SWEET AND SPICY MEATLOAF
Steps:
- Heat the olive oil in a large skillet over medium-high heat. Saute the green peppers, red peppers and onions until very soft and browned, 10 to 12 minutes. Transfer to a plate or baking sheet and refrigerate until cold. (This can be done a day ahead.)
- Preheat the oven to 350 degrees F.
- Mix the breadcrumbs, milk and roasted garlic in a bowl; it should have an oatmeal-like consistency. Set aside.
- In another bowl, mix the ketchup, steak sauce, sriracha, maple syrup and steak seasoning. If the sauce is too spicy for you, add a little more ketchup to mellow the heat. Set aside.
- In a bowl, combine the ground beef, sausage, parsley, eggs, pepper-onion mixture and two-thirds of the meatloaf sauce. Mix well, but don't overwork. Take a small ball of the mixture and make a bite-size patty. Saute the patty in a pan until cooked through, then taste. Add salt and pepper to the meatloaf mix as needed.
- When you are happy with the flavor, place the meatloaf mixture in a greased loaf pan, or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature reaches 155 degrees F, 1 to 1 1/2 hours. Remove from the oven; adjust the oven to a low broil. Brush the top of the loaf with half of the remaining sauce, then return to the oven to caramelize the sauce, 2 to 3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and a drizzle of the remaining sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the ground beef, bread crumbs, salt, ground black pepper, eggs, onion flakes and 1/2 of the can of tomato sauce. Mix together well and place into a 5x9 inch loaf pan.
- Push the meatloaf down into the pan forming a well for the sauce around all the edges.
- Bake at 350 degrees F (175 degrees C) for 40 minutes.
- Meanwhile, in a small saucepan over medium heat, combine the remaining tomato sauce, brown sugar, vinegar, white sugar and mustard. Bring to a boil and remove from heat.
- After meatloaf has cooked for 40 minutes, remove from oven and pour sauce over the top of the meatloaf.
- Return to oven and bake at 350 degrees F (175 degrees C) for 20 more minutes. Let sit 5 minutes before removing from pan.

TANTALIZINGLY TANGY MEATLOAF
Meatloaf with a sauce that will keep them coming back for more. The sauce contains pineapple preserves, brown sugar and ketchup. It glazes up real nice over the meatloaf. I've NEVER had leftovers even when I've tripled the recipe!

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Combine the meatloaf mix, breadcrumbs, spinach, mushrooms, prunes, dill, parsley, Worcestershire, eggs, garlic, onion, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
- Stir together the apricot preserves, soy sauce, ginger, vinegar and remaining 1/4 cup ketchup in a small bowl for the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

- For meatloaf preheat oven to 350.
- In a bowl mix water, egg, onion, green pepper, garlic and Tempo.
- Add pork/beef mixture, salt and pepper.
- Mix till combined and pat mixture into a loaf pan.
- Place in preheated oven and set timer for 20 minutes.
- In the meantime for sauce combine ketchup and brown sugar and set aside.
- In skillet fry bacon until crisp, remove bacon and set aside.
- Add tomatoes to drippings in skillet and saute on med low heat for one minute.
- Add ketchup mixture to skillet. Stir and simmer until sugar is dissolved.
- Crumble bacon and stir into sauce; set aside.
- When meatloaf has cooked for 20 minutes remove from oven and drain off any fat collected in pan (I try to use lean meat so there is not much).
- Cover meat with sauce and return to oven.
- Bake for another 20 minutes or until meatloaf is done.

- Pre heat your oven to 325 degrees. Making meat loaf is pretty simple, everything goes in the bowl and you mix it up. Some people like the veggies diced really small and will use the food processor, I just give a good chop with the knife. Don’t over work the meat when you are mixing. If it feels to dry a splash of olive oil can help it come together.
- The sauce is simple too. I mix the honey and ketchup together first and pop into the microwave for 20 seconds to make it easier to stir. Then mix in the rest of the ingredients taste the sauce and adjust to your liking. I use a lot of Cholula hot sauce in my glaze but I like it hot so do whatever tastes good to you. Don’t forget to apply the glaze after the loaf has baked for about 20 minutes.
