THE BEST MEATLOAF
We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

- Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
- Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
- Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
- Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
- Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.
MIGHTY MEATY MEATLOAF
Steps:
- Position rack in center of oven and preheat the oven to 350 degrees F.
- Heat the vegetable oil in a skillet over medium heat. Add the onion, celery, bell pepper, garlic, salt, basil, thyme, and black pepper. Cook, stirring, until the onions are soft and lightly golden, about 6 minutes. Remove from the heat and set aside to cool.
- In a large mixing bowl, combine the ground beef, pork, and veal with a wooden spoon or with clean hands. Be sure to wash up afterward.
- In a medium mixing bowl, combine the eggs, heavy cream, ketchup, Baby Bam, Dijon mustard, and Worcestershire sauce, and whisk to combine. Add the egg mixture to the meat mixture along with the cooled vegetables and bread crumbs. Mix with your hands or a wooden spoon until thoroughly combined.
- Transfer the mixture to a 9 by 5 by 3-inch loaf pan. Using your fingers or the back of the wooden spoon, smooth the top into a rounded loaf shape. Wash hands again.
- To make the glaze, combine the ketchup, brown sugar, Worcestershire, and hot sauce, if desired, in a small bowl. Stir to blend. Spread the mixture evenly over the top of the meatloaf. Bake the meatloaf for 1 hour and 15 minutes.
- Using oven mitts or pot holders, carefully tilt the pan away from you and drain off the excess grease from the pan, An adult should help you here. Be careful, hot grease can really burn. Slice to serve.
- Place all the ingredients in a mixing bowl. Stir well to combine, using a wooden spoon.
- Store in an airtight container for up to 3 months.

KIDS FAVORITE MEATLOAF
Bored of 'plain old meatloaf'? We tried a recipe with a twist. All you need is some smaller pans in the shapes of characters, or whatever. The kids love the shapes and rave about the taste!!! Mine like to use Winnie the Pooh. Be creative and have fun.

- In a large bowl, combine the ketchup, brown sugar and mustard and mix well. Remove 4 tablespoons of this mixture and reserve for later for the top of the loaves. To the mixture in the bowl, add the Worcestershire sauce, salt, onion, garlic, egg, milk and ground black pepper and mix together well.
- Stir in the wheat cereal squares and let stand for 5 minutes. Then break up the cereal squares and add the ground beef, mixing well. Shape the mixture into the mini loaf pans you've decided to use.
- Bake at 350 degrees F (175 degrees C) for 65 minutes. Brush on reserved ketchup mixture and bake for 15 more minutes.

BUFFALO MEATLOAF WITH SPINACH AND ROASTED BABY POTATOES
Steps:
- Preheat oven to 375°F. Toss potatoes with 1 tablespoon oil in medium bowl. Place on 13x9-inch rimmed baking sheet or roasting pan. Sprinkle with salt. Roast 20 minutes.
- Meanwhile, heat 2 tablespoons oil in medium skillet over medium heat. Add mushrooms and onion; sauté until mushrooms are beginning to brown and onion is translucent, about 4 minutes. Remove from heat; mix in sage and thyme. Cool slightly.
- Mix buffalo, mushroom mixture, egg, 1/2 cup tomato sauce, panko, salt, and pepper in large bowl. Push potatoes to sides of baking sheet; shape buffalo mixture into 6x3-inch loaf in center of sheet. Roast 30 minutes. Combine 1/4 cup tomato sauce and red pepper in small bowl. Pour over top of meatloaf. Roast 20 minutes longer. Remove from oven; let rest while preparing spinach.
- Heat remaining 2 tablespoons oil and garlic in large pot over medium-high heat. Add spinach, and toss until wilted, about 3 minutes. Season to taste with salt. Slice meatloaf; serve potatoes and spinach alongside.

KID FRIENDLY MEATLOAF
As a kid, I loved my Grandma's meatloaf but quickly learned that not all meatloaf is created the same - others were dry, musty smelling, or had large pieces of things I didn't like (onions or peppers for instance). I started with my Grandma's recipe and tweaked it with my kids giving reviews. I learned that musty smell was from too much sage so be careful with that. The real secrets here though are the shape and size - cake shaped rather than loaf shaped allows the center to cook without overcooking or drying the outer area; and, mincing the onions so they are not so visible after cooking (a good trick for all recipes when dealing with kids). Feel free to add your own spicing touches - so long as you keep the shape and the ketchup glaze this recipe is guaranteed to stay moist and never need a sauce!

BABY MUSHROOM CHEDDAR MEATLOAF

- Make the garlic purée and set aside.
- Caramelize the white onions (sliced thinly) in 2 tablespoons vegetable oil over low heat until they reach a deep golden brown color. Set aside 1/2 cup for the meat mix and 1/2 cup for the demi glace you'll make later (see recipe).
- Next, in a small sauté pan combine ketchup and coke, whisking together over low heat. Reduce this mixture by half, remove from heat and allow to cool.
- In a large sauté pan, add 2 tablespoons vegetable oil and allow to warm over low heat. Add both types of mushrooms and a touch of salt and pepper to taste. Cook until the mushrooms are soft, allow to cool, and then add mushroom mix to coke and ketchup mix.
- In a large metal mixing bowl combine ground beef with mushroom coke/ketchup mixture, and all remaining ingredients - egg, bread crumbs, Romano and Cheddar cheese and 1/2 cup caramelized onions and the garlic purée.
- Portion mixture into four equal football-shaped loaves. Bake on parchment-lined sheet pan for 15 minutes at 350 degrees.
- Reduce temperature to 250 degrees for 30-45 minutes or until internal temperature reaches 155 degrees.
- To assemble: Slice each of the four mini meatloaves in three pieces and serve over red bliss mashed potatoes. Top this with the demi glace.
