PORTUGUESE PORK WITH RED PEPPERS



Portuguese Pork with Red Peppers image

One of my favorite flavor combinations ever! This pork dish combines the strength of garlic with the sweetness of red pepper balanced by a tangy lemon garnish.

4 large cloves garlic, peeled
1 ½ teaspoons coarse salt
2 tablespoons olive oil
1 tablespoon whole black peppercorns
2 pounds pork tenderloin, cut into 1 inch medallions
2 red bell peppers, julienned
1 cup white wine
2 lemons

Steps:

  • With a large mortar and pestle, mash the garlic, coarse salt, 1 tablespoon olive oil, and peppercorns into a fine paste. Transfer to a large bowl.
  • With a mallet, flatten the pork medallions to 1/4 inch thick. Place in the bowl with the garlic mixture, tossing to coat. Cover, and marinate 2 to 4 hours in the refrigerator.
  • Heat the remaining oil in a large skillet over high heat. Stir in the pork and remaining garlic mixture. Quickly brown pork about 1 minute on each side. Remove from heat, and set aside.
  • Place red peppers into the skillet, and saute 2 to 5 minutes, until tender but firm. Pour white wine into the skillet, and scrape up the browned bits. Reduce heat to low, return pork to skillet, and continue cooking 10 to 15 minutes, to an internal temperature of 180 degrees F (80 degrees C).
  • Slice 1 1/2 lemons into thin rounds. Transfer the pork and pepper mixture to a serving platter. Squeeze juice of remaining 1/2 lemon over the pork and peppers, and garnish with the lemon rounds.

1 lb lean pork tenderloin
1/4 cup walnut pieces
1/4 tsp cumin
1/2 tsp salt
2 tsp paprika
1 clove garlic, chopped
1 (8 oz) jar roasted red bell pepper
1 tsp red wine vinegar
1/4 tsp cayenne pepper

Steps:

  • Heat oven to 350 F. Trim fat from tenderloin and slice into 1 1/2 inch rounds. Spread walnuts on a baking sheet and toast about 8 minutes; put on a plate to the side.
  • In a small bowl, stir together cumin, 1/2 tsp salt, 1/2 tsp paprika. Rub spice mixture into pork and set to the side.
  • Sauce: in a food processor, combine walnuts and garlic. Add roasted peppers, vinegar, remaining 1 1/4 tsp paprika, cayenne and 1/4 tsp salt. Whirl until smooth. **Add liquid from bell pepper jar if thinner texture desired.
  • Heat large pan or wok to medium heat and coat with cooking spray. Working in batches, add pork rounds in a single layer and cook until brown about 2 minutes per side. Use a meat thermometer to ensure an internal temperature of 140F.
  • Remove to plate and spoon sauce on each pork round.

8 boneless loin of pork slices, about 3 ounces each, trimmed of excess fat
Salt and freshly ground pepper to taste
1 tablespoon olive oil
4 tablespoons finely chopped onions
2 red bell peppers, about 3/4 pound, cored, seeded and cut into 1 1/4-inch cubes
1 teaspoon chopped garlic
1 cup fresh or canned chicken broth
1/2 teaspoon cumin powder
1 bay leaf
2 tablespoons butter
2 tablespoons fresh lemon juice
2 tablespoons finely chopped fresh coriander

Steps:

  • Place pork slices on a flat surface. Pound meat lightly with a mallet and sprinkle with salt and pepper.
  • Heat oil in a nonstick skillet large enough to hold the slices in one layer. When oil is very hot, add meat and cook over moderately high heat for 5 minutes or until brown.
  • Turn slices and cook for about 5 minutes more. Reduce heat and continue cooking about 2 minutes longer. Turn slices occasionally.
  • Transfer meat to a warm serving dish and keep warm.
  • Pour off most of the fat from skillet. Add onions and red peppers. Cook, stirring, until peppers are wilted, about 5 minutes. Add garlic and cook, stirring, briefly. Add broth, cumin, bay leaf, salt and pepper. Cover and simmer 5 minutes. Remove and discard bay leaf.
  • Place mixture in a food processor or blender. Add butter and lemon juice and pulse to blend to a fine texture. Return mixture to skillet and add pork slices with their drippings. Bring to a simmer and serve immediately. Sprinkle with coriander.

Tender, juicy pork medallions served with sweet bell peppers are a fantastically quick and easy weeknight dinner that looks and tastes amazing. Serve with a fresh baguette for a super speedy meal.

800g pork tenderloin/pork medallions (see notes)
2 Tbsp neutral oil (e.g. sunflower)
1 red bell pepper/capsicum, sliced
1 green bell pepper/capsicum, sliced
1 large red onion, halved and sliced
3 sprigs fresh thyme, leaves only
3 Tbsp white wine vinegar
1 Tbsp sugar
small bunch fresh basil, leaves torn
sea salt and black pepper
2 Tbsp plain flour
1 Tbsp neutral oil (e.g. sunflower)
1 Tbsp butter
3 sprigs fresh thyme
50ml dry white wine
1 Tbsp balsamic vinegar
sea salt and black pepper
fresh white baguette

Steps:

