Terry's Chocolate Orange Cake Recipe - Lovely layers of chocolate sponge cake, sandwiched with chocolate orange buttercream frosting icing. It's not Terry's Chocolate Orange Layer Cake Recipe... It's mine!

350 g Unsalted butter
350 g Caster sugar
6 Free range eggs
50 g Good quality cocoa
270 g Self raising flour
90 g Melted dark chocolate
3 tsp Orange Extract
300 g Unsalted butter
600 g Icing sugar
150 g Dark chocolate
3 tsp Orange Extract
Sugarflair Tangerine Gel Food Colour
1 Terry's Chocolate Orange

Steps:

  • Grease 3 x 7″ round sandwich tins (or 2 x 8″).
  • Preheat the oven to 180C.
  • Cream your room temperature butter with your sugar until it's pale, light and fluffy.
  • Next, mix in the eggs, one at a time, beating really well after each egg. Don't worry if it starts to look a bit curdled, it'll all come good.
  • After this, mix in your flour and cocoa. If you've been using a mixer, do this bit by hand. It helps to keep the sponge light.
  • Stir in the melted and slightly cooled chocolate and the orange extract.
  • Spoon into a your tins, smooth out with the back of a spoon. Make a bit of a dip in the middle to account for rising.
  • Bake for about 30 minutes or until a skewer comes out clean. You might need to adjust the time by 5 minutes either way depending on your oven.
  • Meanwhile make your icing. Beat your butter until it's pale, light and fluffy.
  • Beat in your icing sugar and orange extract.
  • Now split your icing into two bowls, weigh out 675g into one and there should be about 225g left in the other.
  • Add 150g melted and cooled dark chocolate to the 675g bowl of buttercream. Mix in completely.
  • Colour the other bowl of 225g of buttercream orange using Sugarflair Tangerine Gel Colour. Use a very very small amount at a time, just a tip of a knife or so, until you get the colour you fancy.
  • If either batch of buttercream is too stiff, beat in a teaspoon or two of boiling water to soften and lighten the texture of the icing.
  • When your cakes are completely cold, use a carving knife to level them. Just trim the top crust off. Remember, this is important, it's not a waste of cake. If you don't do this, with a cake this size it will be wonky.
  • Top each layer with a spread of your chocolate buttercream. Then snip the top off of two disposable piping bags, fill one with the rest of your chocolate buttercream and the other with the orange buttercream.
  • Pipe a circle around the outside of two of the layers, sit each on the one before.
  • On the top layer, pipe small dollops all over and top with your segments of chocolate orange.

Nonstick baking spray with flour, for cake pans
3 1/2 cups cake flour
3 teaspoons baking powder
1 teaspoon salt
1 1/4 cups milk
1/3 cup vegetable oil
2 tablespoons orange juice
1 tablespoon orange zest
2 sticks (1 cup) unsalted butter, room temperature
1 1/2 cups granulated sugar
1/2 packed cup light brown sugar
6 large eggs
Orange food coloring
Chocolate Frosting, recipe follows
1 1/2 pounds semisweet chocolate, finely chopped
3 sticks (1 1/2 cups) unsalted butter, room temperature
5 cups confectioners' sugar
1/3 to 1/2 cup heavy cream

Steps:

