1/2 cup sliced fresh strawberries
1 tablespoon sugar
1 tablespoon raspberry vinegar
1/3 cup Yoplait® Light Fat Free vanilla yogurt
3/4 teaspoon poppy seed
4 cups loosely packed bite-size pieces fresh spinach
2 kiwifruit, peeled and sliced
1 mango, peeled, seed removed and cut into wedges or chunks
1 pint (2 cups) fresh strawberries, sliced
1 cup seedless red grapes, halved if desired

Steps:

  • Place 1/2 cup sliced strawberries in blender or food processor. Cover and blend until smooth. Add sugar and vinegar; cover and blend. Add yogurt; cover and blend until smooth. Pour into small bowl. Stir in poppy seed. Refrigerate until serving.
  • To assemble salads, layer all salad ingredients on 4 individual salad plates. Drizzle vinaigrette over salads. Serve immediately.

2 heads romaine lettuce, torn into bite-size pieces
3 (15 ounce) cans mandarin oranges, drained
1 bunch green onions, chopped
5 ounces slivered almonds
¾ cup white sugar
½ cup apple cider vinegar
1 tablespoon salt
1 teaspoon dry mustard
1 cup vegetable oil
1 ½ tablespoons poppy seeds

Steps:

  • Mix lettuce, oranges, green onions, and almonds in a large mixing bowl.
  • Blend sugar, vinegar, salt, and mustard in a blender. Stream oil into the dressing while blending. Continue to blend until the dressing emulsifies. Add poppy seeds and blend briefly to mix. Drizzle dressing over the salad and toss to coat.

½ cantaloupe - peeled, seeded, and cut into 1/2-inch cubes
2 cucumbers - peeled, seeded, and cut into 1/2-inch cubes
½ small red onion, finely diced
1 large stalk celery, diced
⅓ cup poppy seed dressing, or more to taste
3 tablespoons red wine vinegar
1 teaspoon poppy seeds, or to taste

Steps:

  • Place cantaloupe and cucumbers in a colander; set a plate on top. Place a heavy object such as a large can of food on top of plate to squeeze out excess liquid from cantaloupe and cucumbers, tossing about every 30 minutes, 2 to 3 hours.
  • Transfer cantaloupe and cucumbers to a large bowl; add onion, celery, poppy seed dressing, and red wine vinegar. Toss to coat. Stir in poppy seeds.

4 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 tablespoon poppy seeds

Steps:

  • In a small bowl, whisk together the lemon juice and vinegar. Add the olive oil drop by drop, whisking constantly.
  • Season with salt and pepper. Whisk in poppy seeds. The vinaigrette will keep, tightly covered, in the refrigerator for up to 2 days.

This is an interesting combination of flavors--not your usual fruit salad. I was sceptical at first, but I have always had great success with recipes I found in Cusine at Home, so I went for it. It was very good--refreshing and unusual. The basil and mint flavors as well as the prosciutto are all very subtle.

2 ounces prosciutto, thinly sliced, cut into thin strips
1 tablespoon olive oil
1/2 ripe cantaloupe, cubed
1/2 ripe honeydew melon, cubed
7 ounces fresh mozzarella cheese, cubed
2 tablespoons thinly sliced fresh basil
2 tablespoons thinly sliced of fresh mint
3 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
1 tablespoon shallot, minced
1 tablespoon honey
1 pinch red pepper flakes
salt and pepper

Steps:

  • Fry Prosciutto in 1 tablespoon olive oil in a nonstick skillet over medium heat until crisp.
  • Remove; drain on a paper towel-lined plate.
  • Combine melons, mozzarella, and herbs in a large blow.
  • Whisk together lime juice, 2 tablespoons oil, shallot, honey, red pepper, and salt.
  • Drizzle over fruit and toss gently to coat.
  • Transfer to a serving plate and garnish with fried prosciutto and coarsely ground fresh black pepper.
  • Serve salad at room temperature.

  • In the bowl of a blender, add lemon juice, vinegar, Agave, both mustards, salt and pepper and blend to combine. Then with the blender running on low, slowly add both oils until blended. Toss in the poppy seeds and pulse just to blend.
  • Place the melon balls (and optional cheese), in a large bowl and pour the dressing over and toss.
  • Serve immediately. Note: If you are not serving immediately, keep the fruit, cheese and dressing separate. When ready to assemble, drain off any liquid that the fruit may have given off, combine the three together and serve.
