, chopped
1 lb. ground beef
1 tablespoon garlic, minced
1 egg, beaten
1 tablespoon Worcestershire sauce
½ cup Italian breadcrumbs
½ cup grated Parmesan
½ teaspoon kosher salt
¼ teaspoon pepper

Steps:

  • In a large mixing bowl, combine all the ingredients for the meatballs and mix together with your hands.
  • Scoop out about 1 golf ball sized meatball mixture, roll it in your hands to make meatballs. (Can use a cookie or ice cream scoop.)
  • Add just enough oil to cover the bottom of the skillet and brown the meatballs 1/2 a batch at time over medium heat until evenly browned, about 5-8 minutes.
  • Remove meatballs and drain on paper towels. Drain any excess oil from the skillet.
  • Reduce heat to medium low and pour the marinara sauce in the skillet.
  • Add the meatballs back to the skillet and gently roll them around to coat them in the marinara sauce. Simmer for 5 minutes or until internal temperature of meatballs are 165 degrees F
  • Top with mozzarella cheese and some grated Parmesan cheese if desired. Cover and simmer until cheese melts or broil at 450 degrees F for 3-5 minutes for browned cheese.
  • Dish and serve hot sprinkled with grated Parmesan and chopped fresh basil if desired.

Steps:

  • Combine all the meatball ingredients in a large mixing bowl and mix thoroughly with your hands.

3 cups marinara sauce ((½ recipe of Marinara Sauce))
12 large meatballs ((1 recipe of Turkey Meatballs))
1 ½ cups freshly shredded mozzarella cheese
½ cup freshly shredded Parmesan cheese
salt and pepper, to taste
resh Italian parsley, basil, and/or oregano, (for garnish )

Steps:

  • Prepare meatballs and marinara sauce.
  • Heat marinara in a medium oven-proof skillet. Nestle meatballs down into the sauce and bring to a simmer.
  • Spoon some of the marinara sauce up over the meatballs.
  • Sprinkle with a teaspoon or two of freshly minced herbs if desired.
  • Sprinkle shredded cheeses evenly over the top of the meatballs and sauce. Sprinkle with salt and pepper.
  • Place the skillet in the oven and bake for 5-10 minutes or until the cheese is melted. (Turn on the broiler for 2-3 minutes to brown the cheese a bit if desired).
  • Garnish with freshly snipped herbs and serve immediately.

8 ounces spaghetti
1 pound ground chuck
1/3 cup seasoned breadcrumbs
1/3 cup grated Parmesan, plus more for serving
2 tablespoons heavy cream
1 large egg, beaten
6 garlic cloves, minced
2 tablespoons fresh oregano, minced
1 teaspoon kosher salt, plus more as needed
1/2 teaspoon freshly ground black pepper, plus more as needed
1/4 cup olive oil
1/2 medium onion, diced small
One 28-ounce can crushed tomatoes
1 teaspoon crushed red pepper flakes
6 ounces grated "supermarket" or low-moisture mozzarella
8 to 10 fresh basil leaves, torn

Steps:

  • Preheat the oven to 425 degrees F.
  • Cook the spaghetti according to its package instructions, removing from the pasta water 1 minute prior to "al dente". Set aside.
  • Meanwhile, combine the beef, breadcrumbs, Parmesan, cream, egg, half the garlic and 1 tablespoon oregano in a large bowl. Sprinkle with salt and pepper. Using your hands or a wooden spatula, mix together until well combined. Portion into 10 meatballs. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat. Brown the meatballs, turning as needed, until browned on all sides, 5 to 6 minutes. Move the meatballs to the edge of the skillet.
  • Reduce the heat to medium and add the onion to the center of the skillet, along with the remaining garlic and oregano. Cook to release the flavor, a minute or two. Add the tomatoes and crushed red pepper, along with 1/2 cup hot water. Season with a pinch of salt and pepper, then carefully stir the meatballs into the sauce. Simmer, allowing the sauce to reduce slightly and the meatballs to finish cooking, about 15 minutes. Taste and adjust seasoning as needed.
  • Add the pasta to the skillet and toss with the sauce, making sure to thoroughly coat the noodles in the sauce. Arrange the meatballs on top of the pasta and sprinkle the mozzarella on top, being careful not to completely cover the meatballs and sauce (so it looks pretty after baking) and transfer to the oven. Bake until bubbly and the cheese is completely melted, about 12 minutes.
  • Remove the skillet from the oven and top with Parmesan and the fresh basil. Serve straight from the skillet.

Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 red or yellow bell peppers, cored and cut into 1/2-inch strips (2 cups)
1 onion, cut into 1/2-inch slices (1 1/2 cups)
1 can tomato sauce (15 ounces)
3 thick slices crusty boule, halved
6 ounces fresh mozzarella
Thinly sliced fresh basil leaves, for serving

Steps:

  • Mix together pork, fennel, Parmigiano, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a bowl. Form into 1 1/2-inch balls. Heat oil in a large straight-sided skillet over medium-high. Add meatballs and cook, turning occasionally, until golden brown, 5 to 6 minutes; transfer to a plate.
  • Add peppers, onion, and 1/4 cup water to skillet and cook, stirring occasionally, 4 to 6 minutes. Stir in tomato sauce and 3/4 cup water. Season with salt and pepper and return meatballs and any accumulated juices to pan. Bring to a boil, then reduce heat to low. Partially cover skillet and simmer until meatballs are cooked through, about 10 minutes.
  • Preheat broiler, with rack 6 inches below element. On a baking sheet, drizzle both sides of bread with oil. Broil, flipping once, until toasted. Nestle into skillet and top everything with mozzarella. Broil until cheese melts, about 2 minutes. Sprinkle with basil and serve.