  • PREPARE THE PORK: Trim the tenderloin of any silver skin, then slice into approx 5cm. / 2 in. rounds. Pat dry with a paper towel, then use your fist to gently beat the discs until they are flat and even. Set aside.
  • COOK THE PEPPERS: Heat the oil in a large frying pan until very hot. Add the peppers and onion to the pan and cook for 4-5 minutes until beginning to soften. Add the thyme and vinegar and cook for a further 3 minutes.
  • FLAVOUR THE PEPPERS: Add the sugar to the pan and cook for 2-3 minutes more, stirring all the time. Remove from the heat, stir through the basil leaves and season well with salt and pepper. Pour into a bowl, cover with a plate and set aside.
  • COOK THE PORK: Wipe out the pan and return to medium-high heat. Season the medallions well with salt and pepper and dust lightly with the flour. Heat the oil and butter together in the pan. When the butter has melted add the pork and the thyme to the pan and cook the medallions for 2 minutes on each side.
  • TURN DOWN THE HEAT: Reduce the heat to medium, add a splash of wine and the balsamic vinegar to the pan and continue to cook the medallions gently for 4-5 minutes, turning to coat in the sauce.
  • SERVE: Divide the peppers and pork between 4 warmed plates and serve with fresh white bread.

Salt and freshly ground pepper to taste
1 tablespoon grated fresh ginger
2 sprigs fresh thyme or 1/2 teaspoon dried
1 bay leaf
1 whole clove
1/2 cup dry red wine
1 teaspoon balsamic vinegar
2 teaspoons honey
1 tablespoon olive oil
2 tablespoons finely chopped shallots
2 tablespoons butter

Steps:

  • Place the pork slices on a flat surface. Pound the meat lightly with a mallet or meat pounder. Sprinkle with salt and pepper.
  • Combine the ginger, thyme, bay leaf, clove, wine, vinegar and honey in a bowl and blend well. Place the sliced pork in a dish. Pour the mixture over the pork and marinate for 10 minutes.
  • Drain the pork medallions and pat dry. Reserve the marinade.
  • Heat the oil in a nonstick skillet large enough to hold the slices in one layer. When the oil is hot add the slices of meat and cook over medium-high heat about 5 minutes or until browned. Turn the slices and cook about 5 minutes more. Reduce the heat and continue cooking for about 2 minutes longer. Transfer the meat to a warm serving platter. Keep warm.
  • In the same skillet, add the shallots and cook, stirring, until wilted. Add the reserved marinade and cook, stirring and scraping the bottom. Add any juices that have accumulated from the platter. Scrape the bottom with a wooden spatula and cook until the marinade is reduced to 3/4 of its original quantity. Swirl in the butter and pour the sauce over the medallions. Remove the bay leaf and thyme sprigs before serving.

12 ounces pork tenderloin
to taste flour
4 tablespoons unsalted butter
1 onion, thinly sliced
3 cloves garlic, minced
1/2 cup riesling wine
1/2 cup golden raisin
1 tablespoon green peppercorn
3 tablespoons balsamic vinegar
1/2 teaspoon thyme
1/2 teaspoon dried oregano, or 1 1/2 teaspoons fresh
1/4 cup additional unsalted butter
1/4 cup toasted pine nuts (pinyons)

Steps:

  • Season pork with salt and pepper.
  • Coat with flour; shake off excess.
  • Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add onions and garlic and saute until golden brown, about 5 minutes; transfer mixture to bowl.
  • Melt remaining 2 tablespoons of butter in same skillet over medium-high heat, and add pork and saute about 4 minutes per side about 16 minutes.
  • Transfer pork to platter; tent with foil to keep warm.
  • Add onion mixture, Riesling, raisins, vinegar, peppercorns and herbs to the same skillet and simmer until sauce thickens, about 4 minutes.
  • Add browned pork to skillet and heat through.
  • Slice and divide pork among plates.
  • Add remaining 1/4 cup butter to sauce in skillet and whisk just until melted; mix in pine nuts.
  • Spoon sauce over pork and serve. Goes well with wild rice pilaf and asparagus or green bean almondine.

1 lb pork tenderloin
2 tablespoons olive oil

1 medium onion, sliced thin
1/4 cup dry sherry
1/4 cup red wine vinegar
1/2 cup canned low sodium chicken broth

Steps:

  • Remove the silver skin from the tenderloin: slip a paring knife between the silver skin and the muscle fibers. Angle the knife slightly upward and use a gentle back-and-forth sawing action.
  • Slice the tenderloin into 1"-thick slices. Smack each slice with the flat of your chef's knife once or twice, to flatten them to about 3/4" thick. Sprinkle salt and pepper over both sides of pork slices.
  • Heat oil until shimmering in heavy-bottomed pan, at least 10 inches across bottom, over medium-high heat, swirling pan to distribute oil. Working in batches of no more than six slices to avoid overcrowding, sear medallions without moving them until brown on one side, about 80 seconds (oil should sizzle, but not smoke). Turn medallions with tongs to avoid scraping off the sear; sear until meat is mostly opaque at sides, firm to the touch, and well browned, about 80 seconds. Transfer pork to plate.
  • Mix cinnamon, cloves, cayenne and brown sugar in small bowl; set aside. Heat oil in pan in which pork was cooked over medium heat, swirling to distribute. Add onion; sauté until softened and starting to color, about 2 minutes. Add spice mixture, sherry, and vinegar; boil, scraping pan bottom with wooden spatula to loosen browned bits, until liquid reduces to a glaze, about 2 1/2 minutes. Increase heat to high and add broth, raisins, and any accumulated pork juices; boil until liquid reaches consistency of maple syrup, about 3 minutes.
  • Reduce heat to medium; return pork to pan, turning meat to coat. Simmer to heat pork thoroughly and blend flavors, about 3 minutes. Adjust seasonings, adding salt to taste. Transfer pork to serving plate and spoon sauce over meat. Serve immediately.
