The essence of melon flavor. I make this rather than Kool-Aid for kids. They always want to know where I got it. I use canteloupe more often than not. From The Complete Book of Mexican Cooking by Elizabeth Lambert Ortiz

1 cup melon seeds
1 cup sugar or 1 cup equal amount Splenda sugar substitute
1 lime, rind of, grated
6 cups water

Steps:

  • Place the melon seeds in a blender and pulverize as finely as possible.
  • Combine the pulp, sugar, lime rinds and water in a large jug or bowl.
  • Let sit for 4 hours.
  • Strain through a cloth extracting all liquid possible.
  • Drink and enjoy.

2 cups Melon Seeds and Endocarp (everything in the melon seed cavity)
8 cups Water
Honey to taste
1 stick cinnamon
Ice

Steps:

  • 1. Scoop out the insides of a melon, including seeds, strings, and liquid. 2. Add water (or the equivalent in melon flesh) and liquefy in the blender. 3. Adding melon flesh will make the drink less like horchata and more like a fresh fruit liquado, but it’s still delicious. 4. Transfer to a jar and add the cinnamon stick. 5. Add honey to a little warm water to dissolve, and sweeten horchata to taste. 6. Refrigerate overnight, if possible. 7. Strain though a fine mesh strainer. 8. Stir and pour into glasses over ice, garnished with a little shredded cinnamon.

There is nothing better in the summer to get a refreshing drink. Make this easy Mexican Horchata or cinnamon rice drink and serve it with spicy meals. This recipe is also dairy-free and nut-free.

6 cups unsweetened rice milk
1/2 cup sugar
1 1/2 teaspoon ground cinnamon
1 vanilla bean or vanilla extract
4 cinnamon sticks for garnish

Steps:

  • Place the rice milk, sugar, and ground cinnamon into a blender.
  • If you use a vanilla bean, cut it half lengthwise and scrape the seeds into the mix. Otherwise, if you use vanilla extract, add it to the milk.
  • Blend until the sugar is dissolved.
  • Pour into tall glasses filled with ice and garnish with cinnamon sticks for stirring.

  • Combine the rice and melon seeds (if using) in the jar of a blender, and whizz a couple of times until the mixture is coarsely ground.
  • Transfer to a large bowl, add the hot water and the cinnamon stick (broken roughly into pieces), and allow this to sit covered for about 5-6 hours or overnight.
  • Note that if you live in a very hot region, you might want to have the soaking happen in a refrigerator! Colder clime-dwellers can leave the bowl on a counter-top, covered.
  • After the soaking, transfer once again to a blender and whizz again until the mixture is smooth (but grainy).
