My go-to version of a tamal casserole: The masa dough is set in two thick layers that hold a rich and baroque filling, typical of the Mexican colonial era, when nuns used to combine Spanish and Mexican ingredients in their convent kitchens. The filling has a sauce made with my preferred pairing of dried chili peppers: sweet, almost chocolaty and prune-flavored ancho and mild, bright-tasting guajillo. It's seasoned with onion, garlic, oregano, cloves, cinnamon and a pinch of cumin, then made hearty with juicy ground meat that is sprinkled with crunchy almonds, chewy raisins and salty manzanilla olives.

1 1/4 cups vegetable shortening or lard
1 teaspoon kosher or coarse sea salt
2 teaspoons baking powder
1 1/2 pounds (about 5 cups) corn masa flour for tortillas or tamales (such as Maseca brand)
4 1/2 cups homemade or no-salt-added chicken broth (may substitute water)
8 dried guajillo chiles (stemmed, halved and seeded)
8 dried ancho chiles (stemmed, halved and seeded)
2 cups hot water (or as needed)
1 teaspoon dried oregano
5 whole cloves
1 teaspoon ground cinnamon
Pinch ground cumin
3 tablespoons vegetable oil (plus more for the baking dish)
1 medium white onion (chopped (about 1 cup))
6 cloves garlic (chopped)
2 1/2 pounds ground meat (such as veal, turkey, beef, pork or a combination)
1 teaspoon kosher or sea salt (or to taste)
1/4 teaspoon freshly ground black pepper
2 cups homemade or no-salt-added chicken broth (may substitute water)
1 cup raisins
3/4 cup slivered almonds
3/4 cup pimento-stuffed manzanilla olives (chopped)

Steps:

  • Place the vegetable shortening or lard in the bowl of a stand mixer; beat on medium speed for about 3 minutes, until it is light and airy. Stop to scrape down the sides of the bowl.
  • Add the salt and baking powder; on low speed, gradually add the corn masa flour and the broth in alternating additions, making sure each time that the addition is well incorporated. Beat for about 10 minutes to form a masa dough that is homogeneous and fluffy. Let the dough sit at room temperature while you make the filling.
  • Heat a comal (tortilla griddle) or skillet over medium heat. Add the guajillo and ancho peppers; toast them for about 15 seconds per side, until they become more pliable, lightly toasted and fragrant and their inner skin turns opaque. Transfer to a medium saucepan and cover with at least 2 cups of hot water. Cook over medium-low heat for about 15 minutes, or until the peppers have rehydrated, plumped up and softened.
  • Transfer the peppers and 2 cups of the liquid to a blender and add the oregano, cloves, cinnamon and cumin. Remove the center knob from the blender lid and cover the opening with a dish towel to contain splash-ups. Puree to form a smooth sauce. The yield is 2 1/2 to 2 3/4 cups.
  • Heat the oil in a large, deep skillet over medium-high heat. Add the onions and cook for 4 to 5 minutes, stirring continuously, until the onions are cooked through and beginning to brown at the edges. Add the garlic and cook until fragrant, less than a minute, then add the ground meat, salt and black pepper. Cook for 12 to 15 minutes, stirring occasionally and using a spoon to break up the meat, until it has lightly browned. Add the sauce, the broth, raisins, almonds and olives, stirring to combine; reduce the heat to medium-low, cover the skillet and cook for 20 minutes. Uncover, stir and cook uncovered for 5 minutes.
  • Preheat the oven to 400°F. Use a little vegetable oil to grease a 9-by-13-inch baking dish or the equivalent.
  • Spoon half of the prepared masa dough into the dish, forming a bit of a lip on the sides and gently leveling it out; don't press hard. Spoon all of the meat filling on top. Cover evenly with the remaining dough. Cover the dish tightly with aluminum foil and bake for 1 hour or until the masa is completely cooked and the top appears to be firm. Remove from the oven and let it sit, covered, for 10 to 15 minutes before serving.

The recipe has just the right amount of meat for our liking, however you could definitely omit it entirely and turn this into a delicious vegan recipe as well. 2 lb lean pork cut in cubes
1 Tbsp salt
1 tsp ground pepper
1 tsp dry oregano
1 pinch ground cumin
6 peeled and mashed garlic cloves
1/4 c sour orange juice
IF YOU CAN'T FIND SOUR ORANGES OR EVEN BOTTLED SOUR ORANGE IN YOUR AREA YOU COULD SUBSTITUTE FOR A REGULAR ORANGE OR CITRUS OF YOUR LIKING
1 lime, juiced
4 c ground corn meal
1 large yellow onion, finely chopped
1 large green bell pepper, finely chopped and seeded
1 can(s) tomato sauce (8oz.)
1/2 c dry cooking wine
1/2 c cooking oil of your preference
6 c warm water

Steps:

  • 1. Mix garlic, salt, pepper, oregano, cumin, sour orange and lime juices.
  • 2. Pour over pork and let it stand for 10 minutes.
  • 3. Heat oil in a large pot and add the pork, reserve the marinade. Brown the pork and then remove from the pan.
  • 4. In same pan, cook the onion and bell pepper until the onion is translucent (a couple of minutes).
  • 5. Stir in tomato sauce, wine, marinade, pork, corn meal and warm water.
  • 6. Reduce heat, cover the pan and let it simmer for about an hour. Stir occasionally.
  • 7. **If it's too thick you can add some more water while it simmers.**

