- Combine 5 ounces orange-pineapple juice, 2 ounces reposado tequila and 1 ounce cream of coconut in a shaker with ice and shake until cold, about 20 seconds. Strain into a glass filled with crushed ice. Garnish with a pineapple wedge.

- In a 4 quart slow cooker, mix together the pork, salsa, and green chilies.
- Cover and cook on low heat setting for 6 to 8 hours or until pork is tender.
- Stir in black beans.
- Turn slow cooker to high and cook an additional 5 to 10 minutes or until beans are heated.
- Sprinkle with Monterey Jack cheese.

Editor's Extra: This is superb shredded in its juice, and wrapped in warm flour tortillas. To make it even more special, offer the usual Mexican garnishes: lettuce, tomatoes, cheese, guacamole, etc.