  • Preheat the oven to 350 degrees F; position racks in the upper and lower thirds of the oven. Spray three 9-by-2-inch round cake pans with nonstick spray and line the bottom of each with parchment paper. Spray the parchment. Set the pans aside.
  • In a large bowl, whisk to combine the flour, baking powder and salt; set aside. In a separate bowl or measuring cup, combine the milk, oil, orange juice and zest; set aside.
  • In a stand mixer fitted with the paddle attachment, beat the butter, granulated sugar and brown sugar together on medium-high speed until light and fluffy, about 8 minutes. Add the eggs, one at a time, beating well after each addition.
  • Reduce the mixer speed to low and add the dry ingredients in three additions, alternating with the wet ingredients, and beginning and ending with the dry.
  • Pour one-third of the batter into a medium bowl, add 1 or 2 drops of orange food coloring, and stir to combine. Pour into one of the prepared cake pans.
  • Pour another third of the batter into the same bowl and add 3 or 4 drops of food coloring. Stir to combine, then pour into the second cake pan.
  • Add 5 or 6 drops of food coloring to the remaining batter and stir to combine. Pour into the third cake pan.
  • Bake the cake layers until a toothpick inserted in the center comes out clean, about 25 minutes, rotating the pans halfway through. Cool in the pans on wire racks for 5 minutes. Then invert the cakes, peel off the parchment and let cool completely on wire racks. Trim the tops if domed.
  • To assemble the cake: Place the darkest cake layer on a cake stand and frost the top completely. Stack the next darkest layer and again frost the top. Stack the final layer and frost the top and sides of the cake. Slice to serve.
  • Place the chocolate in a large heat-proof bowl set over (not in) a pan of gently simmering water. Heat until the chocolate is melted, then stir until smooth. Remove the bowl from the pan and let the chocolate cool to room temperature.
  • In a stand mixer with the paddle attachment, beat the butter and confectioners' sugar on medium speed until light and smooth, about 3 minutes. Add the melted chocolate and beat until combined. Add the cream and beat until the frosting is smooth and spreadable.

6 tablespoons (3/4 stick) vegan "butter" (such as Earth Balance) or margarine, room temperature

3 tablespoons frozen orange juice concentrate, thawed, divided

Steps:

  • For cake:
  • Preheat oven to 350°F. Spray 9-inch diameter cake pan with 2-inch-high sides with nonstick spray. Sift all purpose flour, sugar, whole wheat flour, cocoa powder, baking soda, and salt into large bowl. Add 3/4 cup water, oil, juice concentrate, vanilla, and vinegar and whisk to blend. Transfer batter to prepared pan.
  • Bake cake until tester inserted into center comes out clean, about 35 minutes. Cool cake in pan on rack. Carefully cut around pan sides and turn out cake onto serving platter.
  • For frosting:
  • Place chopped bittersweet chocolate in medium metal bowl. Set bowl over saucepan of barely simmering water. Stir constantly until chocolate is melted and smooth. Carefully transfer bowl to work surface. Cool melted chocolate to room temperature, stirring occasionally, 15 to 20 minutes.
  • Using electric mixer, beat "butter" in large bowl until smooth. Add powdered sugar, 1 tablespoon juice concentrate, vanilla, and salt; beat until smooth. Add 2 tablespoons juice concentrate; beat until blended. Beat in agave nectar, then chocolate. Let stand 10 minutes. Frost top and sides of cake. DO AHEAD: Cake can be made up to 8 hours ahead. Cover with cake dome and store at room temperature.

2 orange peels, cut into 1/4 inch strips
⅓ cup white sugar
¼ cup orange marmalade
¾ cup unsalted butter, softened
1 teaspoon vanilla extract

4 eggs
2 ½ cups cake flour

¾ cup orange juice
1 ¼ cups heavy cream
4 tablespoons unsalted butter
15 ounces semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat two 8 inch round cake pans with cooking spray, and line bottoms with parchment paper.
  • Using a vegetable peeler, remove zest from oranges in strips. Place in food processor, and coarsely chop, stopping occasionally to scrape down sides of bowl. Add 1/3 cup sugar and blend until peel is minced. Add 1/4 cup marmalade, and pulse until mixture is pureed. Transfer to a large bowl. Add 3/4 cup unsalted butter, and 1 teaspoon vanilla.
  • With an electric mixer, cream mixture until light and fluffy. Beat in 1 cup sugar. Add eggs 1 at a time, beating well after each addition. Sift together flour, baking powder, and baking soda into small bowl. Beat in the flour mixture alternately with the orange juice, mixing just until incorporated. Divide batter into prepared pans.
  • Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • For the Chocolate Ganache: Bring cream and butter to simmer in heavy large saucepan. Remove from heat, add chocolate chips and stir until melted.
  • For Orange Cream Cheese Filling: in a small bowl, beat together cream cheese, 1 tablespoon sugar, and 2 tablespoons marmalade.
  • To assemble cake: Cut each cake into 2 layers. Place 1 layer on plate. Spread filling on the bottom cake. Pour hot ganache over bottom layer, let cool slightly. Top with second cake layer. Spread with filling. Pour hot ganache over second layer. Repeat for third layer. Top with fourth cake layer. Pour remaining ganache over entire cake for a shiny finish. Refrigerate uncovered cake until ganache is a hard coating.