1/2 cup cornmeal
2 tablespoon sugar
1/2 teaspoon salt
1 tablespoon baking powder
1 egg
4 tablespoon unsalted butter (melted)
1/3 cup buttermilk
14.75 ounce cream style corn ((1 can))
4.5 ounce diced green chiles ((1 can))
1 tablespoon olive oil
1 pound ground beef
1 large onion (chopped)
2 cloves garlic (minced)
1 teaspoon cumin (ground)
1/4 teaspoon chipotle powder
1/2 teaspoon chili powder
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
10 ounce enchilada sauce ((1 can))
2 cups Monterey Jack cheese (shredded (cheddar cheese or any blend of Mexican cheese works as well))
1 tablespoon cilantro (chopped)
avocado (optional)
jalapeno pepper (sliced, optional)

Steps:

  • Preheat your oven to 400 F degrees.
  • Add the cornmeal, sugar, salt, baking powder to a medium size bowl and whisk together. Add the egg, butter, and buttermilk and whisk well. Stir in the creamed corn and the green chiles.
  • Pour the cornbread mixture into a large skillet or a 9x9 inch baking pan. Bake for 20 to 25 minutes or until the edges are golden and the cornbread is done. Insert a toothpick in the center of the cornbread, if it comes out clean, it's done.
  • While the cornbread is cooking, prepare the beef. In another large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until no longer pink, about 5 minutes. Add the onion, garlic, cumin, chipotle powder, chili powder, salt, pepper and stir. Cook until the onion has softened, another 3 to 5 minutes.
  • Add half of the enchilada sauce to the meat mixture and stir. Set aside.
  • When the cornbread is done, poke holes into it with a fork, or I used the end of a wooden spoon. Pour the remaining enchilada sauce over the top of the cornbread and spread.
  • Top with the ground beef and the shredded cheese.
  • Bake the casserole for another 15 minutes or until the cheese has melted and has started to lightly brown on top.
  • Let cool for about 5 minutes, then top the casserole with cilantro and your favorite toppings.

1 cup TACO BELL® Thick & Chunky Salsa
1 cup rinsed canned black beans
1 Tbsp. chili powder
1 tsp. garlic powder
1-1/2 cups water
1/2 cup creamy wheat (enriched farina) hot cereal (1-min., 2-1/2-min. or 10-min. cook time), uncooked
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
1 can (4 oz.) chopped green chiles, undrained
2 egg whites

Steps:

  • Heat oven to 350ºF.
  • Brown meat in large skillet; drain. Return meat to skillet. Stir in salsa, beans and seasonings; simmer on low heat 5 min., stirring occasionally.
  • Spread onto bottom of 8-inch square baking dish sprayed with cooking spray.
  • Bring water to boil in medium saucepan. Stir in cereal; cook 1 to 3 min. or until thickened, stirring occasionally. Remove from heat.
  • Add cheese, chiles and egg whites to cereal mixture; mix well. Spread over meat mixture.
  • Bake 20 to 25 min. or until golden brown.

2 bunches green onions, chopped
8 ounces shredded Cheddar cheese
3 cups crushed tortilla chips

  • Unwrap tamales and cut into thick chunks. Place a portion of the chopped tamales in the bottom of a 2 quart casserole dish. Then layer the onions, cheese, tortilla chips and chili without beans.

1/8 teaspoon cayenne pepper
1/2 cup cornmeal
1-1/2 pounds lean ground beef (90% lean)

1 medium green pepper, chopped

1 can (16 ounces) kidney beans, rinsed and drained
1 can (10 ounces) enchilada sauce

Steps:

  • In a small heavy saucepan, bring the water, salt and cayenne to a boil. Reduce heat to a gentle boil; slowly whisk in cornmeal. My mom liked to make the Hamburger Helper® version of this recipe. When I moved to another state, I could not find it, so I came up with this. Memories of home. My hubby likes for me to spice this up sometimes, so I will use a 14-ounce can of tomatoes and green chiles in it or just use a Mexican-style cornbread mix sometimes.

1 (8 3/4 ounce) can black beans, undrained
1 (8 3/4 ounce) can garbanzo beans, drained (chickpeas)
1 (8 3/4 ounce) can whole kernel corn, drained
1 (15 1/4 ounce) can red kidney beans, drained, saving liquid
12 ounces frozen vegetarian ground beef, pre-cooked, defrosted
1/2 cup green taco sauce (or your preference)
2 cups shredded sharp cheddar cheese (your choice,I use cheddar)
1/2 cup chopped fresh cilantro (optional) or 1/2 cup fresh parsley (optional)
3/4 cup green onion, both white and green, large chop
1/4 teaspoon allspice
1 tablespoon red chili powder
1/4 teaspoon ground cumin
1/8 teaspoon red pepper flakes, to taste
1 (8 1/2 ounce) package cornbread mix (or make your own)
2 egg whites

Steps:

  • Combine all ingredients except cilantro and cornbread.
  • If mixture appears too loose, mix 1 tbls of cornstarch or arrowroot with saved kidney bean water until smooth.
  • Stir into mixture.
  • Spray a 2 1/2 to 3 quart baking dish.
  • Pour mixture in and smooth out.
  • Make cornbread as directed on package.
  • (Use the egg whites in place of whole egg).
  • Add cilantro into cornbread mix.
  • Top casserole with mixture,sealing to edges.
  • Bake at 350 degrees for 40 to 50 minutes or until top is golden brown.
