CHERRY SQUARES
I got this recipe from my mother--she used to make it for club meetings and church functions when I was younger. Now my kids like it too! One thing to note--there is no baking soda or baking powder in this recipe--the beaten eggs make it rise.

Steps:
- Cream butter and sugar; add eggs and beat until fluffy. Add all other ingredients except cherry pie filling and beat well. Spread batter into a 10 X 15 jelly roll pan that has been greased and floured or sprayed with cooking spray. Spread cherry pie filling on top of batter in spoonfuls making 4 rows the length of the pan. Bake in a 350 degree oven for 35-45 minutes. May sprinkle with powdered sugar or drizzle with powdered sugar icing when done baking.

This sumptuous layered bar cookie is iced with cherry frosting. Cut them small to make bite size morsels that melt in your mouth. You may want to double the frosting recipe.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, stir together 1 1/4 cup flour and 1/3 cup brown sugar. Rub in 1/2 cup butter using your hands or a pastry blender. Press into an ungreased 9 inch square pan.
- Bake for 15 minutes in the preheated oven, or until lightly browned at the edges. Set aside. In a medium bowl, beat eggs until light. Mix together the brown sugar, flour, baking powder, and salt; stir into the eggs. Mix in the coconut, nuts, and cherries; spread the batter evenly over the baked crust.
- Return to the oven, and bake for 25 minutes, or until brown. Set aside to cool. In a small bowl, mix the confectioners' sugar, 2 tablespoons butter, vanilla, and water until smooth. Add more liquid if necessary to make a more spreadable mixture. Spread over cooled bars before cutting into squares.

Steps:
- Cream butter; gradually add sugar, beating until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Gradually add flour, beating well. Stir in flavorings.
- Pour the batter into a lightly greased 15x10x1-inch jellyroll pan, spreading evenly.
- Lightly cut through batter with a small knife to mark off 24 squares. Spoon about 1 tablespoon pie filling in center of each square.
- Bake at 350~ for 45 minutes or until lightly browned. Batter will puff up around filling while baking.
- Cool cake in pan 10 minutes. Cut into squares, and remove from pan.

MELODY'S CHERRY SQUARES
I made this recipe for our Family Reunion this past July. Everyone was asking for the recipe and it was gone before we even finished lunch.

Steps:
- Combine both sticks of soft margarine and 1 cup of sugar. Blend well with a fork. Do not use melted butter. The cake mixture will not bake correctly.
- Add 2 eggs and beat well.
- Add 2 cups flour and 1 tsp of vanilla and stir until blended.
- Place three-quarters of the batter into a well-greased and floured 13"x 9" pan.
- You will have to spread the mixture with a floured hand or wet spoon if it's too sticky to work with.
- Spread both cans of cherry pie filling on top of batter.
- Drop remaining batter over filling in dabs. Sprinkle either walnuts or pecans over the top.
- Bake at 350 degrees for 50-60 minutes or until batter is done. I had to bake mine the first time about 20 minutes longer.
- After they are cooled, you can cut them into any size squares and top each one with a maraschino cherry.