1 teaspoon salt
1 3/4 cups sugar
4 large eggs
2 teaspoons pure vanilla extract

FOR THE ORANGE CURD
12 large egg yolks
Zest of 2 oranges
1/4 cup plus 2 tablespoons freshly squeezed orange juice
1/2 cup plus 1 tablespoon freshly squeezed lemon juice
1 1/2 cups sugar
1/4 teaspoon coarse salt
1 cup (2 sticks), plus 5 tablespoons unsalted butter, cold, cut into small pieces

  • 1.Make the frosting: Place chocolate in a medium heatproof bowl. In a heavy saucepan over medium heat, bring cream to a boil and immediately remove from heat. Pour over chocolate and let sit, undisturbed, for 3 minutes. Gently whisk until combined and smooth. Whisk in the corn syrup. 2.Let cool to room temperature, then transfer ganache to refrigerator and chill, stirring frequently and scraping the sides of the bowl with a spatula, until slightly stiff and cool enough to spread, about 1 hour.   • ---- THE CAKE ----.
  • Preheat oven to 350 Fahrenheit.
  • Sift together flour, sugar, baking soda and salt into an 8" x 8" baking pan.
  • Make 3 holes in the dry ingredients.
  • Place oil in the first hole, vinegar in the second hole, and vanilla in the third hole (again, I kid thee not- trust me on this one!).
  • Pour orange juice over everything and mix well.

  • Refrigerate leftovers (if any).

  • Combine gelatin, orange juice, and cold water in small saucepan.
  • Let stand until thick.
  • Place over low heat, stirring constantly, just until gelatin dissolves.
  • Remove from heat and cool, but do not allow to set.
  • Whip cream, sugar and vanilla until slightly thickened.
  • While beating slowly, gradually add gelatin to whipped cream mixture.
  • Whip at high speed until stiff.
  • Spread thickly on the cake.

Steps:

  • CAKE: put chocolate chips and 1T butter into a small glass bowl, microwave 30 seconds then stir, microwave at 15 second intervals until melted smooth and creamy. Set aside to cool. Preheat oven to 350. Sift together cocoa, flour, soda, powder and salt, set aside. Cream butter and sugar, add orange zest, orange and vanilla extracts and eggs. Mix well. Add cooled melted chocolate, blend well. Add milk alternately with dry ingredients ending with dry ingredients. pour into 2 greased and floured 9" round cake pans and bake 25-35 min. or until toothpick inserted comes out clean. Remove from oven and cool 10 min. in pans, then invert onto cooling racks to cool completely.
  • FILLING: This filling recipe is enough for a 4 layer cake...you can half it for a two layer. In a small saucepan over medium high heat, melt butter. In a bowl add sugar and whisk in cornstarch well, then add water, juice, beaten egg and zest, whisking until well mixed. Pour egg mixture into melted butter and stir until bubbly, let boil slow and low for 3 minutes. Remove from heat and allow to cool completely, can put in frig to speed up the cooling process, stir occasionally. For a more syrup consistency (Like I did for the cupcakes) only cook 30 seconds at a low boil.

Place in refrigerator for one hour...use wooden skewers pushed through the top of cake down to the cake plate to keep the top layer from sliding off while filling sets up, if needed. Make your frosting...and frost sides of cake up over the edge and over top of filling if you want, or just frost sides and put large dalop of frosting in the middle on top. Garnish with chocolate curls or grated chocolate, and orange zest. 1 chocolate curl and 1 orange zest curl would look especially nice in the middle too. Or an orange slice twisted with choc curls.

This helps keep the sponge fluffy. Stir in the melted and slightly cooled chocolate, orange extract and zest of one orange.
  • Pour equal amounts of batter into the cake tins, smooth out with the back of a spoon. Bake for around 35-40 minutes or until a skewer comes out clean. Cool completely on a cooling rack.
