SALMON PATTIES WITH DILL SAUCE
My daughter and I love salmon patties, and we found this version that is healthier than salmon patties made with mayo. Everyone I've made this for has asked for the recipe. I would love to hear any improvements and/or variations you make to this simple recipe. Enjoy!

SALMON PATTIES IN CREAMED PEAS
This is our go to recipe for quick, easy salmon patties. Hubby loves the cream peas also. Sometimes I will put a can of whole potatoes in there as well and just eat them on the side. If you think you don't like salmon, this is a good starting place for you using canned red salmon. I hope you like this as much as we do! Enjoy!

Steps:
- It is best to make the creamed peas first; so that it's ready to pour over the salmon patties when done-the patties take very little time to fry.
- For creamed peas: Melt the butter in a small pan and stir in the flour and seasonings. Gradually stir in the half and half, using a whisk to prevent lumps. Heat, whisking until sauce begins to thicken. Add drained baby peas and gently stir with a spoon. Stir often as it continues to heat and thicken. Remove from heat when it is finished.
- To Prepare Salmon Patties: Break up the salmon in a shallow bowl and mix with remaining salmon ingredients. Sprinkle a piece of waxed paper generously with flour/panko mixture. Shape salmon into 4-6 patties and carefully dredge both sides with flour/panko.
- Preheat skillet until hot-but not hot enough to burn the butter when added-and add butter to pan. As soon as it is melted place salmon patties into the hot, melted butter. Fry until golden on bottom then carefully flip and continue to fry until brown on bottom.
- Remove from pan and plate; pour creamed pea sauce over patties. Enjoy your dinner! I usually start with a mixed green salad and fresh fruit for dessert.

- Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Add onions to pan; cook for 1 minute, stirring frequently. Add garlic to pan; cook 30 seconds. Add green peas to pan; cook 1 minute, stirring frequently. Add broth and 1/4 teaspoon salt, and bring to a simmer. Cook 4 minutes or until peas are tender. Transfer pea mixture to a food processor, and process 2 minutes or until smooth. Strain the mixture through a sieve over a bowl, reserving liquid; discard solids. Stir in half-and-half and chopped dill. Cover and keep warm.
- Wipe pan clean with paper towels. Place pan over medium-high heat. Sprinkle salmon fillets evenly with remaining 1/4 teaspoon salt and pepper. Coat pan with cooking spray. Add fish to pan; cook 2 1/2 minutes. Carefully turn fish over; cook 5 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Serve with pea mixture and rice. Garnish with dill sprigs, if desired.
- Wine note: The green flavors (peas, dill, and green onions) in this dish could easily be mirrored by a fresh, green-tasting sauvignon blanc. However, I prefer to serve this with a German spätlese riesling instead. The pure fruity and floral character of the riesling is an exquisite counterpoint to the richness of the salmon. Try the Pfeffingen "Ungsteiner Herrenberg" Riesling Spätlese 2004 from Pfalz, Germany ($20). --Karen MacNeil
